The best part about beef steak fajitas is that you can pair them with any vegetables you love: bell peppers, diced zucchini, even sliced mushrooms.

1 whole beef flank steak
1/2 c. olive oil
3 tbsp. Worcestershire sauce
1/3 c. fresh-squeezed lime juice
3 cloves garlic, minced
1 tbsp. cumin
1 tbsp. chili powder
1/2 tsp. red pepper flakes
1 tsp. salt
1/2 tsp. black pepper
1 tbsp. sugar
2 medium onions, halved and sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
Oil, for frying
Flour tortillas, warmed
Cheese (grated cheddar/Jack or crumbled queso fresco), for topping
Salsa, for topping
Sour cream, for topping
Cilantro leaves, for topping

Steps:

  • In a dish, mix together the olive oil, Worcestershire sauce, lime juice, garlic, cumin, chili powder, red pepper flakes, salt, pepper, and sugar until combined. Pour half of the marinade into a separate dish. In one dish, place the flank steak, turning it over to coat. In the second dish, place all the veggies, turning to coat. Cover the dishes with plastic wrap and place in the fridge for at least 2 hours.
  • Prepare the tortillas and toppings.
  • Heat a heavy skillet over medium-high heat and drizzle in some oil. Add the veggies and cook them for a few minutes, until they're cooked but still slightly firm and have nice black/brown pieces. Remove to a plate and set aside.
  • Heat the same same skillet (or a grill pan if you have it) over high heat and drizzle in some oil. Cook the meat for about 2 minutes per side until medium rare. Remove and allow to rest on a cutting board for 5 minutes. Slice the meat right before serving and serve with all the fixins. Delicious!

1 lb / 500g beef steak ((rump and skirt are ideal) (Note 1))
4 tbsp / 1/4 cup orange juice (, fresh (1 orange))
2 tbsp lime juice
2 garlic cloves (, minced)
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp onion powder ((optional))
1 tsp chipotle powder ((Note 2))
1/2 tsp salt
Black pepper
2 - 3 tbsp oil
2 bell peppers/capsicum (, sliced (Note 3))
1 large onion (, halved and sliced (brown, yellow, white))
Salt and pepper
12 tortillas (, small)
Avocado
Cilantro/coriander
Sour cream
Lime wedges
Tomatoes (, sliced, or Pico de gallo)

Steps:

  • Place the Marinated Beef ingredients in a ziplock bag, massage to coat then refrigerate for 2 hour to overnight.
  • Remove beef from marinade 30 minutes prior to cooking (to bring to room temperature) and pat dry with paper towels. Discard marinade.
  • Drizzle 1/2 tbsp of oil on each side of the beef (1 tbsp in total).
  • Heat the BBQ or a skillet on high heat. Cook beef to your liking. (Note 4)
  • Remove beef onto a plate and cover loosely with foil.
  • Return skillet to stove, still on high heat, and heat 1/2 tbsp oil. Add onions, sprinkle with salt and pepper, and cook until soft and charred. Remove onto serving plate.
  • Heat remaining 1/2 tbsp oil in the skillet. Add bell pepper/capsicum, sprinkle with salt and pepper, and cook until charred. Remove onto plate.
  • Slice beef thinly against the grain (Note 5).
  • Serve with warmed tortillas and fixings of choice. (Note 6)

2 ½ teaspoons ground cumin (divided)
1 ½ teaspoons chili powder (divided)
1 teaspoon chipotle chile powder
1 teaspoon ground coriander
1 ½ teaspoons kosher salt (divided)
1 ½ pounds flank steak or skirt steak
2 medium limes (zest and juice (about 1 ½ teaspoons zest and ¼ cup juice))
4 tablespoons extra-virgin olive oil (divided)
1 tablespoon Worcestershire sauce
1/2 tablespoon honey
2 cloves garlic (minced (about 2 teaspoons))
2 red bell peppers (seeded and cut into 1/4-inch strips)
1 green bell pepper (seeded and cut into 1/4-inch strips)
1 large yellow onion (halved and cut into 1/4-inch strips)
Flour or corn tortillas
Chopped fresh cilantro
Sliced fresh avocado
Nonfat plain Greek yogurt or sour cream
Crumbled queso fresco or feta

