Stuffed Flounder image

Provided by Food Network

Categories     main-dish

Yield 6 servings

Number Of Ingredients 25

6 flounder fillets, 9 ounces each
Salt
White pepper
24 ounces Lynnhaven Crab Stuffing, recipe follows
1 cup toasted bread crumbs
Paprika
1/4 cup melted butter
2 tablespoons to 1/4 cup water
Parsley leaves, for garnish
Lemon wedges, for garnish
14 ounces blue crab backfin crabmeat
1 5/8 ounces blue crab claw meat
1 egg, beaten
1 1/4 ounces high quality mayonnaise, by volume
3/8-ounce apple cider vinegar
1 1/4 teaspoons sugar
3/8 teaspoon Old Bay seasoning
1/8 teaspoon salt
Pinch white pepper
1 1/4 teaspoons all-purpose flour
1 1/4 teaspoons cornstarch
1/8 teaspoon cayenne pepper
1 1/4 teaspoons dry mustard
1 1/4 teaspoons dry parsley flakes
1 cup Japanese bread crumbs (panko)

Steps:

  • Preheat the oven to 450 degrees F. Split each fillet in 1/2 to make a top and bottom portion of the fish. Lightly season the bottom portions with salt and pepper. Place 4 ounces crab stuffing on bottom portion. Place the top portion of fish on top of crab stuffing. Place in a baking dish. Sprinkle lightly with salt, pepper, bread crumbs, and paprika. Top with melted butter so as to moisten all of the crumbs. Place a little water in the baking dish. Bake for 15 to 20 minutes or until done. Garnish with parsley and lemon wedges.
  • Being careful to not break apart lumps, pick the crabmeat free of shells. Refrigerate in mixing bowl. Whisk together the egg, mayonnaise, apple cider vinegar, and sugar, and set aside or refrigerate if not used immediately.
  • Thoroughly combine the dry ingredients. Mix dry ingredients into the crab meat, trying not to break up or mash the lumps of crab. Gently work the wet ingredients into the mix. Chill immediately.

BLACKENED DRUM

Blackened Drum image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 19

2 tablespoons grapeseed oil
2 1/2 pounds sweet potatoes, peeled and diced
1/4 cup molasses
1 teaspoon chili powder
1 pinch cayenne pepper
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 1/2 pounds green beans, ends trimmed
2 tablespoons unsalted butter
Juice of 1 lemon
1 cup Cajun blackening spice
1 tablespoon kosher salt, if needed
6 skinless black drum fillets
1/4 cup grapeseed oil
Herb Butter, recipe follows, for serving
1 pound unsalted butter, at room temperature
1/4 cup lemon juice plus 2 tablespoons lemon zest
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground black pepper

Steps:

  • For the sweet potatoes: Heat a large skillet over high heat until smoking hot. Add the grapeseed oil and then the sweet potatoes. Allow the potatoes to sear for 2 to 3 minutes and then turn the heat down to medium. Toss the sweet potatoes and cook until tender, 15 to 20 minutes. Add the molasses, chili powder and cayenne and toss to coat. Cook for 2 to 3 minutes more. Season with salt and pepper and keep warm.
  • For the green beans: Bring a large pot of water (seasoned with 2 tablespoons salt per gallon of water) to a rolling boil. Prepare an ice bath to shock the beans. Add about one-quarter of the beans to the boiling water (you don't want to add so many beans that the water loses the boil) and cook until crisp-tender, 2 to 3 minutes. Remove the beans from the water with a skimmer and shock in the ice bath. Repeat until all of the beans are cooked. Remove the beans from the ice bath and dry with a towel.
  • Heat a large skillet over high heat. Melt the butter and then add the green beans. Saute the green beans until tender and slightly browned, 2 to 3 minutes. Add the lemon juice, season with salt and pepper and keep warm.
  • For the blackened drum: Combine the blackening spice and salt, reducing or omitting the salt as needed (taste the spice mix first as some brands already have salt added). Spread the spice mixture on a plate and coat each side of the fish fillets.
  • Heat a large skillet over high heat. Add the grapeseed oil, gently lay the fish in the skillet and sear until the spices have blackened and formed a nice crust on the fish, 3 to 4 minutes. Gently flip the fish and sear on the second side for 3 to 4 minutes more. Remove from the pan and allow the fillets to rest for a few minutes before plating.
  • For serving: Mound some of the sweet potatoes in the centers of 6 plates. Place the green beans on top of the sweet potatoes and then top each plate with a fillet of fish. Top the fish with some Herb Butter and serve while the butter is melting over the hot fish.
  • Combine the butter, lemon juice, lemon zest and parsley in a bowl and mix well. Season with salt and pepper. Cover and store in the refrigerator for up to 1 week.

