SEAMAN'S BEEF

2 pounds lean sirloin of beef cut into slices 3/8 inch thick
1/4 cup butter
5 or 6 Idaho potatoes, about 2 pounds
3/4 pound onions, peeled, cut in half and thinly sliced, about 2 1/2 cups
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons flour
1 1/2 cups fresh or canned beef broth

Steps:

  • Preheat the oven to 375 degrees.
  • Cut each slice of beef into three or four pieces.
  • Heat the butter in a large skillet and cook half of the meat over high heat until browned on one side, about a minute. Turn the pieces and brown on the second side, about 30 seconds. As the pieces are browned, remove them. Brown the second batch, combine the pieces and set aside.
  • Peel the potatoes and cut them into 1/8-inch-thick slices.
  • Arrange half the potato slices on a baking dish (an oval dish 15 by 11 by 2 inches is ideal). Cover the potato layer with the meat slices, edges slightly overlapping. Reserve the accumulated meat juices. Scatter the onions evenly over all. Sprinkle evenly with salt, pepper and flour. Pour the reserved meat juices over the onion layer.
  • Arrange the remaining potato slices neatly and symmetrically, overlapping, to cover the dish. Pour the beef broth over all.
  • Place the dish in the oven and bake about 1 1/2 hours.

I had this recipe on a cutting from a magazine so I 'm posting it here before it gets lost. It's a swedish casserole recipe. Serve with cranberry sauce.

3 tablespoons oil
3 onions, thinly sliced
750 g stewing beef (cut into strips)
1 kg waxy potato, thinly sliced
300 ml beef stock
275 ml lager beer
1 tablespoon fresh parsley, chopped

Steps:

  • Pre-heat oven to 190 degrees C and oil a 2.5 liter oven proof casserole.
  • Heat half the oil in a heavy based frying pan. Fry the onions gently until soft, remove from pan.
  • Add the remaining oil and fry the meat in batches until browned.
  • Arrange a third of the potatoes on the bottom of the pan, then top with half of the meat and onions. Season with salt and pepper as you go.
  • Top with another third of potatoes, the rest of the beef and onions and season again. Finish with the last layer of potatoes.
  • Deglaze the fring pan used with the stock and beer, so that any flavour still in the pan won't be lost.
  • Pour over casserole, cover and bakefor 1 hour. remove the lid and bake a further 30 mins until potatoes are soft and crisp on top. Place under a hot grill to crisp the top if needed. serve hot sprinkled with parsley.

Strips of round steak and chopped scallions are marinated with soy sauce and garlic, then quickly stir fried with sesame seeds. Add a little sesame oil to the marinade if you like that flavor. Serve with rice.

  • Cut steak into strips and add to bowl. Cover and refrigerate overnight, or at least 30 minutes.

2 1/2 pounds boneless beef chuck, trimmed of any large pieces of fat and cut into 1 1/2-inch cubes
6 tablespoons (3/4 stick) unsalted butter
2 1/2 pounds onions (about 5), quartered
2 1/2 pounds boiling potatoes, peeled and cubed
Salt and freshly ground black pepper to taste
3 cups beer (lager)

Steps:

  • 1. Preheat the oven to 450°F. Toss all the ingredients except the beer into a large ovenproof casserole.
  • 2. Pour the beer over the stew, cover, and cook until the meat is very tender, the potatoes are breaking apart, and the beer is absorbed, about 2 hours.

6 tablespoons canola oil, divided
1/4 cup soy sauce
1/2 teaspoon pepper
6 green onions, thinly sliced
4 garlic cloves, minced
2 tablespoons sesame seeds
1 pound beef top sirloin steak, cut into 1/8-inch strips
Rice or chow mein noodles

Steps:

  • In a large plastic resealable bag, combine the sugar, 4 tablespoons oil, soy sauce, pepper, onions, garlic and sesame seeds. Pour half into a small bowl; set aside. Add beef to remaining marinade; seal bag and toss to coat. Let stand 15 minutes. , Drain and discard marinade from beef. In large skillet or wok, heat remaining oil over high heat; add beef and reserved marinade. Stir-fry until beef is brown and has reached desired doneness. Serve immediately with rice or noodles.

This is a very easy recipe which was a stovetop originally. It called for browning meat, then the onions, etc etc, however being lazy, we decided to forgo the browning of the meat and onions etc and just toss in a crock pot and let the water do the work. We also increased the water originally called for because it makes a great broth...thus as that well known soup company states "...it's the soup (slurp)...that eats like a meal...(gulp)".

Number Of Ingredients 8

1 medium onion, sliced thin
1/4 teaspoon pepper (we used a garlic pepper mix)
6 stalks celery (cut into chunks)
1 bay leaf
2 lbs stewing beef or 2 lbs cheap beef roast (cut up into chunks)
1 tablespoon salt
6 large carrots (cut into chunks)
1 teaspoon dill weed

Steps:

  • Take stew meat which has been cut up into whatever size pieces you desire and the sliced onion, and place in bottom of large crockpot.
  • On top of that, place the rest of the ingredients.
  • We use baby carrots because we like the flavor better than regular carrots so if you use the babies, you can cut them up into whatever size you want and toss them inches Add four (4) cups water, this will provide you with an excellent broth for later.
  • Cover and cook on HIGH for about 2 hours.
  • Then reduce heat to LOW and let cook the rest of the day, about 6 or so hours, or until the meat is as tender as you like.
  • Halfway through the cooking, you will need to stir the crock and make sure all the ingredients are stirred up.
  • Serve in bowls with a crusty French Bread or rolls for sopping up the broth.
  • This is GREAT for cold weather.
  • An even easier variation is to place all the ingredients in an oven proof Dutch Oven, and place in a 250F degree oven overnight.
  • Make sure you add the 4 cups of water.
  • This requires no attendance on your part.
  • You will wake up in the morning with a terrific smelling kitchen and a great breakfast stew.
  • You can also cool it down in a Bain-Marie (cold water bath) for service later.
  • ENJOY!