Steps:

  • In a small bowl, place 2 teaspoons cumin, 1 teaspoon chili powder, 1 teaspoon chipotle chile powder, coriander, and 1 teaspoon salt. Zest the 2 limes directly into a bowl, then stir to combine.
  • Place the steak on a cutting board. With a sharp knife, carefully make shallow, diagonal cuts across the top of the steak. Repeat, making diagonals in the opposite direction to create a crosshatch pattern. Repeat on the bottom side of the steak.
  • Rub the spice mix all over both sides of the steak, then place in a sturdy ziptop bag.
  • In the same bowl you used for the spices (no need to rinse in between), whisk together the lime juice, 2 tablespoons olive oil, Worcestershire, and honey.
  • Pour into the bag with the steak, seal, then turn the bag to coat the steak evenly. Place on a plate or sheet pan and let rest at room temperature for at least 30 minutes or up to 1 hour, or refrigerate for up to 1 day. Turn the bag periodically to redistribute the marinade. If refrigerating the steak, let it come to room temperature prior to cooking.
  • When ready to prepare the beef fajitas, remove the steak from the marinade, shaking off any excess. Pat very dry to ensure you get a nice sear.
  • To warm the tortillas, wrap them in foil and place in a 300 degrees F oven while you cook the steak and vegetables.
  • Heat 1 tablespoon of the oil in a large cast-iron skillet or similar large, sturdy skillet over medium-high heat. (If your skillet is not large enough to cook the entire piece of steak, cut slice it in half and cook it in batches; you also can cook the steak on an outdoor grill instead.) Cook the steak for 4 to 6 minutes per side, until the meat reaches 140 degrees F on an instant read thermometer. Remove to a cutting board, cover, and let rest for 10 minutes (the steak's temperature will continue to rise as it rests; DO NOT skip resting or it will taste dry). Slice across the grain into thin (1/2- to 3/4-inch) strips.
  • Add the remaining 1 tablespoon oil to the skillet. Add peppers and onions. Sauté, stirring often, until they soften and the onions begin to turn golden, about 8 minutes.
  • Reduce the heat to medium. Add the remaining 1/2 teaspoon cumin, 1/2 teaspoon chili powder, and 1/2 teaspoon salt. Continue to cook until the vegetables completely soften and are starting to caramelize, about 6 to 8 minutes more.
  • Stir in the garlic and let cook 30 seconds, just until fragrant. Remove the pan from the heat.
  • To serve, arrange the meat slices on a big platter and drizzle any juices that have collected on the cutting board over the top. Place the vegetables beside the meat. Serve piled inside the warm tortillas, with toppings of choice.

1 red bell pepper, cored, seeded and sliced into 1/2-inch strips

1 yellow onion, cut in half, sliced 1/2-inch thick
1 cup cremini mushrooms, sliced
1 1/2 teaspoons Fajita Spice Mix, recipe follows, or packaged seasoning mix
4 egg whites, whisked together
Salt and freshly ground black pepper
1/2 to 1 cup Dominic's Salsa, for serving, recipe follows
Hot sauce, for serving, optional
Fat-free sour cream, for serving, optional
2 tablespoons chili powder
2 teaspoons ground cumin

Steps:

