SAVORY BACON POT ROAST
Bacon and a simple seasoning packet elevate the humble Sunday roast to a decadent meal from eatatkates.com

Steps:
- Place cut potatoes, carrots, & celery in the bottom of the slow cooker.
- Cook bacon until brown and crispy.
- Remove bacon from pan and set aside to cool.
- Discard all but 3 tablespoons of bacon fat from the pan.
- Season one side of the roast with salt and pepper and sear, seasoned side down, in bacon fat until browned; another 8-10 minutes.
- While the roast cooks, crumble or roughly chop the bacon. Reserve about 1/3 for serving and scatter the rest on top of the vegetables in the slow cooker.
- Turn the roast and sear the second side until browned.
- Place roast on top of the vegetables.
- Return the pan to the heat, keeping 2-3 tablespoons of the fat in the pan,
- Add the diced onion and cook until softened, about five minutes.
- Stir tomato paste into the onions until coated.
- Add the Savory Pot Roast Seasoning to the pan and stir in 1-1/3 cup water.
- One throughly mixed together, pour over the roast in the slow cooker.
- Cover and cook on low for 6-8 hours.
- Serve with reserved bacon crumbled over the top.

Steps:
- In a Dutch oven, brown roast in oil. Remove and set aside. , In the drippings, saute onions and garlic until onions are tender. Return roast to Dutch oven. Stir in the tomatoes, 1/2 cup water, horseradish, browning sauce, salt if desired and pepper., Cover and simmer for 2-3 hours or until meat is tender. Remove roast to a serving platter and keep warm. Drain, reserving 2 cups pan juices. Combine flour and remaining water until smooth; stir into pan juices. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Slice roast and serve with gravy.

- Combine the seasonings; rub over roast. Place on a rack in a shallow roasting pan. , Bake, uncovered, at 350° until a thermometer reads 145°, 80 minutes. Let stand for 10-15 minutes before slicing.
