2 med onions sliced
1 c. tomato paste
(or possibly tomato meat sauce)
1 c. water
1/4 tsp freshly-grnd black pepper
1/4 tsp ginger
1 Tbsp. salt
8 whl cloves
6 x potatoes halved
6 x carrots halved

Steps:

  • Brown meat well in fat in heavy kettle or possibly roasting pan. Slip a low rack under meat. Add in onions, tomato paste, water, and seasonings. Cover tightly. Simmer over low heat or possibly bake in moderate oven (350 degrees ) for 3 hrs or possibly till tender. Add in potatoes and carrots. Cook 30 min longer. Place on deep platter. This recipe yields 6 servings. Description: "With the arrival of November's cool days and long nights, most Alaskans are getting ready for winter to begin in earnest. Time to pull a roast out of the freezer and prepare a dish which will bring back all those good memories of the fall hunt."

4 pounds caribou roast
MARINADE
1/2 cup vinegar
2 cloves garlic, minced
2 tablespoons salt
2 tablespoons flour
2 tablespoons oil
2 cloves garlic, minced
1 tablespoon brown sugar
1 teaspoon prepared mustard
1 tablespoon Worcestershire sauce
1 tablespoon vinegar or lemon juice
1 can (14 ounce size) tomatoes

Steps:

  • Marinate the caribou with the vinegar, garlic and salt in a plastic bag turning occasionally, overnight in the refrigerator. Remove from the marinade and discard it, pat dry, roll in flour and brown in a little oil in a hot skillet. Make a paste of the remaining ingredients and smear over the roast. Place in a preheated 450 degrees F oven, reduce the heat to 300 degrees F and roast 60-80 minutes until finished to desired doneness. Deglaze the pan and make gravy.

1 tablespoon canola oil
2 large onions, diced
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water, divided
2 tablespoons prepared horseradish
1 teaspoon browning sauce
1/2 teaspoon salt, optional
1/8 teaspoon pepper
1/4 cup all-purpose flour

Steps:

  • In a Dutch oven, brown roast in oil. Remove and set aside. , In the drippings, saute onions and garlic until onions are tender. Return roast to Dutch oven. Stir in the tomatoes, 1/2 cup water, horseradish, browning sauce, salt if desired and pepper., Cover and simmer for 2-3 hours or until meat is tender. Remove roast to a serving platter and keep warm. Drain, reserving 2 cups pan juices. Combine flour and remaining water until smooth; stir into pan juices. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Slice roast and serve with gravy.

1 (3 pound) boneless beef chuck roast
2 cloves garlic, crushed
1 cup chopped onion
1 teaspoon salt
2 (8 ounce) cans tomato sauce
2 tablespoons white sugar
1 tablespoon all-purpose flour
1 teaspoon unsweetened cocoa powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
¼ teaspoon ground cinnamon
1 teaspoon grated orange zest
2 large potatoes, cut into large chunks
3 carrots, sliced
1 stalk celery, chopped
½ cup sliced almonds

Steps:

  • Heat the oil in a large skillet over medium-high heat. Place the roast into the hot oil and cook, turning frequently, until browned on all sides. Remove from the skillet and place in a slow cooker.
  • Cook garlic and onions in the skillet in the meat drippings until tender. Stir in the salt and tomato sauce. Combine the sugar, flour, cocoa powder, chili powder, oregano, cumin, coriander, cinnamon, and orange zest; stir into the tomato sauce. Pour the tomato sauce over the roast in the slow cooker. Add potatoes, carrots and celery. Cover, and cook on Low for 6 to 8 hours, or until meat is tender. Garnish with sliced almonds before serving.

3 -4 lbs chuck roast
1 (2/3 ounce) package Good Seasonings Italian salad dressing mix
1/2 teaspoon dried thyme
2 tablespoons freeze-dried basil leaves or 1 tablespoon dry basil leaves
salt & pepper
3 garlic cloves, minced
1/3 cup red wine
1/4 cup water
1 (16 ounce) bag baby carrots
1 (12 ounce) package white button mushrooms, halved
salt & pepper

Steps:

  • Cover both sides of roast with Italian dressing mix and place in crock pot.
  • Sprinkle thyme and basil over top of roast.
  • Add salt and pepper.
  • Gently pour red wine and water over and around roast being careful not to wash the spices off the roast.
  • Sprinkle minced garlic over the roast.
  • Top roast with baby carrots and mushrooms.
  • Finish with a little more salt and pepper.
  • Set crock pot on high for two hours, and then low for five to six more. (Or on low for 8-10 hours.).

4 -6 potatoes
1 bell pepper

Steps:

  • brown meant lightly-place all ingredients in crockpot on low in early am or night before.
  • you can also- use low fat/sodium broth in place of regular.
  • You can also take sodium count down further by using fresh mushrooms instead of jarred.
  • if you are not worried about the diet just use reg broth- heinz savory gravy and the jarred mushrooms.
  • do not forget to clean the vegetables.
