3/4 cup ranch salad dressing
1/3 cup crumbled blue cheese
1/4 cup watercress, chopped
1 pound bulk pork sausage
2 tablespoons minced fresh chives
6 large iceberg lettuce leaves, edges trimmed
1 medium ripe avocado, peeled and diced
4 hard-boiled large eggs, chopped
1 medium tomato, chopped

Steps:

  • Mix dressing, blue cheese and watercress. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes; drain. Stir in chives., To serve, spoon sausage into lettuce leaves. Top with avocado, eggs and tomato. Drizzle with dressing mixture.

2 spinach or whole wheat tortillas (8 inches)
1 cup shredded cooked chicken
1 cup spring mix salad greens
1 medium tomato, halved and sliced
4 cooked bacon strips
1/2 medium ripe avocado, peeled and sliced
1 tablespoon sliced ripe olives
1 tablespoon crumbled blue cheese

Steps:

  • Spread dressing over tortillas to within 1/2 in. of edges. Layer with the remaining ingredients. Roll up tortillas.

1 small avocado, pitted, peeled, cut into thin wedges
1 medium tomato, cut into thin wedges
1/4 cup finely chopped red onion
1/2 cup light blue cheese dressing
1 tablespoon red wine vinegar
4 slices bacon, crisply cooked, crumbled

Steps:

  • Place lettuce leaves on plate. Divide chicken among lettuce leaves, placing lengthwise in center. Layer with avocado and tomato wedges. Sprinkle with red onion.
  • In small bowl, mix dressing and vinegar. Drizzle over lettuce wraps. Top with crumbled bacon.

This Cobb salad has some of my favorite ingredients: chicken, egg, tomatoes, blue cheese and avocado.

6 slices bacon
3 eggs
1 head iceberg lettuce, shredded
3 cups chopped, cooked chicken meat
2 tomatoes, seeded and chopped
¾ cup blue cheese, crumbled
1 avocado - peeled, pitted and diced
3 green onions, chopped
1 (8 ounce) bottle Ranch-style salad dressing

Steps:

  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Divide shredded lettuce among individual plates.
  • Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
  • Drizzle with your favorite dressing and enjoy.

1 cup chopped deli rotisserie chicken (from 2-lb chicken)
1 1/2 cups torn romaine lettuce
1/4 cup blue cheese dressing
1 small tomato, chopped (1/2 cup)
2 tablespoons cooked real bacon bits (from 3-oz jar)
1 hard-cooked egg, chopped
2 flour tortillas (10 inch)
1/2 avocado, peeled, sliced

Steps:

  • In medium bowl, toss chicken, lettuce and dressing to coat. Stir in tomato, bacon and egg.
  • Place tortillas on large microwavable plate; cover with microwavable plastic wrap. Microwave on High 15 to 30 seconds to soften.
  • Spoon chicken mixture down center of each tortilla to within 1 inch of edges. Top with avocado slices. Fold opposite sides of tortilla up toward center about 1 inch over filling (sides will not meet in center); roll up tortilla, beginning at 1 open end. Cut diagonally in half. Secure with toothpick, if necessary. Serve immediately.

3 cloves garlic, finely chopped
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
2 tablespoons hot sauce, eyeball it
4 tablespoons Worcestershire sauce, eyeball it
4 tablespoons red wine vinegar
1/3 cup extra virgin olive oil, plus some for drizzling
2 pounds flank steak
8 pieces "thin cut" chicken breast cutlets
2 slightly under ripe Hass avocados - dark skinned, but still firm
2 vine ripe tomatoes cut into wedges
2 bunches watercress, trimmed and roughly chopped
8 strips bacon, thick sliced
1 lemon, zest and juiced
1 tablespoon Dijon mustard
Salt and pepper
1/3 pound blue cheese, crumbled (recommended Maytag Blue)

Steps:

  • Heat a grill pan or outdoor grill to high heat.
  • Mix garlic, steak seasoning, hot sauce, Worcestershire sauce and vinegar. Whisk in the extra-virgin olive oil. Divide the mixture between 2 shallow dishes. Add the flank steak to one and the thin chicken cutlets to the other. Toss to coat all of the meats thoroughly and marinate for 5 minutes.
  • While the flank steak and chicken are marinating, cut the avocados in half lengthwise cutting around the pit. Separate the halves then, using a spoon, scoop out the pit, then use the spoon to scoop the avocado from its skin. Chop the avocado flesh into bite size pieces add to a mixing bowl. Add the tomatoes, watercress and crisp chopped bacon. Dress the salad with the juice of 1 lemon and a generous drizzle of extra-virgin olive oil, salt and pepper.
  • Grill flank steak 6 to 7 minutes on each side. Grill the thin cut chicken cutlets 3 to 4 minutes on each side. Remove both meats from the grill to a cutting board to rest for about 5 minutes. Thinly slice the flank steak on an angle, cutting the meat against the grain. Cut the chicken into thin strips. Add both meats to a platter or dinner plates. Top the meats with a mound of the salad. To make the dressing, combine in a small bowl the lemon zest and juice, Dijon mustard, salt, pepper, crumbled blue cheese, whisk in 3 tablespoons EVOO. Pour the dressing over the salad. Eat and enjoy the lack of lettuce getting in your way!
