Scottish settlers first came to this area over 150 years ago. My mother herself was Scottish, and-as with most of my favorite recipes-she passed this shortbread recipe on to me. I make a triple batch of it each year at Christmas, to enjoy and as gifts. -Rose Mabee, Selkirk, Manitoba

Number Of Ingredients 3

2 cups butter, softened
1 cup packed brown sugar
4 to 4-1/2 cups all-purpose flour

Steps:

  • Preheat oven to 325°. Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add 3-3/4 cups flour; mix well. Turn dough onto a floured surface; knead for 5 minutes, adding enough remaining flour to form a soft dough. , Roll to 1/2-in. thickness. Cut into 3x1-in. strips. Place 1 in. apart on ungreased baking sheets. Prick with fork. Bake until cookies are lightly browned, 20-25 minutes. Cool.

Light, very buttery. Does not make a large batch, but are simple enough to make many batches. Recipe does not double well.

1 ½ cups all-purpose flour
⅓ cup white sugar
¾ cup butter

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Blend all ingredients well. Dough will be stiff.
  • Press into a 9 x 9 inch buttered dish. Prick top with a fork.
  • Bake until pale golden brown on the edges. Cool and cut into squares.

You won't get this sort of shortbread from a factory. The fine semolina gives it a lovely crunch that other shortbreads don't have and it has the most buttery flavour. Use an 8-inch fluted tart pan, with a removable base that is about 1 1/4 inches deep. Look for fine semolina in Italian or specialty food shops.

1 cup butter, at room temperature
1/3 cup superfine sugar
1 cup unbleached all-purpose flour, sifted
1/3 cup fine semolina flour

Steps:

  • Preheat oven to 300°F In the bowl of an electric mixer or by hand, beat the butter to soften it, adding the sugar gradually to incorporate the two ingredients. Now add the flour and the semolina and blend the ingredients together thoroughly, working everything together with your hands towards the end of the mixing time.
  • Transfer the dough to a lightly floured surface and roll it out with quick gently strokes of the rolling pin until it is the right size to fit in the tart pan. Transfer it to the tart pan and lightly press the dough evenly into the pan, right up the fluted edges. Prick all over with a fork to prevent buckling when it is in the oven and transfer to the centre shelf of the oven to bake for about 1 hour or until it is pale golden and firm to the touch.
  • Remove from the oven and, before it cools, use a metal spatula to mark out 12 wedges on the surface.
  • Let it cool in the pan. Cut into wedges when completely cold.

The real thing. I'm a part French, Canadian born girl. I married a Scottish guy. I made this recipe BEFORE I met him!! But if I serve it to my MIL, she just loves it! There is also a "Royal Shortbread" that I make and I will post it another time. It's the same thing with carmel sauce on top then drizzled with melted chocolate. (I think I might go make some now......) There are many ways to make these cookies. The direction I will put down will be the easiest, but you can also roll out the dough and make shapes with cookie cutters, or if you have a terra cotta shortbread pan, the dough can be pressed into that. (These might be available at any kitchen store, not sure, I got mine as a gift. Thanks MIL!!)

1 cup butter, softened
1/2 cup icing sugar
2 cups flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all ingredients together until just blended.
  • Line a 9" X 9" baking pan with foil. Spray lightly with non-stick spray.
  • Press dough into pan.
  • Poke with a fork or drag fork across the top to make a pattern.
  • Bake for 35-40 minutes. Remove BEFORE cookie gets browned. It will continue to cook a bit after removal.
  • Carefully remove from the pan by lifting the foil right out of the pan.
  • On a flat surface, cut the cookie into small bites sized pieces while it is still hot. If you wait too long, the cookie will only crumble.
