Yield Makes 4 servings

Number Of Ingredients 12

1 bunch shallots, finely chopped
2 tablespoons butter
2 tablespoons flour
1/2 cup chopped mushrooms
2/3 cup chicken broth
1 egg yolk
Ice cream salt
1/3 cup dry white wine
Salt and cayenne pepper to taste
2 dozen oysters on the half shell
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese

Steps:

  • Sauté the chopped shallots in the butter and slowly stir over a very low heat until the onions are well cooked, but not brown. Sprinkle the shallots with the flour and cook until the flour begins to brown. Add the chicken broth and the mushrooms and mix well. Beat the egg yolk into the wine and add to the chicken broth mixture, beating all the while. Season with the salt and cayenne, and cook over a low heat for 15 minutes.
  • Heat a pan of ice cream salt in a 400-degree oven for 15 minutes. Place the oysters on the half shell in the hot ice cream salt and return to the oven for about 5 minutes. Spoon the sauce over each oyster and sprinkle with a mixture of the bread crumbs and cheese. Return to the oven and bake until the bread crumb mixture is lightly browned. Two dozen oysters served this way will serve four.

12 fresh oysters on the half shell
⅓ cup panko (Japanese bread crumbs)
2 tablespoons freshly grated Parmesan cheese
3 tablespoons olive oil
¼ cup minced white onion
1 clove garlic, minced
¼ cup finely chopped white mushrooms
¼ cup finely chopped fresh shrimp
2 tablespoons white wine
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon all-purpose flour
3 tablespoons chicken broth
3 tablespoons 2% reduced-fat milk
1 large egg yolk, lightly beaten
Garnish: sliced green onion, lemon wedges

Steps:

  • Preheat oven to 400°. In an 13x9-inch baking dish, spread a ¾-inch layer of rock salt. Arrange oysters on top of rock salt. In a medium bowl, combine bread crumbs and Parmesan. Set aside. In a large saucepan, heat oil over medium-high heat. Add onion; cook until tender, about 2 minutes. Add garlic, mushrooms, shrimp, wine, salt, and pepper. Cook until mushrooms are tender and shrimp are pink and firm, 2 to 3 minutes. Sprinkle with flour; cook for 1 minute, stirring constantly. Add broth, and stir to combine. Add milk; cook until creamy and slightly thickened. Remove from heat, and slowly add egg yolk, stirring constantly. Spoon about 1 tablespoon shrimp mixture onto each oyster, and top with bread crumb mixture. Bake until tops are lightly browned, 16 to 18 minutes. Garnish with green onion and lemon, if desired. Serve immediately.

This dish is named in honor Jean Baptiste Le Moyne, Sieur de Bienville, the french colonial governor of Louisiana, who founded New Orleans in 1718. Here in the south oyster season usually opens sometime in November and closes sometime in April. We were raised being told to only eat oysters with months that have a "r" in them, especially if you were going to eat them raw.

1/4 pound(s) mushroom, chopped
2 - dozen freshly shucked oysters with their liquor
- rock salt
1/4 cup(s) chopped green onions (white and green part)
1/4 teaspoon(s) minced garlic
6 tablespoon(s) all-purpose flour
2 large egg yolks
1/2 cup(s) chopped fresh parsley
1 cup(s) heavy cream
1/2 pound(s) grated parmesan cheese
1 teaspoon(s) salt
6 tablespoon(s) seasoned bread crumbs
- lemon wedges for serving

Steps:

  • Preheat oven to 450 degrees. In a small skillet, melt 2 tablespoons of the butter over medium heat and saute' the mushroom until tender. Drain and set aside. Drain the oysters, reserving 1 cup of the liquor (or substitute milk or chicken broth). Cover a large baking dish (or as many baking dishes as you need) with rock salt. Fit as many oyster shells as you can in each dish. Place an oyster in each shell. (You may also use ramekins, placing 4 oysters in each one) Melt the remaining 6 tablespoons of butter in a 9 inch skillet over medium heat. Saute' the green onions and garlic for 5 minutes. SLowly add the flour and stir to make a smooth mixture. Remove from heat. In a small bowl, beat the egg yolks, and stir in the parsley and cream. Stir the yolk mixture into the green onion and flour mixture, blending them well. Add the 1 cup of oyster liquor and cook over low heat, stirring, until it becomes a thick, creamy sauce. To the sauce, add the drained chopped mushroom, cheese, and salt. Stir until the cheese is melted and well blended. Spoon this sauce over the oysters and sprinkle with bread crumbs. Bake for 15 minutes, or until browned. Serve immediately with lemon wedges.