SAUERBRATEN

Provided by Alton Brown

Categories     main-dish

Time P3DT4h50m

Yield 4 to 6 servings

Number Of Ingredients 16

2 cups water
1 cup cider vinegar
1 cup red wine vinegar
1 medium onion, chopped
1 large carrot, chopped
1 tablespoon plus 1 teaspoon kosher salt, additional for seasoning meat
1/2 teaspoon freshly ground black pepper
2 bay leaves
6 whole cloves
12 juniper berries
1 teaspoon mustard seeds
1 (3 1/2 to 4-pound) bottom round
1 tablespoon vegetable oil
1/3 cup sugar
18 dark old-fashioned gingersnaps (about 5 ounces), crushed
1/2 cup seedless raisins, optional

Steps:

  • In a large saucepan over high heat combine the water, cider vinegar, red wine vinegar, onion, carrot, salt, pepper, bay leaves, cloves, juniper, and mustard seeds. Cover and bring this to a boil, then lower the heat and simmer for 10 minutes. Set aside to cool.
  • Pat the bottom round dry and rub with vegetable oil and salt on all sides. Heat a large saute pan over high heat; add the meat and brown on all sides, approximately 2 to 3 minutes per side.
  • When the marinade has cooled to a point where you can stick your finger in it and not be burned, place the meat in a non-reactive vessel and pour over the marinade. Place into the refrigerator for 3 days. If the meat is not completely submerged in the liquid, turn it over once a day.
  • After 3 days of marinating, preheat the oven to 325 degrees F.
  • Add the sugar to the meat and marinade, cover and place on the middle rack of the oven and cook until tender, approximately 4 hours.
  • Remove the meat from the vessel and keep warm. Strain the liquid to remove the solids. Return the liquid to the pan and place over medium-high heat. Whisk in the gingersnaps and cook until thickened, stirring occasionally. Strain the sauce through a fine mesh sieve to remove any lumps. Add the raisins if desired. Slice the meat and serve with the sauce.

SAUTEED FLOUNDER WITH RED GRAPEFRUIT BEURRE BLANC

Sauteed Flounder With Red Grapefruit Beurre Blanc image

Please feel free to substitute any mild tasting white fish of your choice. A non-stick pan works best for sautèing the fish. To say that grapefruit is my favorite fruit would be an understatement, although I would like to test this recipe next time with yellow-fleshed grapefruit. My brother mentioned this combination might taste good on shark and I think he's on to something. Serving suggestion: pan-grilled asparagus, roasted potatoes and a glass of Eola Hills pinot gris. Yesiree! Source unknown. Note: I was planning to use fresh tarragon as indicated in the recipe but sadly the tarragon in my herb garden wilted from the last big freeze. Parsley stepped in and saved the day. Thank you fresh Italian parsley!

Categories     Healthy

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

1/3 cup unbleached white flour
3/4 teaspoon salt (to taste)
ground black pepper, to taste
1 lb flounder or 1 lb sole fillet
1 tablespoon extra virgin olive oil
2 medium shallots, finely chopped
1/2 cup dry white wine
1 cup red grapefruit juice, freshly squeezed
1 tablespoon Dijon mustard
1 tablespoon butter
3 tablespoons finely chopped fresh tarragon (fresh!)

Steps:

  • In a shallow dish or pie plate, whisk together the flour, salt and pepper. One at a time, dredge the fish fillets in the flour mixture.
  • In a large nonstick skillet over medium-high, heat the oil.
  • Add the fish and cook until lightly browned and just opaque at the center, about 2 to 5 minutes per side. Transfer to a plate and loosely tent with foil.
  • Add the shallot to the pan and cook over medium-high, stirring often, until softened and beginning to brown, about 3 minutes.
  • Add the wine and bring to a simmer, scraping up any browned bits. Cook until most of the wine has evaporated, about 2 to 3 minutes.
  • Add the grapefruit juice and mustard, then bring to a boil. Reduce heat to low and simmer until the sauce is reduced and slightly thickened, about 5 minutes. Stir in the butter and tarragon. Transfer the fish to serving plates and top with the pan sauce.
