Scones image

This is a very simple recipe for scones. You can customize them by adding dried fruit or nuts. Half and half can also be substituted for milk if you wish.

Number Of Ingredients 7

3 cups all-purpose flour
½ cup white sugar
5 teaspoons baking powder
½ teaspoon salt
¾ cup butter
1 egg, beaten
1 cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.
  • Turn dough out onto a lightly floured surface, and knead briefly. Roll dough out into a 1/2 inch thick round. Cut into 8 wedges, and place on the prepared baking sheet.
  • Bake 15 minutes in the preheated oven, or until golden brown.

I never have cream, but i've used Milk with success.

1 1/3 c sifted all purpose flour
2 1/4 teaspoons baking powder
1 tbsp sugar
1/2 tsp salt
1/4 c cold butter
2 eggs
1/3 cup cream (I use 1% milk, and that's what the nutritional info is using)

Steps:

  • Preheat oven to 450
  • sift first four ingredients together in a large bowl
  • cut in cold butter with a pastry blender or two knives, until the butter chunks are the size of small peas.
  • In a separate bowl beat 2 eggs. Set 2 tbsp of this aside for a glaze. Into the remainder beat in the milk/cream
  • Make a well in the dry ingredients. Pour the liquid into it. combine with a few swift strokes. Handle the dough as little as possible. Place it on a lightly floured board. Pat until 3/4 inch thick. cut with a knife into diamond shapes or wedges. Brush with the reserved egg, and sprinkle with a bit of salt or sugar.

This recipe came from my Joy of Cooking. They are absolutely spectacular.I think I added a bit more sugar. Taste like excellent shortbread.

Number Of Ingredients 12

2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons butter, cool but not melted
1/2 cup dried cranberries or 1/2 cup currants
1 lemon, zest of
1 large egg
1/2 cup whipping cream
2 -3 teaspoons cream or 2 -3 teaspoons milk
cinnamon (optional)
sugar (optional)

Steps:

  • Heat oven to 425.
  • Mix flour, sugar, baking powder and salt.
  • Cut in butter with pastry blender.
  • Cut until size of peas.
  • Stir in currants or cranberries and rind.
  • Stir together egg,and cream and dump into dry mix.
  • Stir til a ball then gently knead five times.
  • Pat into a round 8" wide,about 3/4" thick.
  • Cut into 8 or 12 wedges and place on ungreased cookie sheet.
  • Brush tops with cream and sugar and cinnamon if desired.
  • Bake 12- 15 minutes.
  • Oh my, then enjoy.
