1 ½ teaspoons extra-virgin olive oil
1 pound bulk sausage
2 teaspoons minced garlic
2 (14.5 ounce) cans fire-roasted diced tomatoes
1 (15.5 ounce) can navy beans, drained
3 ½ cups beef stock
3 ½ cups chicken stock
1 teaspoon dried basil
1 teaspoon dried oregano
1 pinch red pepper flakes, or more to taste
1 ½ cups frozen chopped spinach
1 cup ditalini pasta

Steps:

  • Heat olive oil in a stock pot over medium-high heat; cook and stir sausage and garlic in the hot oil until sausage is crumbly and evenly browned, about 10 minutes. Drain and discard any excess grease.
  • Mix tomatoes, navy beans, beef stock, chicken stock, basil, oregano, and red pepper flakes into sausage mixture; bring to a boil. Add spinach and ditalini pasta and simmer until pasta is tender but firm to the bite, about 10 minutes.

1 pound Italian sausages, castings removed
1 1/2 cups chopped onions
1 1/2 cups diced carrots
1 celery stalk with leaves, chopped
1 tablespoon chopped garlic

1/4 teaspoon dried crushed red pepper
1/4 teaspoon dried rubbed sage
5 cups canned chicken broth
1 14 1/2-to 16-ounce can diced tomatoes
1 15- to 16-ounce can kidney beans, drained
1 cup elbow macaroni

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add sausages and sauté until beginning to brown, breaking up with back of spoon, about 5 minutes. Add onions, carrots, celery, garlic, basil, rosemary, crushed red pepper and sage. Sauté until vegetables begin to soften, about 10 minutes. Add broth, tomatoes with their juices and beans. Bring soup to boil. Reduce heat and simmer until vegetables are tender and flavors blend, about 20 minutes.
  • Add macaroni to soup and simmer until tender, about 15 minutes. Season to taste with salt and pepper.

2 tablespoons olive oil
1 large onion, chopped
1/2 pound Italian sausage, casing removed
4 cups chicken stock
3 garlic cloves, sliced
2 bay leaves
1/2 cup diced carrots
1/2 cup diced celery
1 large potato, peeled and diced into 1/2-inch cubes
1 small zucchini, diced
Two 15.5-ounce cans cannellini beans, drained and rinsed
1/4 cup chopped fresh parsley
One 2-inch-square piece Parmigiano cheese rind
1/2 pound small shell pasta
Grated Parmigiano cheese, for serving at the table

Steps:

  • In a large pot, heat oil over medium heat. Add onion and cook, stirring occasionally until softened--about 3 minutes. Add sausage, breaking it up with a wooden spoon, and cook until browned--about 5 minutes. Add stock, scraping up the browned bits on the bottom of the pot with a wooden spoon. Add garlic, bay leaves, carrots, celery, potato, zucchini, beans, parsley and cheese rind. Bring to a boil, and then reduce to a simmer. Cover and cook for 30 minutes; the stock will slightly thicken. Remove and discard bay leaves and cheese rind.
  • Meanwhile, cook pasta in salted water until al dente. Place 1/2 cup of pasta in each soup bowl and ladle soup over pasta. Serve with cheese.

1 lb farfalle pasta, or any short pasta
1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

1 large onion (chopped)

1 (15 1/4 ounce) can carrots (sliced)

1 tablespoon coarse sea salt (ground)

Steps:

  • Put corn, carrots, and beans in a strainer, rinse well and set aside.
  • Cut sausage once lengthwise, then crosswise into approximately 1/2" pieces.
  • In a large saucepan on a medium heat, add sausage, stir until it "sweats", then add onion and saute until both are lightly charred.

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add sausages; cook 4 to 6 minutes, turning occasionally, until sausages are browned on all sides. 1 lb smoked sausage
1 cup yellow onion, chopped
2 garlic cloves, chopped
1/2 green bell pepper, chopped
1 (14 1/2 ounce) diced tomatoes with juice
1 (8 ounce) can tomato sauce or 1 (8 ounce) can tomato puree
6 cups beef broth or 6 cups beef stock
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
1 cup uncooked desired pasta
1 (15 ounce) can your favorite beans
1 cup diced zucchini

Steps:

  • In large skillet, combine sausage, onion, garlic and bell pepper. Cook until sausage is browned and vegetables are tender.
  • Put into large soup pot and add remaining ingredients except pasta, beans and zucchini. Bring to a boil and simmer 30 minutes.
  • Add pasta, beans and zucchini and simmer another 20-25 minutes or until pasta is tender.

Is there anything more comforting than ladling up a pot of bubbly, savory soup? We don't think so. As the temps get cooler and the days get longer, the family gathers in the kitchen a little bit more often, craving something warm, aromatic, and satisfying for a hot lunch or supper. While many soups and stews may require a few hours to simmer on the stovetop, this easy white bean soup comes together in just 40 minutes. To make the soup even heartier, we have added pasta and turkey sausage. Use your favorite smoked sausage if you wish, but you may have a bit more grease in the pan than if you used turkey. Brown the sausage and onions, then add garlic, rosemary, seasonings, beans and chicken stock. Add uncooked pasta and let it them get tender, then stir in swiss chard. Chard is a nutritious, green leafy vegetable with a taste that is a bit milder than spinach. Use raw chard in green salads, sauté it with garlic and olive oil, or bake it into a frittata. Serve a basket of warm, homemade bread with this while bean and pasta soup for a complete quick and easy weeknight supper. Steps:

  • Heat oil in a Dutch oven over medium-high. Add onion. Cook, stirring occasionally, until softened and translucent, 5 to 7 minutes. Add smoked turkey kielbasa, garlic, rosemary, salt, and pepper. Cook, stirring constantly, 1 minute. Add beans, broth, and bay leaf.
  • Bring mixture to a boil over high. Reduce heat to low; simmer, stirring occasionally, about 8 minutes. Add in uncooked ditalini pasta to simmering mixture and continue to cook for 7 minutes. Remove and discard bay leaf.
  • Stir in chard. Cook, stirring often, until wilted and slightly softened, 2 to 3 minutes. Garnish with Parmesan.

Steps:

  • Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
  • Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.
  • Top each serving with cooked sausage, a dollop of sour cream, and a small handful of watercress. Sprinkle with pepper and celery leaves; serve.

5 cups canned low-salt chicken broth

  • Strain liquid from canned beans into blender. Add 1 cup beans and puree until smooth. Heat oil in large pot over medium heat. Add sausages, rosemary, garlic, and crushed red pepper. Sauté until sausages are cooked through, breaking up with fork, about 8 minutes. Mix in tomato paste. Add bean puree, remaining beans, broth, and pasta. SAUSAGE PASTA BAKE

An Italian-American classic, this freezable sausage pasta bake is an ideal make-ahead family dish for busy days

400g rigatoni or penne
125g ball mozzarella, chopped into chunks
2 tbsp olive oil
6 pork sausages
4 garlic cloves, sliced
pinch of chilli flakes (optional)
1 tbsp tomato purée
1 tbsp red wine vinegar
2 x 400g cans chopped tomatoes
1 tbsp butter
1 tbsp plain flour
350ml milk
50g parmesan, grated, plus extra to serve

Steps:

  • To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
  • Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
  • Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
  • Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.
