Here's what you need: black beans, jarred roasted red pepper, garlic, cayenne pepper, cumin, salt, cornmeal

15 oz black beans, 1 can, drained and rinsed
½ cup jarred roasted red pepper, finely chopped
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon salt
¼ cup cornmeal

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a large bowl, microwave black beans for 1 minute, or until softened.
  • Add roasted red peppers, garlic, cayenne, cumin, and salt. Mash until black beans are finely mashed.
  • Add cornmeal and mix until thoroughly combined.
  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment paper-lined sheet pan.
  • Bake for 30 minutes, or until firm and browned, flipping over halfway through.
  • Serve burgers with your favorite fixins.

1 red pepper , cut into quarters
2 tbsp olive oil
400g lean steak mince
1 medium egg
1 carrot , coarsely grated
50g stale breadcrumbs
40g cheddar , finely sliced
6floury rolls , halved
3 tbsp mayonnaise
¼ cucumber , or 1-2 mini cucumbers, sliced

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Put the pepper on a baking tray and rub with 1/2 tbsp oil. Roast in the oven for 25-30 mins, turning once halfway through. Remove and allow to cool slightly before finely chopping.
  • Tip the mince, roasted pepper, egg, carrot and breadcrumbs into a large bowl and mix well. Using your hands, shape the mixture into six equal burgers.
  • Heat the remaining oil in a large, heavy-based, non-stick frying pan over a medium heat. Fry the burgers for 5-6 mins each side until cooked through. Top with slices of cheddar. Spread the rolls with mayo, add the burgers and top with slices of cucumber.

1/2 cup olive tapenade
2 lbs 80-20 (80% meat, 20% fat)
1/2 tbsp Creole seasonings
1-2 tbsp olive oil

Steps:

  • Heat your grill to a medium high. Get all of your ingredients out and ready to go. Slice the roasted red bell pepper into thin strips. Mix the hamburger meat with the Creole seasonings. Take a medium handful of ground beef and place it into the hamburger press (found at Sur la Table). Next, put the lid on top and press down. When you open the hamburger press, gently move the meat up all sides of the press walls. Once the top of the press has been removed, layer the interior of the burger with olive tapenade, then feta cheese and last with red pepper. Next, take another small heap of ground beef and press it into a flat patty that covers the opening of the stuffed burger. Gently tap down with the press and then remove the burger from the press all together. Seal all sides of the ground beef patty with your fingers and continue with the other three patties. Use a pastry brush and lightly spread olive oil over all four patties and season with salt and pepper. Cook on the grill for 16-18 minutes (or until cooked). If the burger is burning, place on an area of the grill that isn't so hot and keep the lid closed. When the burgers are almost finished, toast the buns on the grill. Serve the burgers with mayonnaise, lettuce and tomatoes.

4 kaiser rolls
1/4 cup roasted red pepper, drained and minced
1/4 cup roasted red peppers packed in oil, drained
1 tablespoon water
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 cup mayonnaise
1 cup arugula

Steps:

  • Cook shallot in oil with salt and pepper over moderate heat until golden, (2 to 3 minutes) then transfer to a bowl. Add turkey and minced red pepper and mix gently but thoroughly.
  • Divide turkey into 8 equal mounds. Pat 1 mound into a 4-inch patty and top with 1 ounce of cheese, then put a second mound on top, patting it onto the other patty to seal and shape into a single patty.
  • Grill burgers until no longer pink (about 10 minutes total).
  • Toast rolls.
  • To make the mayonnaise: Puree the roasted red peppers with water, vinegar and salt in a blender, then blend in the mayonnaise.
  • Cut the rolls in half horizontally (if necessary) and spread cut sides with roasted red pepper mayonnaise. Serve burgers on rolls with arugula.
