Categories     main-dish

Yield 1 serving

Number Of Ingredients 11

2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil

  • Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

SEARED AHI MARINADE

Seared Ahi Marinade image

I wanted a recipe that was similar to the ones I have had a restaurant in the past. I searched the site and found some good sauces for seared ahi- but just not what I was looking for. I found one a lot like I was looking for at Simple Recipes- I tweeked it a bit and I'm posting it here for safe keeping because it was so yummy!! Mind you- it was fresh, wild caught ahi- which can make a difference. I'll let you know how it goes with frozen fish, should I break down and try it (but with two avid ocean fisherman in the neighborhood hood, it will be a desperate move!)

Categories     Tuna

Time 1h10m

Yield 2 serving(s)

Number Of Ingredients 9

2 (6 -8 ounce) ahi tuna steaks (3/4 of an inch thick)
2 tablespoons dark sesame oil
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 garlic clove, minced
1 green onion, thinly sliced (a few slices reserved for garnish)
1/2-1 teaspoon lime juice (optional)
2 tablespoons sesame seeds, toasted
fresh cracked pepper

Steps:

  • Mix the sesame oil, soy sauce, ginger, garlic, green onion and lime juice in a non metal bowl. Add ahi and coat , cover tightly, and refrigerate for about an hour.
  • Toast the sesame seeds in a pan until light brown (I prefer a blend of white and black sesame seeds- the black ones are hard to find, try an asian market). Remove seeds and allow to cool on a flat plate (you will use this plate to dredge the tuna in)- add cracked pepper.
  • Add olive oil to a skillet and allow it to get HOT.
  • Dredge the ahi in the sesame seeds and pepper to coat and add to the hot pan.
  • Cook only two or three minutes on each side so that the ahi is seared on the outside and rare on the inside.
  • Serve with white rice and green beans that have been either roasted or cooked and drizzled with sesame oil. Sprinkle any extra sesame seeds over the top.
  • garnish with remaining green onion and ENJOY!

Provided by Alex Bluett

Categories     Salad     Seafood Salad Recipes     Tuna Salad Recipes

Time 1h35m

Yield 2

Number Of Ingredients 14

1 tablespoon minced fresh ginger
3 tablespoons lime juice
4 teaspoons fish sauce
2 teaspoons white sugar
salt and pepper to taste
¼ cup olive oil
1 clove garlic, minced
1 teaspoon grated lime zest
½ fresh red chile pepper, seeded and minced
1 bunch cilantro, stems and leaves separated
2 (8 ounce) tuna steaks
1 bunch watercress, trimmed
12 cherry tomatoes, halved
½ fresh red chile pepper, cut into matchsticks

Steps:

  • Whisk together the ginger, lime juice, fish sauce, sugar, salt and pepper in a bowl until the sugar has dissolved. Slowly whisk in olive oil until incorporated. Set aside and refrigerate half of this mixture to be used as a salad dressing later. Whisk the garlic, lime zest, minced chile pepper, and cilantro stems into the marinade. Coat the tuna steaks with the marinade, cover, and let stand for 1 hour at room temperature.
  • Preheat a large, heavy-bottomed skillet over medium-high heat. Once the skillet is very hot, remove the tuna from the marinade, and place into the skillet. Sear the tuna until golden brown on both sides, and cooked to your desired degree of doneness, about 2 minutes per side for medium, depending on thickness.
  • Place the watercress in a large bowl with the cilantro leaves, cherry tomatoes, and sliced chile pepper. Pour in the reserved dressing, and toss to mix. Serve the seared tuna on a bed of salad.

SEARED AHI WITH BROWN RICE AND PINEAPPLE-GINGER BROTH

Seared Ahi with Brown Rice and Pineapple-Ginger Broth image

At Canyon Ranch, the ahi is sometimes seared on the grill. We've opted for pan-searing, given the winter weather.

Yield Makes 4 servings

Number Of Ingredients 14

1 7- to 8-inch sheet dried kombu (kelp)*
7 cups water
1/2 cup dried bonito shavings*
2 tablespoons mirin (sweet Japanese rice wine)*
4 1/2 teaspoons tamari soy sauce*
1 1/2 teaspoons rice vinegar
1 teaspoon sugar
3/4 teaspoon salt
5 teaspoons frozen pineapple-orange juice concentrate
1 tablespoon grated peeled fresh ginger
6 teaspoons olive oil
10 green onions, trimmed, cut into 1-inch lengths
4 4-ounce ahi tuna steaks
2 cups freshly cooked brown rice

Steps:

  • Soak kombu in 1 cup water at least 2 hours or overnight. Drain. Bring kombu and 6 cups water to boil in large saucepan. Remove kombu; discard. Add bonito; boil 2 minutes. Remove from heat; let sit 5 minutes. Mix in mirin, 1 1/2 teaspoons tamari, vinegar, sugar, and salt. Strain into medium saucepan. Add juice concentrate, ginger, and 3 teaspoons tamari; bring to simmer. Set broth aside.
  • Heat 4 teaspoons oil in large nonstick skillet over medium-high heat. Add onions; sauté 2 minutes. Transfer to bowl. Heat 2 teaspoons oil in same skillet over high heat. Add tuna; sear 2 minutes per side.
  • Meanwhile, bring broth to simmer. Mound 1/2 cup rice in each of 4 shallow soup bowls. Ladle 3/4 cup broth around rice in each bowl. Top rice with ahi and onions.
  • *Available at Japanese markets and specialty foods stores, and in the Asian foods section of some supermarkets.
