THE ULTIMATE BREAKFAST FOR DINNER: SAUSAGE AND SPINACH EGG STRATA

- Defrost the spinach in the microwave, and then wring out any excess liquid.
- Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
- Arrange half of the bread in a casserole dish.
- Whisk the eggs with the milk, Dijon and some salt and pepper.
- Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
- Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
- Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.
QUICK AND EASY SPINACH BREAD
If you like garlic and spinach, this one's for you! You can use it as an appetizer (sliced) or just cut in half and serve with pasta sauce for dipping. It makes a meal for two!

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with non-stick cooking spray.
- Heat olive oil in a skillet or frying pan over medium heat. Add garlic and saute until soft, about two minutes. Add spinach and cook until liquid has evaporated. Stir in salt, pepper, Parmesan and garlic powder. Remove from heat and let cool.
- On a lightly floured surface, roll out pizza crust into a 10x14 inch rectangle. Spread spinach mixture and mozzarella cheese on top of dough. Starting from on end, roll up the crust to make one large loaf. Pinch seam to seal. Place loaf onto prepared baking sheet.
- Bake in preheated oven for 20 to 25 minutes, until golden brown.

- In a small skillet, cook the sausage, onion and celery over medium heat until meat is no longer pink and vegetables are tender. - Preheat oven to 425°F. Toast bread on a rimmed baking sheet until dry, 8-10 minutes.
- Meanwhile, heat a large skillet over medium-high. Add sausage and cook, breaking into pieces with a spatula, until browned, about 7 minutes.
- Butter a 3-quart baking dish. Arrange 6 bread slices in dish in one layer, covering bottom of pan completely and cutting slices to fit if needed. Tear remaining slice into smaller pieces to fill in any gaps.
- Using a slotted spoon, transfer sausage to baking dish, scattering over bread.
- Heat skillet over medium and add white and pale green scallion parts. Cook, stirring, until softened and just starting to take on color, about 3 minutes. Add spinach, stir to combine, and cook until warmed through, 1-2 minutes more. Top sausage with spinach mixture, then top spinach mixture with cheese.
- Whisk eggs, milk, yogurt, mustard powder, salt, pepper, and nutmeg in a large bowl. Gently pour over casserole. Cover and chill at least 4 hours or up to overnight.
- Uncover dish and transfer to a cold oven. Heat oven to 375°F and bake casserole until eggs are puffed and cheese is browned, about 40 minutes.
- Let casserole cool several minutes. Top with dark green scallion parts.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

- Allow the dough to thaw; cook the spinach according to the package directions; drain well.
- Brown the sausage and drain off the fat, add the onion and cook until onions are soft. Beat egg and add about 1/2 to the reserved spinach and save the rest to brush over top of bread.
- Working with one loaf of bread at a time, roll the bread into a rectangle about 9 x 13 inches. Spread half of the spinach, sausage, and mozzarella cheese over the dough and sprinkle with 1/2 of the parmesan cheese. Roll up jelly roll style starting on a long end. Seal all edges tightly so the stuffing remains inside.
- Place on baking sheet and pierce tops of bread loaves with a fork a few times. Brush with the egg and bake at 375°F for 20 minutes or until browned. Repeat the steps for the other loaf of bread.

- Fry sausage and onions together in a medium skillet.
- Roll pizza dough out.
- Spread sausage, cheeses and parsley onto dough.
- Roll Jelly roll style on the long side.
- Bake on lightly greased cookie sheet at 350 degrees for 30 to 40 minutes until dough is golden brown.
- For Spinach Bread:.
- Substitute 1 package frozen spinach cooked and drained for the sausage.
