1/4 cup sugar
1 teaspoon grated peeled ginger
1/4 teaspoon ground allspice
1/2 vanilla bean, split lengthwise and seeds scraped
1 pound rhubarb, stalks only, cut into 1-inch pieces
Salt and freshly ground pepper
1 tablespoon canola oil
Four 6-ounce salmon fillets with skin
4 ounces pea shoots or watercress

Steps:

  • In a saucepan, combine the water, sugar, ginger, allspice and vanilla bean and seeds. Add the rhubarb; bring to a boil. Cook over moderate heat, stirring occasionally, until the sauce is jam-like, about 20 minutes. Season with salt and pepper. Discard the vanilla bean. In a nonstick skillet, heat the oil over moderately high heat. Season the salmon with salt and pepper. Cook, turning once, until lightly browned, 8 minutes. Spoon the sauce onto plates, top with the salmon and pea shoots and serve.

1 teaspoon lemon juice
1/2 teaspoon dill weed
3 teaspoons cream

Steps:

  • In 12 inch skillet, heat 3 Tbsp butter.
  • Add filets, skin side down, and saute on low heat for about 10 min turning often.
  • Add salt and pepper to taste.
  • Sprinkle with lemon juice and dill.
  • Remove to serving plate.
  • Add 2 Tbsp butter, and cream.
  • Cook and stir 1 minute.
  • Pour over salmon.
  • Serve with lemon slices.

8 salmon fillets (3 ounces each), skinned, preferably organic or wild
Fine sea salt and freshly ground white pepper

Steps:

  • Heat canola oil in a medium nonstick skillet over medium-high heat. Season salmon with salt and pepper and add to skillet, skin-side up. Cook until golden brown, about 3 minutes. Turn fish and continue cooking until a metal skewer can be easily inserted into fish and, when left in for 5 seconds, feels just warm when touched to your lip, 2 to 3 minutes more. Remove fish from skillet and serve immediately.

6 cups sugar
2 medium oranges

Steps:

  • Combine rhubarb and sugar in a Dutch oven. Grind oranges, including the peels, in a food processor; add to rhubarb mixture. Bring to a boil. Reduce heat and simmer, uncovered, stirring often until marmalade sheets from a spoon, about 1 hour. , Remove from heat; skim off foam. Ladle hot mixture into eight hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

4 (6-ounce) salmon fillets, skin on
Salt and freshly ground black pepper
Peanut oil
2 tablespoons butter
1 tablespoon oil
2 red onions, cut into 1-inch dice
3 tablespoons balsamic vinegar
3 tablespoons red wine
3 sprigs fresh thyme
1/2 cup heavy cream
1 tablespoon butter
Chive flowers, as garnish

Steps:

  • Season the salmon with salt and pepper on both sides. Make 2 or 3 slits across the skin of the salmon. Place a cast-iron skillet over high heat. Add enough peanut oil to lightly coat the bottom of the pan. Just as the oil begins to smoke add the salmon, skin-side down and cook for 4 minutes. Lower the heat and cook the salmon all the way on the same side, about 10 minutes - it will cook from the bottom up. During the last 30 seconds or so, spoon some of the oil over the top of the salmon to help cook it through.
  • While the salmon is cooking, make the sauce. In a stainless steel saute pan over medium heat, add 1 tablespoon butter and the oil. When the butter is melted, add the onions and cook until translucent but not browned, about 6 minutes, stirring constantly. Season with salt and pepper. Deglaze with the balsamic vinegar and red wine. Add the thyme and cook until the liquid is almost completely reduced, about 3 minutes. Add the cream and bring to a simmer. Cook until the cream is slightly reduced and starts to thicken, about 3 to 4 minutes, stirring occasionally. Be careful as the cream could boil over at this point. Once the cream is reduced, remove the thyme sprig. Season, to taste, with salt and pepper. Stir in the remaining butter.
  • Spoon the onion marmalade onto plates. Top with the salmon and garnish with chive flowers.

12 jumbo asparagus
3 center-cut salmon steaks, 3/4 inch thick, boned, skinned and cut in two, with bones reserved
1 cup dry white wine
1 cup clam juice or seafood stock
2 large shallots, finely chopped
1 bay leaf, preferably Turkish
6 parsley stems
1 sprig fresh thyme
3 stalks rhubarb with leaves removed, peeled and diced
2 teaspoons Dijon mustard
Salt and freshly ground black pepper
Zest of 1 lemon
3 tablespoons extra virgin olive oil
2 tablespoons chopped dried sour cherries or cranberries
2 tablespoons finely slivered, slant-cut scallion tops

Steps:

