HOMEMADE SCOTTISH SAUSAGE ROLLS

Homemade Scottish Sausage Rolls image

A Scottish recipe using beef instead of pork, to fill puff pastry to create incredibly delicious Sausage Rolls.

Provided by Cathy Stewart

Categories     Main Courses

Time 45m

Number Of Ingredients 9

one package puff pastry
1 lb (454 g) ground beef (you can still use pork or a mixture of beef and pork)
1 cup (250 ml) water or less
1 1/4 tsp salt
3/4 tsp black pepper
3/4 tsp coriander (dried, ground) do not use fresh cilantro
1/2 tsp nutmeg
1 cup (90 g) plain breadcrumbs (see my prior post on how to make your own- see notes)
1 slightly beaten egg white, to brush pastry

Steps:

  • In a large bowl, mix together the salt with all the spices and breadcrumbs. Add the ground beef, and about 1/2 cup of water. Using your hands, mix all the ingredients together until it has a meatloaf texture, adding water as needed. The sausage should hold together when squeezed, without being too wet.
  • Place the puff pastry on a clean counter, mat or board. Cut into rectangular(ish) pieces, they don't need to be exact, depending on the size of the rolls you want to make; from cocktail size to "man" size. Alternatively, you can make a long roll and then cut them into the size you desire.
  • Shape some meat into logs, and place close to one end of the pastry, but don't put too much meat or they will burst open when baking.
  • With your finger, lightly dampen one of the edges with a little water, seal shut, then crimp with a fork, as shown.
  • Place on a lined (Silpat, aluminum foil or parchment) edged baking tray, make three or four small cuts in the top of the pastry, and brush with a little beaten egg white.
  • Bake sausage rolls in preheated 400º F oven for about 25 minutes or until golden brown.
  • Serve with brown sauce (HP Sauce is my preference).

Time 35m

Yield 4

Number Of Ingredients 7

1 pound potatoes, peeled and cut into chunks
2 cups shredded cabbage
1 carrot, grated
1 onion, minced
1 teaspoon prepared yellow mustard
½ cup shredded sharp Cheddar cheese
salt and pepper to taste

Steps:

  • Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then simmer over medium heat until tender enough to pierce with a fork, about 10 minutes. Drain and mash potatoes, then set aside.
  • Meanwhile, combine cabbage and carrot in another saucepan and add just enough water to barely cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain off liquid and stir into the mashed potatoes along with the onion, mustard and Cheddar cheese. Season with salt and pepper.
  • Shape the mixture into 4 patties. Heat a greased grill pan over medium-high heat. Place the patties on the pan and grill until heated through and golden brown, about 5 minutes on each side. Serve right away.

Categories     Cookies     Mixer     Cheese     Bake     Freeze/Chill     Cheddar     Shower     Party

Yield Makes about 30 savory cookies

Number Of Ingredients 6

1/2 cup (1 stick) unsalted butter, at room temperature
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Pinch of cayenne pepper
8 ounces extra-sharp white Cheddar cheese, finely shredded
1 cup unbleached all-purpose flour

Steps:

  • Using electric mixer fitted with whisk attachment, beat together butter, salt, black pepper, and cayenne at low speed just until blended. Add Cheddar and flour and mix at low speed just until smooth (do not overmix). Shape dough into disk, wrap in plastic wrap or waxed paper, and chill 30 minutes.
  • Arrange racks in upper and lower thirds of oven and preheat to 350°F. Line 2 large baking sheets with parchment paper.
  • On lightly floured surface, roll out dough to 1/4- to 1/8-inch-thick round. Using 1 1/2- to 2-inch round cutter, cut out rounds and arrange 1 1/2 inches apart on baking sheets. Reroll scraps if desired (rerolled scraps will be tougher).
  • Bake shortbread until lightly golden and beginning to brown on edges, about 13 to 15 minutes. Cool on sheets 5 minutes, then transfer to racks to cool completely.

  • Scottish Mince Recipe with Tatties. Mince is the British name for ground meat, and it usually refers to beef. If you’ve ever been to England or Scotland, you may have seen simply “mince and potatoes” on pub menus.
  • Scottish Rumbledethumps. This fantastic, vegetarian-friendly side (though it could be a main, too) is super affordable and makes a nice change from the usual mashed potatoes.
  • Scottish Bubbles And Squeak Patties. Bubbles and squeak can be made and served as a side with roast chicken or pork, but it’s often made the day after a big dinner with leftovers.
  • Scottish Oatmeal Rolls. Oats are a huge part of Scottish cuisine, and these rolls are no exception. They’re light but have a distinct oaty texture, which I think you’ll fall in love with.
  • Haggis. We’ve all heard of haggis, but how many people know what it actually is? I have to admit, I’ve tried it, and I wasn’t 100% sure what I was eating at the time.
  • Traditional Old-Fashioned Scottish Flummery Recipe. Flummery can be traced back to royal feasts in the 15th century, so you know they must be doing something right here.
  • Traditional Scottish Shortbread. Shortbread was invented in Scotland, so if you want the best recipe, look for something with Scottish in the title, like this recipe!
  • Easy Traditional Scottish Crumpets. Scottish crumpets are a little different from English, which typically use yeast and require resting time. The batter is pretty thick, and they’re made with metal rings, so they stay perfectly round and rise like a dream.
  • Scottish Steak Pie. Spend a little time in the UK or Australia, and you’ll soon learn that their pie culture is pretty intense. And by pie, I mean meat pie.
  • Slow Cooked Scottish Beef Stew. I adore beef stew! It’s the most comforting food, and when it’s done right and the meat is super tender, I can’t stop at just one bowl.

  • All About Haggis. Haggis is not merely for Burns Night (a celebration in January commemorating the life of a Scottish poet) but is a true traditional dish of Scotland loved and eaten there as well as in many other parts of the world.
  • A Bowl of Scottish Porridge. Discover the healthy and nutritious Scottish breakfast dish of porridge, a long-standing recipe that was originally cooked in a pan and stirred with a wooden spurtle (stick).
  • Tattie Scones. Tattie scones are a traditional part of a full Scottish breakfast and are sometimes also called potato scones; you may also hear them referred to as fadge or potato bread in Ireland.
  • Cullen Skink. Cullen is a small town in Northeast Scotland and the home of one of Scotland’s most famous dishes, Cullen skink. It is a hearty soup and traditionally made with Finnan haddock (smoked haddock), potatoes, and onions.
  • Cock-a-Leekie Soup. Cock-a-Leekie soup is essentially a peasant dish and has many regional variations—some going back centuries, revealing just how important this dish is to Scottish food.
  • Scottish Stovies. Ask 100 Scots for a traditional stovies recipe and you will get 100 different answers—everyone has their own version (and of course theirs will be the best).
  • Rumbledethumps. You just have to love this silly-sounding name which in no way explains what it is, but it is still fun. A dish of Rumbledethumps is the Scottish way of using up the leftover mashed potatoes and other vegetables to create a hearty, sustaining casserole-like side dish (or you can eat this on its own).
  • Scottish Oatcakes. Oatcakes are to Scotland what a baguette is to the French. The flat cakes made mainly from oats have for centuries been considered the Scottish national bread.
  • Scottish Shortbread. Though Scottish shortbread is traditionally eaten on New Year's Eve, this shortbread recipe is too good to save for just one night!
  • Tipsy Laird. Tipsy laird is essentially the same as trifle, the pudding that has graced British tables for centuries. Also a traditional part of Burn's Night, this dessert is not only delicious but also pretty to look at.