  • Preheat the oven to 200 degrees F; arrange the tortillas in a single layer on an oven rack to warm them.
  • In a small well-seasoned cast-iron or nonstick skillet, heat the oil over medium-low heat. Sprinkle a few droplets of water into the pan. If they sizzle and evaporate, the skillet is hot enough. Add the bell pepper and onion and saute until soft and fragrant, 8 minutes. Add the mushrooms and the Spice Mix and continue to saute until fragrant and the vegetables are thoroughly warmed through.
  • Add the egg whites to the skillet. As they begin to solidify, use a rubber spatula to move them around the pan to mix with the vegetables, so that the liquid parts are exposed to the heat. When all is cooked through, season with salt and pepper.
  • Serve straight from the skillet, spooning the fajita mixture onto the warmed tortillas. Serve with Dominic's Salsa or hot sauce (if using), and the sour cream (if using) on the side.
  • Combine the chili powder, cumin, garlic powder, onion powder, brown sugar, paprika, cayenne, salt, cornmeal and some black pepper in a small bowl and whisk together. Store in a small jar with a tight-fitting lid. The spice mix will keep up to 2 months.
  • Combine the tomatoes, scallions, jalapeno, garlic, cilantro, lime juice and vinegar in a medium serving bowl. Add the salt and pepper. Stir to combine. Let sit at room temperature for 10 minutes, then stir again.

  • Combine all seasonings and mix well.
  • Take out 1 tbsp for later use.
  • Combine the seasoning blend with 1/4 cup olive oil, garlic and shrimp.
  • Toss to mix well. Set aside.
  • Heat the 2 tbsp of olive oil in skillet and saute onions until softened.
  • Add peppers and continue to saute until tender.
  • Sprinkle the reserved tablespoon of seasoning blend over vegetables and stir to mix well.
  • Remove the vegetables from the skillet and set aside. Add shrimp to skillet and cook until shrimp are cooked through.
  • This will only take about 3 to 5 minutes. Add the vegetables back into the skillet and toss to combine.

1 lb beef sirloin steak, trimmed of fat
1/4 cup olive oil
1/4 cup lime juice
2 tablespoons fajita seasoning mix
1 tablespoon fresh oregano, chopped
1 cup red onion, thinly sliced
8 (8 inch) flour tortillas
2 cups mangoes, sliced

Steps:

  • Place steak in a ziploc bag.
  • Stir together oil, lime juice, fajita seasoning and oregano, reserving 2 tablespoons.
  • Pour remaining mixture into bag with meat.
  • Refrigerate for 4-24 hours, turning bag occasionally.
  • Preheat grill to medium.
  • Place onions on an 18-inch square of aluminum foil.
  • Drizzle with reserved lime mixture.
  • Bring up two opposite sides of the foil and seal with a double fold.

I love a good fajita but have never been satisfied with most restaurants I've gone to. I've come up with a basic recipe you can build from that is awesome in itself. Give it a try! The meat is key in a good fajita. It must melt in your mouth along with all the other fixins you put into the tortilla. Serve fajitas in warm tortillas topped with fresh guacamole, garden salsa, and fresh cilantro.

1 flank steak
¼ cup shichimi togarashi
¼ cup orange juice
¼ cup low-sodium soy sauce
2 tablespoons lime juice
½ orange, zested
½ lime, zested
1 tablespoon cornstarch
1 tablespoon chili powder, or more to taste
1 teaspoon kosher salt
1 teaspoon smoked paprika
1 teaspoon brown sugar
1 teaspoon cayenne pepper
1 teaspoon red pepper flakes
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground cumin
1 tablespoon olive oil
1 onion, cut into slices and separated
1 red bell pepper, cut into thin strips
¾ cup water

Steps:

  • Flatten flank steak slightly with a meat mallet. Rub shichimi togarashi into both sides of steak, wrap the steak in plastic wrap, and refrigerate for 8 hours or overnight.
  • Combine orange juice, soy sauce, lime juice, orange zest, and lime zest together in a resealable plastic bag. Remove flank steak from plastic wrap and place the steak in the resealable plastic bag, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove steak from marinade and pour marinade into a small bowl.
  • Cook steak on the preheated grill, basting with the marinade every 5 minutes, until it starts to firm and is seared on the outside and reddish-pink and juicy in the center, 8 to 10 minutes per side. An instant-read thermometer inserted into the center should read 135 degrees F (57 degrees C).
  • Cut steak in half lengthwise and cut across the grain into thin slices.
  • Whisk cornstarch, chili powder, salt, paprika, brown sugar, cayenne pepper, red pepper flakes, onion powder, garlic powder, and ground cumin together in a bowl.
  • Heat oil in a large skillet over medium-high heat. Saute onion and red bell pepper in hot oil until soft, 5 to 10 minutes. Add sliced steak, chili powder mixture, and water to the skillet. Cook until sauce thickens and meat is glossy, 3 to 5 minutes.

