BROILED SHRIMP SCAMPI
Here's a recipe that I have made several times for our family. Set your broiler and watch the shrimp closely. The shrimp is done when it turns pink. Do not overcook! Serve with baked potato and salad.

Steps:
- Preheat broiler to 500 degrees (260 degrees C).
- Stir shrimp together with butter, garlic and wine. Place on a baking sheet and broil for 10 minutes. Sprinkle on scallions and broil for another 2 to 3 minutes, until shrimp are firm. Serve hot.

- Heat broiler with rack set 4 inches from heat. Place shrimp on a large broilerproof rimmed baking sheet.
- Sprinkle with oil and garlic, and season generously with salt and pepper; toss to coat. Arrange shrimp in a single layer.
- Broil until opaque throughout, 3 to 4 minutes. Sprinkle with lemon juice and parsley; toss to combine. Serve immediately; garnish with lemon wedges.

Steps:
- Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
- Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
- Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and set aside.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Heat 1/4 cup butter over medium heat in a large, deep skillet. Add garlic; cook and stir until fragrant. Add shrimp, white wine, and lemon juice; continue to cook and stir until shrimp is bright pink on the outside and the meat is opaque, about 5 minutes. Stir in red pepper flakes until well combined. Remove from heat and set aside.
- Place remaining 1/4 cup butter, bread crumbs, 1/2 the Parmesan cheese, and parsley in a bowl. Stir until well combined. Set aside.
- Place cooked pasta into shrimp scampi mixture; toss until fully coated in sauce. Add remaining Parmesan cheese and toss well. Top with bread crumb mixture.
- Broil in the preheated oven until golden brown, 3 to 4 minutes. Serve immediately.

- Heat the grapeseed oil in a small saucepot over medium heat and saute onion until translucent. Add garlic and saute for 2 more minutes. Stir in ketchup, mesquite seasoning and cayenne pepper. Reduce heat to low, cover and let simmer for 15 minutes.
- For the shrimp scampi:
- Heat grapeseed oil over medium heat in a skillet and add garlic, celery, red bell pepper, green bell pepper, thyme and parsley. Cook for about 5 to 10 minutes until vegetables soften and flavors are integrated. Stir in shrimp and cook until they are just pink and opaque. Do not overcook shrimp. Remove to a platter. Spoon sauce over and sprinkle with parsley.
SHRIMP SCAMPI - BROILED
It's rare to find a recipe where the shrimp is broiled, rather than sauteed these days. But once you try this broiled you will never go back to the skillet. Use the largest shrimp you can get for best results.

- Preheat broiler. Butterfly shrimp by cutting partially through the back and "flattening". Rinse and dry with paper towels. In a shallow baking dish toss shrimp with the olive oil to coat, season with salt and pepper to taste, then sprinkle the remaining ingredients over the shrimp.
- Make sure shrimp is in a single layer in the baking dish. Broil 5 to 6 minutes, until cooked through and opaque. There should be no need to turn shrimp and the edges will probably be a little browned. Spoon any accumulated pan juices over the shrimp and serve.

Then prepare in a bowl 1.5 lb large peeled and deveined patted dry shrimp and add 1 tbsp. olive oil, 2 cloves minced garlic, salt and pepper and place on lined baking pan. Cook until opaque throughout, about 3-4 minutes. Remove and sprinkle with 2 tbsp. lemon juice and 2 tbsp. chopped fresh parsley. Serve immediately with fresh lemon wedges. - Do not shell the shrimp, but to Cut shrimp in half lengthwise through the shell, leaving them attached at the tail.
- In a non-reactive suacepan, combine the butter, lemon juice, parsley, garlic, black pepper and crushed red pepper.
- cook on low just until butter is melted Stir in shrimp to coat and let marinate for 15 minutes.
- Remove shrimp and arrange them in a shallow, oval casserole dish or I use the bottom of a broiler pan.

- they will be floppy but will firm as they cook.
- Pour the sauce over the shrimp.
- Put your pan under a hot broiler and cook until the shrimp are done (not very long).
- Arrange cooked shrimp in bowls and pour sauce over from your pan.
- Sprinkle with additional parsley.