  • Snap the ends of the asparagus off where they break naturally, peel the ends with the tips and steam until crisp-tender and still bright green, about 5 minutes. Set aside.
  • Form each piece of salmon into a medallion by winding it around itself, starting with the thickest part. Tie each medallion with butcher's string, or secure with toothpicks. Place on a baking sheet lined with parchment, cover with plastic wrap and refrigerate.
  • Place the salmon bones in a small saucepan. Add the wine, clam juice, shallots, bay leaf, parsley stems and thyme. Simmer to reduce to 1/2 cup. Strain through a fine strainer into a blender jar.
  • Place the rhubarb in a saucepan, add 1/3 cup water and cook over low heat until the rhubarb has disintegrated, about 10 minutes. Add the rhubarb to the blender jar. Blend until smooth. Add the mustard, salt, pepper, lemon zest and olive oil to make a vinaigrette-style sauce. Adjust the mustard and oil to taste.
  • Use a little of the olive oil to coat a heavy skillet. Season the medallions with salt and pepper, place them in the skillet, cover with a lid that fits into the skillet so it sits directly on the fish and cook over very low heat, turning frequently, until just done -- still translucent in the very center, 4 to 5 minutes. Remove the string or toothpicks.
  • Spoon a pool of the sauce onto each plate. Add a medallion of salmon, top it with two asparagus tips and sprinkle with chopped cherries or cranberries and scallion slivers.

4 teaspoons black or yellow mustard seeds
1 1/4 cups fresh orange juice
1 cup sugar
1/3 cup water
2 tablespoons finely grated orange peel
4 teaspoons coriander seeds
1 tablespoon caraway seeds
1 tablespoon minced peeled fresh ginger
3 cups 2-inch-long 1/4-inch-thick matchstick-size strips rhubarb (from about 12 ounces trimmed rhubarb)
8 cups thinly sliced red cabbage (from about 1/2 medium head)
1/2 cup Sherry wine vinegar
1/2 cup dry red wine
6 6- to 7-ounce salmon fillets with skin
2 tablespoons olive oil
3 cups arugula
3/4 cup plain Greek-style yogurt*

Steps:

  • Stir mustard seeds in small dry skillet over medium heat until beginning to pop, about 3 minutes. Transfer to small bowl; reserve.
  • Bring orange juice, sugar, 1/3 cup water, and orange peel to boil in large skillet, stirring until sugar dissolves. Reduce heat to medium; add mustard seeds, coriander seeds, caraway seeds, and ginger. Simmer until syrupy, 10 minutes. Add rhubarb; reduce heat to medium-low. Cover and simmer until rhubarb is tender but intact, 2 minutes. Using slotted spoon, transfer rhubarb to microwave-safe bowl; reserve.
  • Bring syrup in skillet to simmer. Add cabbage, vinegar, and wine; bring to boil. Reduce heat to medium, partially cover, and simmer until cabbage is soft and most of liquid is absorbed, stirring frequently, about 45 minutes. Season to taste with salt and pepper. Remove from heat.
  • Meanwhile, preheat oven to 425°F. Line rimmed baking sheet with parchment paper. Place salmon, skin side down, on prepared baking sheet. Brush salmon with olive oil; sprinkle with salt and pepper. Roast until salmon is just opaque in center, about 11 minutes. Rewarm reserved rhubarb in microwave just until warm.
  • Divide warm cabbage among 6 plates. Scatter arugula atop and around cabbage. Place 1 salmon fillet atop cabbage. Spoon dollop of yogurt atop salmon, then rhubarb.
  • A thick yogurt; sold at some supermarkets and at specialty foods stores (such as Trader Joe's and Whole Foods markets) and Greek markets. If unavailable, place regular yogurt in cheesecloth-lined strainer set over large bowl. Cover and chill overnight to drain.

2 medium oranges
1 medium lemon
6 cups sugar
6 cups diced fresh or frozen rhubarb
1-1/2 cups fresh or frozen strawberries
Pinch salt
1 cup raisins

Steps:

  • Finely grate orange and lemon peels; squeeze and reserve juices. In a Dutch oven, combine the peels, juices, sugar, rhubarb, strawberries and salt. Cook and stir over medium heat until sugar is dissolved; add raisins. Bring to a full rolling boil; cook over medium heat until thick, about 5 minutes. , Remove from the heat; skim off foam. Carefully ladle hot mixture into hot pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

1 lb rhubarb, cut into 1/4 inch pieces (about 3 1/2 cups)
1/3 cup sugar
1/2 lemon, juice of, to taste
6 (6 ounce) salmon fillets, about 1 inch thick, pin bones removed
salt & freshly ground black pepper

Steps:

  • Preheat oven to 500 degrees, or its highest temperature.
  • In a small saucepan, combine rhubarb and sugar.
  • Cover and cook over low heat until rhubarb is falling apart, about 20 minutes, adding water if necessary.
  • Stir in the lemon juice.
  • The sauce should be the consistency of applesauce.
  • Arrange salmon filets, skin side down, on a foil or parchment-lined baking pan.
  • Season to taste with salt and pepper.
  • Bake until almost opaque throughout, about 17-20 minutes.
  • Spoon rhubarb onto center of warmed plates.
  • Lift fillets from pan, leaving skin behind if desired.
  • Place fillets on rhubarb.
