Horseradish sour cream:
1/2 cup mashed potatoes (optional)
1/2 cup sour cream
1 tablespoon finely grated peeled fresh horseradish
1 teaspoon chopped fresh dill
1 teaspoon chopped fresh flat-leaf parsley
1 teaspoon fresh lemon juice
Kosher salt, ground pepper
Assembly:
4 slices Danish rye or pumpernickel bread
8 ounces sliced smoked salmon
2 radishes, thinly sliced
2 tablespoons salmon or trout roe (optional)
Dill sprigs and flat-leaf parsley leaves
Kosher salt, ground pepper

Steps:

  • For horseradish sour cream:
  • Whisk potatoes, if using, sour cream, horseradish, dill, parsley, and lemon juice in a small bowl; season with salt and pepper.
  • For assembly:
  • Spread horseradish sour cream on bread and top with smoked salmon, radishes, roe, if using, dill, and parsley. Season with pepper.

1 small red onion , very finely chopped
small bunch dill , most roughly chopped
2 tsp fresh or creamed horseradish
good squeeze lemon juice
100ml soured cream
200g smoked salmon

Steps:

  • Tip the onion and chopped dill into a bowl with the horseradish and lemon juice. Stir through the soured cream, season with a pinch of salt and generous grinding of pepper, and mix well. Can be made a day ahead and kept in the fridge.
  • Arrange the salmon on a board or plate, scatter with the remaining dill fronds and serve with a grinding of black pepper and the sauce alongside.

Salmon gravlax is a Scandinavian dish consisting of raw salmon, cured in salt, sugar, and dill. It is often served with grovbrød, a cereal bread.

1 lb salmon ((sashimi-grade), bones removed and skin on)
2 tablespoons mixed peppercorns ((whole), crushed with a mallet)
1 cup fresh dill (, roughly chopped)
3 tablespoons vodka
4 oz. rock salt ((coarse and flakes work too))
4 oz. brown sugar

Steps:

  • In a small bowl, combine brown sugar and salt together and set aside.
  • Line a baking sheet with parchment paper.
  • Place salmon, flesh side up, on a grate on the prepared pan. Scatter fresh chopped dill over the top of the flesh. Sprinkle with crushed peppercorns and vodka.
  • Layer salt and sugar mix, over the top of the fish.
  • Refrigerate in a container in the refrigerator for 24 to 36 hours.
  • Drain the liquid on the pan. Scrape off sugar, salt and dill. Rinse the fish and pat dry.
  • The fish is now ready to be thinly sliced on a bias, leaving the skin behind.

Inspired by gravadlax, these little bites with a fresh, fragrant sauce are a great appetizer

about 16 salad or new potatoes - longer ones work best (I used Pink Fir Apple)
2 x 150g packs smoked salmon slices (or about 16 slices)
150ml pot soured cream
1 tbsp Dijon mustard
1 tbsp caster sugar
6 tbsp olive oil (I used half extra virgin, half mild)
2 tbsp white wine vinegar
½ a 20g bunch dill , leaves well chopped

Steps:

  • Boil the potatoes in their skins for 15 mins until tender, then drain and cool. Meanwhile, whisk all the sauce ingredients together, except the dill. Cut each piece of salmon in half to make two long strips.
  • Halve the potatoes slightly on a diagonal, then wrap a piece of smoked salmon around each piece and place onto a platter. If you want to add salt, go easy, as the salmon is highly seasoned. Scatter with pepper, a squeeze of lemon and a few dill fronds. Give the sauce a quick whisk, add the chopped dill, season to taste, then pour into a dipping bowl. Scoop the soured cream into another. To eat, dip the potatoes into the cream, then spoon over a little sauce.

A sophisticated meal for two, this quick and easy salmon fillet with sharp and creamy potato salad is exactly what you need to lift you out of that mid-week work slump

Number Of Ingredients 8

2 salmon fillets
1/2 lemon, zested
4 tbsp demerara sugar
a small bunch dill, chopped
300g new potatoes
drained and finely diced to make 2 tbsp pickled onions
drained and finely diced to make 3 tbsp gherkins
2 tbsp mayonnaise

Steps:

  • Put the salmon skin-side down in a small baking dish. Mix the salt, lemon zest, sugar and 2 tbsp of the dill and pat all over the salmon flesh. Leave for 30 minutes.
  • Meanwhile cook the potatoes in boiling salted water until tender then drain. Leave to cool to room temperature then mix with the rest of the ingredients and another tbsp chopped dill and season.
  • Heat the oven to 220C/fan 200C/gas 7. Rinse the salmon and pat dry. Put on a small roasting tray and bake for 10-15 minutes until just cooked.
  • Serve the salmon with the potato salad and a little extra dill if you like.
