TURKEY IN CREAM SAUCE
I've been relying on this recipe for tender turkey since I first moved out on my own years ago. I serve it whenever I invite new guests to the house, and I'm constantly writing out the recipe. -Kathy-Jo Winterbottom, Pottstown, Pennsylvania

TANGY TURKEY SAUTE
This utilizes turkey breast slices and really turns it into something special. With garlic, thyme and lots of fresh mushrooms, this dish from Amy Wenger of Severance, Colorado really packs the flavor. But the really special aspect of it is the use of Marsala wine. Marsala is an rich Italian dessert wine used often in cooking. Most of the alcohol is cooked out, leaving a delicious sauce behind, but if you don't want to use the wine, feel free to substitute chicken broth.

MAMAW'S CREAMED TURKEY OVER TOAST
The day after Thanksgiving you can achieve the very pinnacle of comfort food! My mom ended up having to bake several turkeys a year just so we could get this stuff. Some very knowledgeable 'Zaarites helped me to ressurect it as the recipe had been lost.

Steps:
- In a large no-stick skillet, begin heating the milk, margarine and chicken stock over medium heat.
- Whisk in the flour right away, eliminating all lumps, and as it comes to a boil, it should thicken.
- Add the salt and pepper. (Black pepper is okay as a substitute).
- As it thickens, toss in the chopped turkey and stir carefully as to not break up the chunks too much.
- If it gets too thick, just add some milk and stir.
- As soon as the mix is thick enough to your liking, it is done. Turn off the heat and cover until serving.
- Serve over slices of toast or, make up some of your favorite biscuits instead.
- If you have some left-over turkey broth from the day before when the turkey was baked, use that instead of chicken stock.
- Note: the more dark meat, the better. It really adds to the flavor of this dish.
TEQUILA TURKEY
I found this recipe on the Healthy Choice website. I actually used a pre-cooked turkey breast instead of the tenderloins and added a little red pepper with the yellow. Prep time includes refrigeration time.

Steps:
- In a medium bowl, combine tomatoes, bell peppers and jalapeno peppers with the vinegar. Cover and refrigerate to allow flavors to blend (2-hours suggested).
- While marinating vegetables, place turkey in a shallow dish. Prepare marinade by mixing limejuice, tequila, oil and black pepper until well blended. Pour over the turkey, and turn to coat well. Refrigerate 15 minutes or for no more than 2 hours, turning occasionally. Drain and discard remaining marinade.
- Spray outdoor grill with cooking spray. Preheat grill to medium heat and grill until tenderloins are no longer pink and juices run clear (170 degrees F) about 25 minutes.
- Cut turkey into slices and top with tomato relish before serving.
