This crawfish cream sauce is a wonderful topping to many dishes that grace your dinner table.

3 tbsp of butter
3 garlic cloves, crushed
1 small onion, chopped
1 cup of bell peppers, chopped (green, red, and yellow)
2 cups of Half and Half
2 tbsp of freshly squeezed lemon juice
1 lb (16 oz.) bag of crawfish tails, thawed
Salt and Pepper to taste

Steps:

  • Heat pan to medium heat and melt butter
  • Add garlic, onion, and bell peppers. Saute until onions are translucent. This should be about 4-5 minutes.
  • Pour the half and half in to the pan. Stir and allow to cook until the cream mixture thickens.
  • Once the half and half thickens, add the lemon juice, crawfish tails, and stir until everything is combined.
  • Cook for an additional 2 minutes and then remove from heat.
  • Serve and enjoy!

1/4 cup plus 2 TB olive oil
1 cup chopped yellow onions
Essence to taste
1 lb crawfish tails, peeled & deveined
1 cup peeled, seeded, & chopped fresh or canned tomatoes
1 TB minced garlic (about 3 medium-size cloves)
Salt & pepper to taste
2 cups heavy cream or half & half or combo of both
1 TB Worcestershire sauce
1 TB hot sauce, such LA Hot Sauce or Crystal Hot Sauce
1/4 cup chopped green onions, green parts only
4 fish fillets
2 tsp chopped fresh parsley

Steps:

  • Heat 2 TB oil in a medium pan over medium heat. Add the yellow onions & season with Essence. Add the crawfish, cooking for 2 minutes. Add the tomatoes & garlic, season with salt & pepper, & cook for 3 minutes. Add cream/half & half, Worcestershire, & hot sauce. Bring to a boil then reduce heat to medium & simmer, stirring occasionally, until the cream thickens & reduces by one-third, about 6 to 8 minutes. Add the green onions & season again with salt & pepper. Set aside & keep warm. Heat a large pan with remaining ¼ cup olive oil over medium-high heat. Season fish with Essence. Add fish to the pan & sear until fillets are golden brown & flake easily with a fork, about 5 to 6 minutes. Remove & drain on paper towels. Serve crawfish sauce over fish.

12 ounces flounder or other mild white fish, 1/2-inch thick, cut into 4 (3-ounce) pieces
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 teaspoon all-purpose flour
2 tablespoons unsalted butter
Juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Prepare the fish by rinsing and patting dry, without squeezing the delicate fish flesh. Salt and pepper both sides of the fish. Heat the oil over medium-high heat in a medium saute pan.
  • Cook's Note: Do not use a nonstick pan.
  • The oil should be glossy, but not smoking. While the oil is heating, take a fresh paper towel and pat the fish dry a second time, and dredge the fish in flour on both sides, patting off the excess. This will make your beautiful crust-searing foolproof! Place the fish in the pan and cook undisturbed for 3 minutes. Flip the fish, being firm with the spatula in order to scrape up the whole golden-seared crust when you flip. Once flipped, place 1/2 tablespoon of butter on top of each piece of fish, and allow it to melt into the saucepan. It may brown somewhat, but it should not burn. Allow the mixture to cook another 2 minutes and then remove the fish. Deglaze the pan with the lemon juice (be careful with splatters!), and quickly scrape up the brown bits of flavor. Toss in the parsley, taste for seasoning, and spoon a teaspoon of the rich lemony butter onto the fish and serve.

1/8 teaspoon dried basil
1/8 teaspoon ground black pepper

Pinch dried thyme
3 cups milk

4 ounces American cheese, cubed
1 pound peeled crawfish tails
2 tablespoons sliced green onions
2 (4-ounce) catfish fillets
Creole seasoning, as needed
2 eggs
2 cups milk
2 cups flour
2 cups cornmeal

Steps:

  • For the sauce: In a heavy-bottomed skillet over medium heat, melt the butter and saute the onions, peppers and garlic until wilted. Add the flour and stir until a blond roux is achieved, about 2 minutes. Stir in the sugar, chicken base, crab base, granulated garlic, basil, black pepper, cayenne pepper and thyme. Add the milk and wine and cook over medium heat until the milk thickens, stirring constantly, about 6 minutes. Add the cheese and stir until the cheese melts and fully incorporates into the sauce. Add the crawfish tails and cook until heated through, about 4 minutes. Add the green onions just before serving.
  • For the catfish: Sprinkle the catfish with Creole seasoning. In a small bowl, beat the eggs and add the milk. Coat the catfish in flour and dip in the milk/egg mixture, then coat with cornmeal. Heat the oil to 350 degrees F in a large skillet. Fry the catfish until golden brown, 7 to 8 minutes.
  • Serve the catfish with the crawfish au gratin sauce.

