ONE POT HAM AND CHEESE PASTA
Steps:
- Melt butter over medium heat in a large stockpot.
- Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
- Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
- Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
- Remove from heat and stir in swiss and parmesan.
- Taste and re-season, if necessary, and enjoy!

- Fill the large pot with cold water and a pinch of salt. Bring to a boil over high heat and add pasta, stirring occasionally to prevent the pasta from sticking. Cook according to packet instructions, until al dente.
- Meanwhile, in large, deep skillet, heat oil over medium heat, add onions and sauté until fragrant, about 1-2 minutes. Add ham and sauté, covered, stirring occasionally for about 5-7 minutes, until onions are translucent and ham tender and lightly browned.
- Add the drained noodles to the ham and onions, stir well to well combined. Add the eggs, mix to combine and continue cooking and stirring until eggs are cooked through..
- Season with salt and pepper and serve immediately. Enjoy!

- Heat a large pot of water over high heat and bring to a boil. Once boiling, add the pasta and cook until al dente. Drain, reserving ½ cup of the pasta cooking water.
- Meanwhile, heat the olive oil in a medium skillet on medium heat until melted. Add the shallot and sauté for 3-4 minutes until fragrant. Add the chopped garlic and cook for 1 minute more. Stir in the cubed ham and the frozen peas and toss to combine.
- Add in the reserved pasta cooking water and then the pasta and 2 varieties of cheese. Season with salt and pepper and lemon zest. Toss to combine and serve as needed.
