1 1/2 pounds chicken breast (boneless and skinless - cut into 1-inch chunks)
2 tablespoons lemon juice
1 teaspoon lemon zest
4 tablespoons olive oil
2 tablespoons honey
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon black pepper
4 garlic cloves (minced)
2 tablespoons fresh chopped parsley
1 1/2 cup plain Greek yogurt
1 teaspoon lemon juice (or to taste)
1/2 cup minced cucumber
1/4 cup fresh dill (finely minced)
Salt and pepper to taste
1 cup finely diced cucumber
1/2 cup tomato (finely diced)
1/4 cup kalamata olives (finely diced)
1/4 cup green olives (finely diced)
1 teaspoon lemon juice
1 teaspoon red wine vinegar
1 tablespoon honey
1 tablespoon olive oil
2 tablespoons minced fresh parsley
Salt and pepper to taste

Steps:

  • Combine the marinade ingredients in a medium bowl and add chicken chunks to it, toss to coat.
  • Marinate for at least 30 minutes or up to 6 hours.
  • Mix all the ingredients in a medium bowl. Season with salt and pepper to taste, cover and refrigerate until ready to use or up to 1-2 days.
  • When ready to serve, garnish with chopped dill and a drizzle of olive oil.
  • Combine all the ingredients in a medium bowl, season with salt and pepper to taste.

  • Turn on and heat the grill or place a grill pan over medium heat.
  • If using bamboo skewers, place them in the water to soak for about 10 minutes.
  • Remove the chicken from the marinade and thread the pieces onto about 6 skewers.
  • If grilling, place the chicken skewers on the grill and cook for 5-6 minutes on each side, or until the chicken is cooked through.
  • If using the grill-pan, place it over medium heat, brush it with olive oil and cook the chicken skewers for 5-6 minutes per side, or until the chicken is cooked through.
  • Serve the chicken skewers with the yogurt sauce, the tomato-cucumber olive relish, with pita bread and hummus on the side.

1 gallon cold water
1 tablespoon dried sage
1 tablespoon dried celery seed
½ tablespoon dried thyme
¾ cup kosher salt
¾ cup sugar
¾ cup Kikkoman Soy Sauce
2 tablespoons seasoned salt

Steps:

  • Remove giblets from chicken cavity, rinse chicken inside and out.
  • In a large stock pot or container, mix water, sage, celery seed, thyme, salt, sugar and soy sauce to create brine. Stir well until the sugar and salt are dissolved. Place the chicken in the brine, cover and refrigerate for at least 4 hours or overnight.
  • Remove chicken from the brine and rinse well inside and out. Sprinkle with 2 tablespoons of seasoned salt. Bake the chicken at 400 degrees F for 45 minutes.

¼ cup lemon juice
¼ cup extra virgin olive oil
3 cloves garlic (, minced)
½ teaspoon red pepper flakes
½ teaspoon Kosher salt
½ teaspoon ground black pepper
¼ cup flat leaf parsley (, minced)
¼ cup basil (, minced)
2 tablespoons oregano (, minced)
1 whole chicken (, cut into pieces)

Steps:

  • Combine the lemon juice, olive oil, garlic, red pepper flakes, Kosher salt, black pepper, parsley, basil and oregano in a bowl.
  • Mix well.
  • Combine with the chicken in a large mixing bowl or an airtight plastic bag. Massage into the chicken.
  • Refrigerate at least 2 hours, but up to 24 hours.
  • Remove chicken from marinade, discarding remaining marinade mixture.
  • If grilling, heat to medium-high heat.
  • Cook on indirect heat for 30 minutes, turning, occasionally, or until internal temperture of chicken reaches 165 degrees.
  • Remove and allow to rest for 5 minutes before serving.

4 boneless skinless chicken breasts
2 tablespoons dry Ranch dressing mix
1 garlic clove (, finely minced or grated)
2 tablespoons lemon juice
1/2 cup water
1/2 cup vegetable oil

Steps:

  • Pound chicken breasts out to a uniform 1/2 inch thickness.
  • Combine dry Ranch mix with fresh garlic, lemon juice, water and vegetable oil in a large plastic bag. Chill and marinate for 10-30 minutes.
  • Before heating of the grill, allow to sit at room temperature for 10 minutes.
  • Heat grill to medium-high heat. Spray with grill approved cooking spray and place chicken directly over heat. Cook for 5-7 minutes on each side, or until done. Since the sizes of chicken varies greatly, so will the cooking times.

This grilled harissa chicken recipe brings the bold flavor of harissa, accented with sweet paprika, herby thymes, and bright citrus note.

2 pounds chicken tenders
1/4 cup olive oil
1/4 cup harissa
1 tbsp paprika
2 tbsps honey
1 tbsp chopped thyme leaves
4 cloves of garlic, finely chopped
1 tbsp lemon zest
1/2 tbsp salt
1/2 tsp freshly ground pepper
Lemon wedges for serving

Steps:

  • In a small prep bowl, whisk olive oil, harissa, paprika, honey, thyme, lemon zest, and garlic until combined.
  • Season chicken with salt and pepper. Thread chicken pieces onto skewers. In a shallow pan, lay them in a single. Pour the marinade over the chicken, toss well to coat. Leave the chicken in the fridge for 4 hours or overnight, turning halfway through.
  • About 30 minutes prior to grilling, remove the chicken from the fridge and bring it to room temperature.
  • Prepare a hot fire in a charcoal grill or preheat a gas grill to high (375°F to 400°F). Alternatively, heat a lightly oiled grill pan over high. Gently blot excess marinade from chicken to ensure a nice sear.
  • Grill skewers, turning every 4 minutes, until chicken is lightly charred and cooked through. Let it rest for 5 minutes while you prepare the sauce.
  • In a bowl, whisk yogurt, lemon zest, garlic, thymes, and salt until combined.
  • Serve chicken skewers with yogurt sauce and extra lemon wedges

  • Place chicken in a large glass baking dish.
  • In a bowl stir together rest of ingredients until well blended.
  • Reserve 1/2 cup of marinade for basting chicken during cooking.

  • Remove chicken from marinade.
  • Discard marinade.
  • Grill turning & basting occasionally with reserved marinade.
