Posted in response to a request, this is a recipe from the "Farm Journal's Best Ever Recipes". I have not made this recipe myself, but most everything I have ever tried from Farm Journal has been exceptional. Prep time, obviously, is a guess.

1 tablespoon vinegar
1 cup evaporated milk (about)
1/2 cup butter or 1/2 cup margarine
1 1/2 cups brown sugar, firmly packed
2 large eggs
1 teaspoon vanilla
2 1/2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup chopped nuts
60 walnut halves or 60 pecan halves
1/2 cup butter
2 cups sifted confectioners' sugar
2 -4 tablespoons boiling water

Steps:

  • Put vinegar in a 1 cup measure; add enough evaporated milk to make one cup & set aside.
  • Beat butter with electric mixer at medium speed till light; add brown sugar and beat till light & fluffy.
  • Beat in eggs & vanilla blending thoroughly.
  • Stir together dry ingredients.
  • Stir evaporated milk and add to creamed mixture, alternating with flour mixture.
  • Stir in chopped nuts.
  • Drop rounded tablespoonfuls of dough onto a greased baking sheet, about 2 1/2-inches apart.
  • Bake at 350°F for 10-12 minutes or till lightly browned and barely firm to touch.
  • Remove from baking sheets; cool on racks.
  • When cool, spread with frosting and press a walnut or pecan half into each cookie.
  • Frosting: Melt butter in a small sacepan.
  • Cook over medium heat, stirring constantly, until butter stops bubbling and is nut-brown in color (do not scorch).
  • Add confectioners' sugar and boiling water, a little at a time, beating well after each addition.
  • Beat until smooth & of spreading consistency.

1 cup butterscotch chips
¾ cup unsalted butter
2 tablespoons boiling water
1 teaspoon baking soda
2 cups quick cooking oats
1 cup all-purpose flour
¾ cup white sugar
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan, melt butterscotch chips and butter over low heat, stirring occasionally. Remove from heat. In a medium bowl, stir together the boiling water and baking soda. Stir in the melted mixture, then stir in the flour, quick oats, sugar and salt. Mix until everything is well blended.
  • Drop dough by teaspoonfuls onto unprepared cookie sheets. Bake for 10 minutes in the preheated oven. Cookies will be very crisp. Remove to cool on wire racks.

3 cups butter, softened
1-1/2 cups packed brown sugar
6 cups all-purpose flour
Sugar
FILLING:
3 cups packed brown sugar
1 cup 2% milk
1/3 cup butter, cubed
1/4 teaspoon salt
1-1/2 cups confectioners' sugar
3 tablespoons heavy whipping cream
3 teaspoons vanilla extract
3/4 cup brickle toffee bits
1/3 cup semisweet chocolate, melted, optional

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Gradually beat in flour. Refrigerate at least 1 hour., Preheat oven to 375°. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Flatten cookies with the bottom of a glass dipped in sugar. Bake 5-7 minutes or until set. Remove from pans to wire racks to cool completely., For filling, in a large saucepan, combine brown sugar, milk, butter and salt. Bring to a boil over medium heat, stirring constantly. Cook and stir until a candy thermometer reads 234° (soft-ball stage). Remove from heat; cool to room temperature., Transfer mixture to a large bowl; beat in confectioners' sugar, cream and vanilla until mixture reaches spreading consistency. Stir in toffee bits. Carefully spread on bottoms of half of the cookies; cover with remaining cookies. If desired, drizzle with melted chocolate.

4 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup butter (no substitutions please!)
1 cup firmly packed brown sugar (can use 1/2 cup light brown sugar mixed with 1/2 dark brown sugar if desired)
1 cup granulated sugar
1 cup canola oil
1 teaspoon milk
2 teaspoons vanilla extract (can use 2 teaspoons) or 2 teaspoons maple extract (can use 2 teaspoons)
1 large egg, lightly beaten
1 (12 ounce) package butterscotch chips
1 cup walnuts (optional)
1 cup skor toffee pieces (optional)

Steps:

  • Set oven to 350°.
  • In a bowl, mix together the flour, salt, baking soda and cream of tartar.
  • In another bowl with an electric mixer, cream the butter with the both sugars until creamy.
  • Add in the 1 cup oil, egg, 1 tsp milk and the extract; beat with mixer until well mixed, and the sugars are dissolved.
  • Add in the flour mixture, mix on low speed until well combined.
  • With a wooden spoon, mix in the baking chips and the nuts (if using), and the Skor toffee bits (if using).
  • Drop about 1 tablespoon of dough onto a greased cookie sheet.
  • Bake for 7-8 minutes (for a crispy cookie bake for a longer time).
  • Let cool on sheet for 5 minutes. Transfer to a wire rack.

  • Stir occasionally and simmer until the mixture reaches 236º, about 7-8 minutes. Turn off heat and stir in vanilla and salt. Whisk in powdered sugar. Pour into prepared pan and allow to set at room temperature (a few hours, but this can be done the day ahead).
  • When ready to cut, remove from pan. Use a large kitchen knife and cut the square into quarters. From here, use small cuts to cut them into small squares.