6 ounces salmon fillets
1 teaspoon celery seed
1 teaspoon sesame seeds
1 teaspoon olive oil, divided
3 ounces plain fat-free yogurt
3 ounces light sour cream
3 minced garlic cloves
1/4 teaspoon kosher salt, to mince the garlic
1/2 teaspoon white pepper
1 teaspoon cornstarch
3 tablespoons whole milk
2 ounces cooked crawfish tail meat

Steps:

  • Mix the yogurt, sour cream, and garlic and allow to rest in the refrigerator over night if possible.
  • Make a paste of the cornstarch and milk.
  • Preheat the oven to 375 degrees. Preheat an oiled skillet to the smoke point.
  • Brush or spray one side of the filet with the remaining olive oil. Coat that side with the seeds. Carefully lay the filet in the hot skillet and sear it to a golden brown crust. Do not turn the fish. Place skillet in the oven and bake for 4 minutes.
  • While the fish is baking, slowly bring the yogurt mixture to a simmer, stirring continuously. If you are too aggressive the sauce will break. This is not a disaster, but it doesn't look as good. Add the cornstarch milk and stir in the crawfish tails and cook until the tails are warm.
  • Plate the fish and cover with the sauce. It will need some salt. Your call as to how much.

4 fish fillets, skin removed (flounder, tilapia, cod, or bass)
salt
pepper
1/2 cup flour
2 tablespoons olive oil
2 tablespoons white wine
6 tablespoons butter
4 -6 garlic cloves, sliced thin
2 tablespoons italian seasoning (or use fresh herbs)
1/2 lemon, juice of (slice the other half of the lemon for garnish)

Steps:

  • Season the fillets with salt and pepper. Heat a saute pan on top of the grill, firepit, or stove over med high heat.
  • When the pan is hot add the olive oil and heat. Dredge the bass fillets in the flour and shake off any excess.
  • Place the fillets in the pan and pan fry about 3 minutes per side, until golden brown. Remove the fish from the pan. Reduce to a medium/med-low heat (move away from coals if cooking outdoors). De-glaze the pan with the wine and then add the butter.
  • When the butter is melted, add the sliced garlic. Fry for about a minute just until the garlic begins to turn light golden brown.
  • Add the herbs and remove from the heat. Carefully, add the lemon juice. Season with salt and pepper. To serve, place a fillet on a plate and spoon some of the lemon garlic herb butter over the fish. Garnish with lemon slices.

12 ounces dried salted cod fish
vegetable oil for frying
4 large potatoes, peeled and cut into very small cubes
½ cup olive oil
1 large onion, sliced thin
3 cloves garlic, minced
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup hot milk
1 pinch ground nutmeg
1 ⅓ cups heavy cream
salt and ground black pepper to taste
⅔ cup heavy cream
1 ounce grated Parmesan cheese

Steps:

  • Soak the dried salted cod in cold water with the skin side up for 24 hours, changing the water about 4 times. Drain and discard the water.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the cod in a pan with enough water to cover; bring to a boil and cook for 10 minutes. Remove the cod from the pan; remove and discard the skin and bones. Cut the cod into chunks and set aside.
  • Heat 1/2 inch vegetable oil in large skillet over medium-high heat. Working in batches if necessary, fry the potatoes in the hot oil until just cooked, about 5 minutes. Transfer to a plate lined with paper towels to drain.
  • Pour the olive oil into a Dutch oven or heat-proof casserole dish over medium heat. Cook the onion and garlic in the oil until the onion is translucent, about 5 minutes. Add the cod and cook another 3 minutes; stir the potatoes into the mixture and cook another 1 to 2 minutes. Reduce heat to low.
  • Melt the butter in a separate pan over medium-low heat; vigorously stir the flour into the melted butter. Slowly stream the hot milk into the mixture while stirring; cook and stir until thick. Season with the nutmeg. Pour into the casserole with 1 1/3 cups cream; stir to coat. Allow the mixture to simmer together for about 2 minutes. Season with salt and pepper. Drizzle remaining 2/3 cup cream over the mixture; sprinkle with the Parmesan cheese.
  • Bake in the preheated oven until the top is browned, 30 to 40 minutes. Serve hot.