6 ounces flank steak
8 ounces whole onion or 7 ounces chopped ready-cut onion (1 2/3 cups)
16 ounces whole yellow and red peppers or 14 ounces ready-cut chopped peppers (4 cups)
1 teaspoon ground cumin
1/8 teaspoon salt
Freshly ground black pepper
4 whole wheat no-fat tortillas, if available, or white-flour tortillas
1/2 small avocado to yield 4 small slices
1/2 cup nonfat yogurt
Salsa (see recipe)

Steps:

  • Grind beef and saute in its own fat in a medium-hot nonstick skillet. Stir often to break up.
  • Chop whole onion and add to beef, cooking until onion softens.
  • Chop whole peppers and add to onion with cumin. Continue cooking until all the vegetables are soft. Season with salt and pepper.
  • Wrap two tortillas in aluminum foil and heat in toaster oven for 3 to 5 minutes at 400 degrees.
  • Chop avocado.

In the microwave:
4 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
1/4 cup fresh lemon juice
1 1/2 teaspoons ground cumin
2 tablespoons olive oil
2 pounds skirt steak, trimmed and cut into large pieces to fit on a grill or broiler pan or in a ridged grill pan
2 tablespoons vegetable oil
3 assorted colored bell peppers, sliced thin
1 large red onion, sliced thin
2 garlic cloves, minced
twelve 7- to 8-inch flour tortillas (recipe follows or store-bought), warmed (procedure follows)
guacamole and tomato salsa as accompaniments

Steps:

  • Make the marinade:
  • In a large bowl whisk together the garlic paste, the lime juice, the cumin, and the oil.
  • Add the steak to the marinade, turning it to coat it well, and let it marinate, covered and chilled, for at least 1 hour or overnight. Grill the steak, drained, on a well-oiled rack set about 5 inches over glowing coals or in a hot well-seasoned ridged grill pan over moderately high heat for 3 to 4 minutes on each side, or until it is just springy to the touch, for medium-rare meat. (Alternatively, the steak may be broiled on the rack of a broiler pan under a preheated broiler about 4 inches from the heat for 3 to 4 minutes on each side for medium-rare meat.) Transfer the steak to a cutting board and let it stand for 10 minutes. While the steak is standing, in a large skillet heat the oil over moderately high heat until it is hot but not smoking, add the bell peppers, the onion, and the garlic, and sauté the mixture, stirring, for 5 minutes, or until the bell peppers are softened. Slice the steak thin across the grain on the diagonal and arrange the slices on a platter with the bell pepper mixture. Drizzle any steak juices over the steak and the pepper mixture and serve the steak and the pepper mixture with the tortillas, the guacamole, and the salsa.
  • To assemble a fajita:
  • Spread some of the guacamole on a tortilla, top it with a few slices of the steak, some of the pepper mixture, and some of the salsa, and roll up the tortilla to enclose the filling.
  • To warm tortillas:
  • In the oven:Stack 6 tortillas at a time, wrap each stack in foil, and heat the tortillas in the middle of a preheated 325°F. oven for 5 minutes for corn tortillas and 15 minutes for flour tortillas. (If the tortillas are very dry to begin with, pat each tortillas between dampened hands before stacking them.)
  • In the microwave:Stack 6 tortillas at time, wrap each stack in a microwave-safe plastic bag, and heat the tortillas in a microwave oven at high power (100%) for 30 seconds to 1 minute, or until they are heated through and pliable.
