- Combine sausage, baking mix, Cheddar cheese, egg, and evaporated milk in the bowl of a stand mixer; mix on low speed until thoroughly combined.
- Shape sausage mixture into 1-inch balls and arrange onto baking sheets.
- Bake in preheated oven until no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
- Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.

Steps:
- In medium bowl, combine egg, sausage, stuffing mix and sage.
- Mix thoroughly.
- Shape into 1 inch balls.
- Add to large skillet.
- Cook over medium heat, turning occasionally, 5-8 minutes or until browned on all sides.
- Remove from skillet.
- Drain on paper towels.
- Drain fat from skillet and discard.
- Add water, ketchup, chili sauce, brown sugar, soy sauce and vinegar to skillet.
- Stir well.
- Return meatballs to skillet and stir to coat.
- Bring to a boil over medium-high heat.
- Cover.
- Reduce heat to medium-low and simmer 30 minutes, stirring occasionally.
- Transfer to chafing dish and serve with wooden picks.
- You can also bake these with the sauce in the oven set at 350 for 30-35 minutes.

SAVORY SAUSAGE BALLS WITH BOURBON GLAZE
Steps:
- Heat oven to 375 degrees F. In large bowl, using hands thoroughly combine sausage, pork, eggs, bread crumbs, onion, water chestnuts, milk, ginger, pepper, cayenne, mace and allspice. Pat mixture evenly onto large piece of waxed paper, or directly onto counter top, to a 12x8-inch rectangle. Cut into 96 squares, round each square gently and place in shallow rimmed baking pans. Bake for 15-20 minutes, until very lightly browned. Remove from baking sheets and reserve. Meanwhile, stir together jelly, mustard, bourbon, Worcestershire sauce and hot pepper sauce in large nonstick skillet. Cook and stir over medium heat until jelly melts and mixture comes to a boil. Add meatballs, stirring gently to coat. Lower heat and simmer gently for 8-10 minutes until sauce thickens a bit and meatballs are coated.
BOURBON SAUSAGE
Serve these warm and have some slices of a thin French loaf on the side to sop the juices. Also, instead of toothpicks, set out an old fashioned glass filled with pretzel sticks. People get two treats in one, and they don't have to deal with used toothpicks.

- In a medium-sized mixing bowl, combine sausage, egg, crushed crackers and sage. Separate the mixture into two balls.
- Heat a skillet to a high heat and brown the sausage balls. Drain on paper towels. Transfer the balls to a container with a lid.
- Combine ketchup, vinegar, brown sugar and soy sauce in a small pot. Stir while heating the sauce. Let the sauce come to a boil, then reduce the heat to simmer. Let the sauce simmer for 20 minutes before pouring the sauce over the balls.
- Allow to cool, then cover the balls and sauce, and refrigerate overnight. Reheat before serving.
