MEDITERRANEAN SHRIMP

Steps:
- Preheat the oven to 450 degrees F.
- For the vegetables: In a large bowl, whisk the white wine, olive oil and garlic. Add the artichokes, haricot vert, tomatoes, olives, capers and onions and toss to coat. Season with about 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer the mixture to a baking sheet and evenly spread out. Roast until the tomatoes begin to release their juices, 10 to 12 minutes.
- For the shrimp: While the vegetables are roasting, use the same bowl and mix together the olive oil, oregano, red pepper, garlic and lemon zest and juice. Add the shrimp and toss to coat. Season with about 1/4 teaspoon salt and a pinch of black pepper.
- Drizzle the baguette pieces with olive oil.
- Remove the baking sheet from the oven and add the shrimp. Stir and evenly spread out the shrimp and vegetables. Add the pieces of baguette around the perimeter. Roast until the shrimp is pink and opaque, 8 to 10 minutes.
- Transfer to a serving bowl, sprinkle with the crumbled feta and serve with the bread.

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute shrimp in oil until shrimp turn pink. Add the garlic, salt and pepper; cook 1 minute longer. Remove and set aside., In the same skillet, heat 1 cup broth, lemon juice and dried basil. In a small bowl, combine cornstarch and remaining broth until smooth; stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in spinach and shrimp; cook until spinach is wilted., Drain pasta; serve with shrimp mixture. Sprinkle with cheese and fresh basil.

MEDITERRANEAN-STYLE SAUTEED SHRIMP AND ZUCCHINI
Steps:
- In a small bowl, combine the spices (oregano, cumin, coriander, and paprika.)
- Pat shrimp dry and season with kosher salt and 1 ½ tsp of the spice mixture. Set aside briefly or refrigerate till later. (Reserve the remaining spice mixture for the vegetables.)
- In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium heat. Add onions and ½ the amount of garlic and cook for 3 to 4 minutes, tossing regularly till fragrant (do not allow the garlic to burn.)
- Add zucchini, bell peppers, and chickpeas. Season with salt and pepper and the remaining spice mixture. Toss to combine. If needed, raise the heat just a bit and cook the veggies until tender, tossing regularly (about 5 to 7 minutes.)
- Transfer the veggies to a large plate for now. Return the skillet to the heat and add a little bit of extra virgin olive oil. Add the seasoned shrimp and remaining garlic. Cook over medium-high heat, stirring occasionally, until shrimp is totally pink (about 4 to 5 minutes).
- Add the cooked vegetables back to the skillet with the shrimp. Add cherry tomatoes and lemon juice. Give everything a good toss. Finish with the fresh basil.

SAVVY SHRIMP SAUTE' MEDITERRANEAN STYLE

- 1. Cook linguine in boiling salted water, when done a la dente, drain, set aside. 2. In saute or fry pan, using med-high heat, saute minced garlic in olive oil, add sliced onions. When onions are translucent, add mushrooms. 3. After 5 minutes total cooking time, add sun-dried tomatoes for another minute. Add salt and pepper to taste. Now add goat cheese, yogurt, and sour cream. 4. Within another minute or two, add raw shrimp. One minute more while stirring, as shrimp 'pinks', simmer one last half-minute. If shrimp is already cooked, please add only in the last half-minute to sauté mixture. 5. Pour mixture over individual plates of linguine. Sprinkle with fresh or dried Basil. 6. Optional: Serve with a simple romaine and arugula (or plain romaine) salad with campari (or other) tomatoes, little crumbled goat cheese using olive oil and red wine vinegar with a splash of balsamic vinegar, add pieces of pecans or walnuts, if desired.
SAUTEED SHRIMP
Steps:
- Squeeze lemon over shrimp and set aside.
- Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
- Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

- Stir in next 2 ingredients, (pimiento and lemon juice) heat thoroughly.

This was a favorite pasta dish served in one of the Legal Seafood Restaurants in Massachusetts. The feta cheese and Kalamata olives offer their own saltiness, so please gauge accordingly.

Steps:
- Heat 2 TBSP of the olive oil in a large nonreactive skillet.
- Add the garlic, onions, and scallion; saute over medium heat for 2 minutes, stirring frequently.
- Stir in tomatoes: cook over high heat for 5 minutes.
- Stir in the wine and cook 1 minute longer.
- Remove from heat and scrape into a large bowl.
- Stir in half of the feta cheese and set aside.
- Meanwhile, Cook bowtie pasta according to package directions, al dente.
- Remove from heat and drain.
- In the same pan the sauce was prepared, heat the remaining TBSP olive oil.
- Add shrimp, and saute over medium-high heat until cooked through, about 2 minutes.
- Add chopped olives ans the sauce.
- Lower the heat and cook 1 minute.
- Stir in remaining feta cheese, the butter and the freshly ground black pepper.
- Toss the sauce with the pasta and garnish with remaining whole olives.