I ordered oysters over the internet last year and made this recipe for our Christmas dinner. It was so good, I threw out the other Oysters Bienville recipes that I had. Well worth the effort.

1/2 lb sliced bacon, chopped
1 cup chopped yellow onion
1 teaspoon salt
1/2 teaspoon cayenne
2 teaspoons chopped garlic
1/4 cup unsalted butter
1 cup all-purpose flour
2 cups milk
1/2 cup dry white wine
1/4 lb white button mushrooms, wiped clean, stems trimmed, and sliced (about 2 cups)
1 lb medium shrimp, peeled, deveined, and chopped
3 tablespoons fresh lemon juice
1/2 cup chopped green onions (, green part only) or 1/2 cup chopped scallion (, green part only)
3 tablespoons chopped fresh parsley leaves
4 large egg yolks, lightly beaten
36 medium oysters, shucked and drained, reserve the deeper bottom shells
rock salt (optional)

Steps:

  • In a large skillet over medium-high heat, fry the bacon until crisp, about 8 minutes.
  • Add the onions, salt, and cayenne and cook, stirring, for 2 minutes.
  • Add the garlic and butter, and cook, stirring, for 2 minutes until the butter melts.
  • Add the flour and, stirring slowly and constantly, cook for 2 minutes.
  • Add the milk and wine and stir to blend.
  • Reduce the heat to medium, then add the mushrooms and shrimp.
  • Stir and fold to mix and cook until the mixture is very thick, about 12 minutes.
  • Add the lemon juice, green onions, and parsley and stir to mix well.
  • Remove from the heat, add the beaten egg yolks, and blend well.
  • Let cool to room temperature.
  • Preheat the oven to 400 degrees F.
  • Arrange the reserved oyster shells on a bed of rock salt in 4 pie pans or on a large baking sheet.
  • Put an oyster in each shell and top it with about 2 heaping tablespoons of the sauce.
  • Or, the oysters can be put in a shallow pan (without the shells and rock salt) and topped with the sauce to bake.
  • Bake until the sauce is delicately browned and the oysters begin to curl at the edges, about 20 minutes.
  • Serve hot.

2/3 cup mushrooms, finely chopped
1 tsp ground white pepper
4 T unsalted butter
1/2 cup brandy
1 1/2 tsp garlic, finely minced
1/2 tsp cayenne
1 T shallots, finely chopped
1 tsp salt
1/2 cup heavy cream
6 T grated romano cheese
1 T flour
4 T dry bread crums
1/2 lb boiled shrimp, finely diced
1/4 cup finely minced parsley
2 dozen oysters on the half shell
4 pans rock salt

Steps:

  • in a large, heavy saucepan, saute the chopped mushrooms quickly in a small amount of vegetable oil. Remove from pan and set aside. In the same pan, melt the butter and reder the garlic and shallots, stirring frequently, until soft. Add the diced shrimp, then sprinkle in the flour. Stir, then add the reerved mushrooms. Deglaze pan witth the brandy while stirring constantly. Stir in the heavy cream and cook until smooth before adding Romano cheese, dry bread crumps and parsley, salt, pepper and cayenne. A small amount of milk may be added if the mixture is too thick. Remove from heat, allow to cool, then refrigerate for about 1 1/2 hours. Half an hour before you plan to bake the oysters, place the pans of rock salt in a preheated 500F oven. Wash oyster shells well. pat dry. Put oysters on shells , place 6 in each pan of rock salt. Spoon 1 heaping tablespoon of sauce over each oyster. Bake for 15 to 18 minutes until well browned.
