ORANGE SPICED TEA COOKIES

Steps:
- Combine the flour, salt, and tea. Tea from tea bags should be ground finely and won't need additional processing. Loose tea leaves may need to be ground before adding to the dry ingredients.
- In a stand mixer (or using a hand held mixer) cream the butter and sugars together until light. Add the zest and orange juice. Mix until well blended.
- Make a log shape with the dough, wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350 degrees F. Slice cookie dough in 1/4 inch slices. Place on a parchment lined cookie sheet. Bake for 10-12 minutes. Cool on a wire rack.

SCREAMING SPICE COOKIES

- For the cookies: Whisk the flour, baking soda, pumpkin pie spice, and salt together in a medium bowl.
- Beat the butter in a large bowl with a handheld mixer until fluffy. Scrape down the sides of the bowl, add the sugars, and continue beating until light, about 3 minutes. Add egg and vanilla extract, beating until smooth. Gradually add the dry ingredients while mixing slowly to make a smooth dough. Divide dough in half and press each half into a disk. Wrap in plastic wrap and refrigerate until firm, at least 1 hour.
- Transfer 1 disk of dough to a floured work surface and roll about 1/4-inch thick. Cut into cookies with a pinched tuna can (see below). Transfer cookies with an offset spatula to a nonstick or silicon lined baking sheet.
- Cut out eyes and a mouth with a pastry tip, fat straw, or a knife. Press the lollipop sticks into the narrow end of each cookie, if using. Repeat with remaining dough. Press excess dough together, roll and cut into cookies. Refrigerate cookies for at least 30 minutes.
- Evenly space the racks in the oven and preheat to 350 degrees F. Put the candies in a small plastic bag and hit with a rolling pin to break into little pieces.
- Bake the cookies just until they are set, about 20 minutes. Remove baking sheets from the oven and carefully sprinkle the broken candies into the eyes and mouth of the cookies. Continue to cook until the candy liquefies, about 3 minutes more. Cool cookies on pan for 10 minutes before removing from the pan. Cool cookies on a rack.
- For the icing: Whisk the water, egg white powder and orange extract in a medium bowl until foamy but smooth. Gradually whisk in the confectioners' sugar to make a smooth icing. Spread a layer of icing over the entire surface of the cookies with the back of a teaspoon. Let rest until the icing sets, about 30 minutes. Serve or store in a covered container for up to 3 days.
TEA COOKIES
Steps:
- Preheat oven to 350 degrees F. Cream butter and sugar. Add eggs and beat well. Add dry ingredients a little at a time. Add vanilla. Drop by teaspoons on a parchment-lined baking sheet. Bake for 15 to 20 minutes. Do not over cook. Cool on racks.
FESTIVE SPICE COOKIES
A lovely soft cookie spiced with ginger, cloves, nutmeg and cinnamon.

- Sieve the flour, spices and salt together into a bowl and set aside. Cream the butter and sugar together until fluffy, then add the honey and beaten egg. Stir to fully combine. Sift in the dry ingredients in a few batches. The mixture will be a bit stiff but still soft and not dry.
- Divide the dough into two batches and wrap the halves in cling film. Refrigerate overnight or for at least 3-4 hours.
- Preheat the oven to 170°C. Line several large baking trays with greaseproof paper, or if they are non-stick simply butter them and set aside.
- Lightly flour the work surface, then roll out one half of the dough. Stamp out festive trees using a tree-shaped cutter. Lay on the baking sheets with spaces between them, then add on the smarties or other coloured beans.
- When you have stamped out enough to fill the tray, place in the oven and bake for 8 - 10 minutes. They want to be golden in colour but still fairly soft as they harden up a little after cooking. Repeat this process until all the mixture has been used up. Remove from the oven and cool on a wire rack.

- Preheat oven to 325°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg and vanilla. Gradually add flour. Roll dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with fingers. , Bake until edges are golden brown, 17-20 minutes. Cool for 2 minutes before removing to wire racks to cool completely. TEA COOKIES I
This recipe makes 30 to 35 cookies. They are delicious, can't eat just one.

- Beat together the butter and confectioners' sugar till creamy. Add vanilla.
- Mix the dry ingredients, stir into creamy mixture. Blend well.
- Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
- Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.

These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

- Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
- Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
- Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
- Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

- Cream butter and sugar in the bowl of an electric stand mixer.
- In a large bowl, stir together the flour, baking soda and salt.
- Divide the dough into 4 equal portions.
- Add to each portion the desired quantity of spieces.
- Place one portion on a sheet of plastic wrap on a work surface.
- Using your hands and the plastic wrap, roll the dough into a log 1 inch in diameter, making sure that the plastic wrap covers the entire roll.
- Flatten the ends of the log by gently tapping them on the work surface, then fold the plastic wrap over the ends.
- Roll the log a few more times to make as smooth and even a cylinder as possible (for round cookies).
- Wrap the log in an additional sheet of plastic.
- Repeat with the remaining 3 dough portions.
- Lay the four logs in the refrigerator until they are firm, for at least 2 hours or up to overnight.
- To Bake: Position a rack in mid oven and pre-heat to 350 degrees F (180 degrees C) (heat and timing are basing it on convection oven).
- Have 2 ungreased baking sheets ready.
- Remove 2 logs from the fridge and unwrap them.
- Cut log into 1/4 inch thick slices.
- Place slices on baking sheet, spacing 1 inch apart; they spread as thy bake.
- Bake cookies about 10 minutes, until their edges are golden and tops are pale gold.
- Then transfer the cookies to wire rack(s).
- Cool completely.
