ONE PAN CHICKEN GARLIC MUSHROOM SAUTE
An easy, one pan chicken garlic mushroom saute that is paleo, low carb and so tasty!

Steps:
- Sprinkle chicken with salt and pepper. In a large skillet over medium high heat sear chicken in ½ tbsp oil for 5 to 7 minutes on each side until browned.
- Remove chicken from skillet and place on a plate and set aside (will return to the pan later).
- In the same pan used for the chicken, melt 1 tbsp butter over medium heat. Add minced garlic and sliced mushrooms. Stir and saute until mushrooms are browned and softened.
- Add wine to the pan and stir.
- In a small bowl mix; 1 tbsp butter and ½ tsp arrowroot powder, smashing arrowroot powder into the butter with a fork until butter has absorbed the arrowroot.
- Add the arrowroot butter to the mushroom wine mixture in the pan. Stir and melt arrowroot butter into the saute over medium to medium high heat until the sauce starts to thicken.
- Place chicken on top of mushroom saute, cover and turn heat down to low. Simmer for 5 to 8 minutes, or until chicken is completely cooked.Plate chicken and pour some of mushrooms and sauce over chicken.

CREAMY GARLIC MUSHROOM CHICKEN

- In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and garlic and cook for a few minutes until tender. Remove and set aside.
- To make the sauce add the chicken broth, heavy cream, cream cheese, garlic powder, salt and pepper. Cook over medium heat and whisk until smooth. Add the flour and continue to cook for 1-2 minutes until it starts to thicken. Add the mushrooms and garlic to the sauce followed by the chicken and coat in the creamy sauce. Heat for a couple of minutes and serve immediately.

This recipe is a cousin of chicken marsala and just as good. Chicken dredged in flour gets a crispy brown coat before being simmered in a mixture of white wine, mushrooms and garlic.

- Season the chicken liberally with salt and pepper. Dust the chicken heavily with the flour, patting it so that it adheres to the chicken. Set the chicken aside. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, uncovered, for 10 minutes, turning the chicken as needed to brown on all sides. Remove the chicken and set aside. Add the mushrooms, garlic, and onion to the skillet. Cook, stirring frequently, for 3 minutes. Add the wine, broth, parsley, bay leaves, thyme, and basil to the skillet. Return the chicken to the skillet. Bring the liquid to a simmer. Cover the skillet and cook for 20-30 minutes or until the chicken is cooked through. Remove the bay leaves and serve the chicken with the mushroom sauce.

- Season flour with salt and pepper. Dredge chicken in seasoned flour onto a sheet of wax paper. In a nonstick skillet, combine the vegetable oil and butter or margarine and heat over medium high heat until bubbly and hot. Add chicken and cook until lightly browned on both sides and cooked through, 3 to 4 minutes. Remove chicken and set aside.

EASY CREAMY CHICKEN WITH MUSHROOMS AND ONIONS
This is one of those meals I fix when I haven't got much time. It uses ingredients I usually always have at hand. My BF loves it. Serve with pasta, rice or potatoes or just some crusty bread to mop up the sauce. This is enough for two people, but can easily be doubled. Or if you want some greens, just add frozen peas or some steamed broccoli florets for the last few minutes.

- Heat a little oil in a skillet and add chicken, fry over medium heat until the chicken is sealed.
- Add onions and continue to fry until they are starting to become transparent.
- Add mushrooms and fry for a further 3-5 minutes.

- Sprinkle the chicken pieces with salt and pepper. Dredge them in the flour, and pat to make the flour adhere.
- Heat the oil in a heavy skillet. When it is hot, add the chicken, skin side down, and cook, uncovered, turning occasionally to brown well on all sides, about 10 minutes. Drain off the fat.
- Add the mushrooms, garlic and onion, and cook, stirring, for about 3 minutes over high heat. Add the wine, tomatoes, chicken broth, parsley sprigs, bay leaf and thyme, and stir to dissolve the brown particles clinging to the skillet. Bring to a simmer, and add salt and pepper if needed. Cover tightly, and cook for 20 minutes.
- With a slotted spoon, remove the garlic cloves, and squeeze out the flesh by placing them in a sieve and pushing the pulp through with a pestle or rubber spatula.
- Add the pureed garlic to the skillet, and bring the mixture to a simmer. Cook, stirring, for about 2 minutes. Remove the bay leaf, and serve with chopped basil or parsley.

- Melt 15g of the butter in a pan.
- Add the onions and saute until soft. Add the mushrooms and salt and pepper to taste and cook until soft. Add the wine, tomato puree and stock and continue cooking, stirring, until the liquid is well concentrated; chill.
- Beat out the chicken breasts to an even thickness and place each one on a sheet of foil.
- Divide the mushrooms mixture between them and dot with the remaining butter.
- Fold the foil over the top and seal the edges.
- TO FREEZE Place parcels on a baking sheet and freeze, then pack in a plastic bag.
- Seal, label and return to the freezer.
- TO SERVE Place the foil parcels on a baking sheet. Cook from frozen in a preheated hot oven, 220 C , for about 1 hour.
- Remove the foil and sprinkle with parsley.
CHICKEN SAUTé WITH GARLIC
Steps:
- Brown the chicken pieces in the butter, turning each piece to color evenly. When pieces are browned, add chopped garlic and continue cooking for a minute or two. Add salt and freshly ground pepper to taste and 1/2 cup white wine. Cook gently over a low flame until chicken is tender. Remove chicken to a hot platter and pour the pan juices over it. Garnish the sautéed chicken with finely chopped parsley.
