24 large mushrooms, stems removed, or more as needed
1 pound bulk hot Italian sausage
1 onion, diced
4 ounces grated Parmesan cheese, divided
¼ cup Italian bread crumbs
1 teaspoon minced garlic
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Hollow out each mushroom cap, reserving scrapings.
  • Heat a skillet over medium-high heat. Cook and stir sausage, onion, and reserved mushroom scrapings in hot skillet until sausage is browned and cooked through, 4 to 6 minutes. Drain and discard grease; return sausage mixture to skillet.
  • Stir 3 ounces Parmesan cheese, bread crumbs, garlic, and parsley into sausage mixture. Cook and stir until heated through, 3 to 5 minutes.
  • Stuff each mushroom cap with sausage mixture and place on a baking sheet.
  • Bake stuffed mushrooms in the preheated oven for 12 minutes. Sprinkle remaining 1 ounce Parmesan cheese over mushrooms and bake until mushrooms are cooked through and cheese is melted and bubbling, about 3 minutes.

1 package (16 ounces) Johnsonville Ground Italian Sausage
48 large fresh mushrooms
1/2 cup dry bread crumbs
1 package (8 ounces) cream cheese, softened
3 cloves garlic, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese

Steps:

  • 1. In a skillet, cook and crumble sausage over medium heat until no longer pink and lightly browned; drain.
  • 2. Remove and discard stems from mushrooms.
  • 3. Arrange mushroom caps on foil-lined baking sheets.
  • 4. In a bowl, combine cooked sausage, bread crumbs, cream cheese, garlic, parsley and lemon juice. Stir until blended.
  • 5. Carefully spoon sausage mixture into mushroom caps. Sprinkle with cheese.
  • 6. Bake, uncovered, at 400°F for 14-16 minutes or until mushrooms are tender and lightly browned.
  • 7. Serve hot.

20 mushrooms
8 ounces package bacon (cooked)
1/2 cup Red Wine & Olive Oil Vinaigrette.
12 ounces gf sweet Italian sausage
1/4 cup minced scallions
2 garlic cloves (minced)
1/2 cup gluten free Panko breadcrumbs
5 ounces gluten free marscarpone cheese
1/3 cup Parmesan cheese (grated)
salt and pepper (to taste)

Steps:

  • Preheat oven to 350 ℉
  • Remove the stems from the mushrooms, wash and put aside.
  • Wash the mushroom caps gently with water, dry with a paper towel, and remove any dirt. Place them in a large bowl with gluten-free Italian vinaigrette. Set aside to marinate.
  • Chop mushroom stems, scallions, and garlic.
  • Slip each sausage out of its casing, add a little water to the pan, and follow the instructions for cooking on the package. Crumble up the sausage with a spatula while it sautés. About 15 minutes.
  • Stir in the chopped mushroom stems and continue to sauté with the sausage, about 3 minutes.
  • Add the garlic and green onions and continue to sauté for about 3 minutes.
  • Finally, add the breadcrumbs, and then the bacon.
  • Add the marscarpone cheese and stir well, continuing to sauté, until creamy and melted into the stuffing.
  • Remove from heat and allow to cool slightly.
  • Add parmesan and stir.
  • Sprinkle with salt and pepper.
  • Stuff the mushrooms and place them in a baking dish.
  • Bake for 30 minutes until stuffing is browned.

1 pinch cayenne pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
  • Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.

24 large fresh mushrooms
1/4 tablespoons extra-virgin olive oil, divided
12 ounces sweet Italian sausage (4 links), removed from casing
1 1/2 cups leeks (green parts), cleaned and finely diced
1 cup cornbread stuffing mix
1/2 cup chicken broth, heated to a simmer
1/2 teaspoon dried sage
1 teaspoon crushed garlic
1/4 cup grated Parmesan, divided

Steps:

  • Preheat oven to 375 degrees F. Spray a rimmed baking sheet with cooking spray and set aside.
  • Wipe mushrooms clean with paper towels. Remove stems and dice. Hollow out the caps if necessary. Brush each cap with olive oil.
  • In a large skillet over medium heat add 2 tablespoons olive oil and mushroom stems, cook for 1 minute and then add sausage; breaking up any clumps. Saute for 3 minutes. Add the leeks and saute for another 3 minutes or until sausage is completely browned and leeks are tender. Remove from pan and set aside.
  • In a medium bowl, combine stuffing mix and hot broth. Let sit for 2 minutes or until slightly softened.
  • Stir in browned sausage mixture, sage, garlic, and 2 tablespoons Parmesan into stuffing.
  • Fill each mushroom with stuffing mixture and arrange caps on prepared baking sheet. Sprinkle mushrooms with remaining 2 tablespoons of Parmesan.
  • Bake in preheated oven for 20 to 25 minutes, or until golden. Serve immediately.

1/4 cup finely chopped onion
5 -6 slices bacon, chopped
2 tablespoons Bourbon
one 8-ounce package cream cheese, softened
1/4 cup breadcrumbs
1 pinch salt and pepper
2 1/2 lbs fresh button mushrooms, stems removed
grated parmesan cheese, for topping

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
  • In a large skillet, cook the onions and bacon over medium heat until crisp. Remove the mixture from the skillet and set aside. In the same skillet, add the bourbon and cream cheese and stir constantly until the cream cheese is melted and mixed with the bourbon. Add the onion and bacon mixture back into the skillet and mix together. Add the breadcrumbs, salt and pepper and mix together.
  • Spoon the mixture into the mushroom caps and place on the prepared baking sheet. Bake until the mushrooms are tender, 25 to 35 minutes. Top with some Parmesan and put back into the oven to allow the cheese to melt. Remove from the oven and serve.
