Baked chicken with Brie Sauce -- a French delight that is simple to cook!

1 cup light beer or dry white wine
4 skinless, boneless chicken breast halves
salt and black pepper to taste
1 teaspoon dried oregano, or to taste
8 ounces Brie cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pour the beer or wine into a glass baking dish large enough to lay out the chicken. Season the chicken with salt, pepper and oregano on both sides, and place in the dish.
  • Bake for 35 to 40 minutes in the preheated oven, or until juices run clear. While chicken is baking, slice Brie with the rind into 1/4 inch thick slices. When chicken is done, place slices of Brie over the top. Return to the oven for 3 to 5 minutes, until cheese is melted. Voila, chicken with Brie sauce is complete!

1 (10.5 ounce) can cream of chicken soup
1 cup cottage cheese
½ cup sour cream
4 ounces cream cheese, at room temperature
1 ½ teaspoons Creole seasoning
½ teaspoon onion powder
1 teaspoon garlic powder, divided
5 cups shredded rotisserie chicken
1 cup finely chopped yellow onion
1 tablespoon chopped fresh parsley
30 buttery round crackers (such as Ritz®), crushed
4 tablespoons unsalted butter, melted
1 cup shredded mozzarella cheese
1 teaspoon sliced scallions, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir together cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium bowl until well blended and smooth. Fold in chicken, chopped onion, and parsley until evenly coated.
  • Stir together crackers, melted butter, and remaining 1/2 teaspoon garlic powder in a medium bowl.
  • Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish. Sprinkle evenly with mozzarella then cracker mixture.
  • Place on a foil-lined baking sheet and bake in the preheated oven until crackers are golden brown and edges are bubbly, about 40 minutes. Cool for 10 minutes before serving; garnish with scallions if desired.

I got the idea for these appetizers from my favorite sandwich at a local restaurant-a symphony of sweet fig, roasted apple, melted brie and tangy garlic mayonnaise. I re-created this delectable combination in a quick appetizer with bright red cranberries and green spinach to give it a holiday twist. These scrumptious bites only take about 20 minutes, but taste like you spent hours; you can also make them a few days in advance, then warm them in the microwave for 20-30 seconds before serving. 1/4 cup mayonnaise
1-1/2 teaspoons garlic paste
12 slices deli chicken, halved
1/4 cup apple jelly
1/4 cup fig preserves
24 fresh baby spinach leaves
4 ounces mini Brie cheese wheel
1/3 cup sweetened dried cranberries

Steps:

  • Preheat broiler. Cut baguette into 24 slices; place on foil-lined baking sheets. Combine mayonnaise and garlic; spread evenly over baguette slices. Add a half slice of chicken to each. Combine apple jelly and fig preserves; spread evenly over chicken., Add one baby spinach leaf to each slice. Standing the Brie wheel on end, cut crosswise into six narrow slices. Lay slices flat; cut each into four wedges. Add one cheese wedge to each baguette. Top with 3 cranberries. Broil 3-4 in. from heat until cheese is melted, 1-2 minutes. Cool 5 minutes before serving.

A simple and savory meal for anyone who loves the creamy flavor of brie! The onions, brie and juices from the chicken create a nice sauce when the chicken is cut.

2 boneless chicken breasts, split lengthwise and pounded thin
1 -2 tablespoon olive oil, if necessary
1 large onion, sliced
3 ounces pancetta, cubed or 3 ounces pancetta, sliced and chopped into small pieces
3 garlic cloves, minced
brie cheese, sliced lengthwise
1 egg, beaten
3 tablespoons whole wheat flour or 3 tablespoons all-purpose flour
toothpick

Steps:

  • Saute onions and pancetta in skillet until onions translucent and pancetta browned adding 1 tbs. olive oil if necessary.
  • Add minced garlic to onion and pancetta mixture and saute for 1 minute.
  • Lay chicken open on work surface and spread 1/2 of onion mixture on one side of each chicken breast.
  • Place 1-2 slices of brie on top of onions.
  • "Close" each chicken breast and secure sides with toothpicks.
  • Heat 1 tbs. olive oil on medium high heat.
  • Dredge each breast in egg then flour mixture and place in skillet.
  • Cook for 6-7 minutes per side depending on thickness of chicken.
  • *Don't forget to remove toothpicks before serving.
