Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Hollow out each mushroom cap, reserving scrapings.
- Heat a skillet over medium-high heat. Cook and stir sausage, onion, and reserved mushroom scrapings in hot skillet until sausage is browned and cooked through, 4 to 6 minutes. Drain and discard grease; return sausage mixture to skillet.
- Stir 3 ounces Parmesan cheese, bread crumbs, garlic, and parsley into sausage mixture. Cook and stir until heated through, 3 to 5 minutes.
- Stuff each mushroom cap with sausage mixture and place on a baking sheet.
- Bake stuffed mushrooms in the preheated oven for 12 minutes. Sprinkle remaining 1 ounce Parmesan cheese over mushrooms and bake until mushrooms are cooked through and cheese is melted and bubbling, about 3 minutes.

Steps:
- 1. In a skillet, cook and crumble sausage over medium heat until no longer pink and lightly browned; drain.
- 2. Remove and discard stems from mushrooms.
- 3. Arrange mushroom caps on foil-lined baking sheets.
- 4. In a bowl, combine cooked sausage, bread crumbs, cream cheese, garlic, parsley and lemon juice. Stir until blended.
- 5. Carefully spoon sausage mixture into mushroom caps. Sprinkle with cheese.
- 6. Bake, uncovered, at 400°F for 14-16 minutes or until mushrooms are tender and lightly browned.
- 7. Serve hot.
GLUTEN FREE BACON AND SAUSAGE STUFFED MUSHROOMS
These beautiful little mushrooms are stuffed to overflowing with savory Italian sweet sausage, bacon bits, and Mascarpone cheese.

Steps:
- Preheat oven to 350 ℉
- Remove the stems from the mushrooms, wash and put aside.
- Wash the mushroom caps gently with water, dry with a paper towel, and remove any dirt. Place them in a large bowl with gluten-free Italian vinaigrette. Set aside to marinate.
- Chop mushroom stems, scallions, and garlic.
- Slip each sausage out of its casing, add a little water to the pan, and follow the instructions for cooking on the package. Crumble up the sausage with a spatula while it sautés. About 15 minutes.
- Stir in the chopped mushroom stems and continue to sauté with the sausage, about 3 minutes.
- Add the garlic and green onions and continue to sauté for about 3 minutes.
- Finally, add the breadcrumbs, and then the bacon.
- Add the marscarpone cheese and stir well, continuing to sauté, until creamy and melted into the stuffing.
- Remove from heat and allow to cool slightly.
- Add parmesan and stir.
- Sprinkle with salt and pepper.
- Stuff the mushrooms and place them in a baking dish.
- Bake for 30 minutes until stuffing is browned.

- Preheat oven to 375 degrees F (190 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
- Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.
- Chop mushroom stems; cook and stir chopped stems, black olives, green onion, and crumbled bacon in the bacon drippings over medium heat until mushroom stems release their liquid, about 5 minutes. Add garlic, salt, black pepper, and cayenne pepper; stir to coat.
- Tilt the skillet slightly; move vegetable-bacon mixture to one side, allowing the bacon drippings to pool to the other side. Whisk flour into bacon drippings until smooth and paste-like; slowly stir in milk until gravy is smooth. Mix vegetable-bacon mixture into the gravy. Add American cheese and Parmesan cheese; cook and stir until cheeses melt, about 5 minutes. Spoon filling into mushroom caps.
- Bake in the preheated oven until mushrooms are tender and filling is lightly browned, about 20 minutes. Remove mushrooms from baking sheet and cool on platter for 2 minutes before serving.

SAUSAGE STUFFED MUSHROOMS
Steps:
- Preheat oven to 375 degrees F. Spray a rimmed baking sheet with cooking spray and set aside.
- Wipe mushrooms clean with paper towels. Remove stems and dice. Hollow out the caps if necessary. Brush each cap with olive oil.
- In a large skillet over medium heat add 2 tablespoons olive oil and mushroom stems, cook for 1 minute and then add sausage; breaking up any clumps. Saute for 3 minutes. Add the leeks and saute for another 3 minutes or until sausage is completely browned and leeks are tender. Remove from pan and set aside.
- In a medium bowl, combine stuffing mix and hot broth. Let sit for 2 minutes or until slightly softened.
- Stir in browned sausage mixture, sage, garlic, and 2 tablespoons Parmesan into stuffing.
- Fill each mushroom with stuffing mixture and arrange caps on prepared baking sheet. Sprinkle mushrooms with remaining 2 tablespoons of Parmesan.
- Bake in preheated oven for 20 to 25 minutes, or until golden. Serve immediately.

I got this recipe off of the Food Network site, from Paula Deen. Rich, creamy and so full of flavor. Bacon and cheese, no brainer, right?

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
- In a large skillet, cook the onions and bacon over medium heat until crisp. Remove the mixture from the skillet and set aside. In the same skillet, add the bourbon and cream cheese and stir constantly until the cream cheese is melted and mixed with the bourbon. Add the onion and bacon mixture back into the skillet and mix together. Add the breadcrumbs, salt and pepper and mix together.
- Spoon the mixture into the mushroom caps and place on the prepared baking sheet. Bake until the mushrooms are tender, 25 to 35 minutes. Top with some Parmesan and put back into the oven to allow the cheese to melt. Remove from the oven and serve.
