Steps:
- Place the breadcrumbs in the bowl and gently mix with milk or bone broth to saturate. Add up to 1/2 cup of milk or bone broth.
- Once the breadcrumbs are saturated, add egg, garlic, onion, salt and pepper, 1/4 cup of ketchup, parsley, and thyme to the bowl and mix well.
- Add meat to the breadcrumb mixture and mix gently with an open hand until all ingredients are incorporated. Do not over mix and do not squeeze the meat through your fingers.
- Free-form meat mixture into a loaf on a foil-lined baking sheet or use a loaf pan to shape the meat mixture. (See the recipe video.)
- Mix the remaining 1/4 cup of ketchup and the Worcestershire sauce together, and brush over the top and sides of the meatloaf.
- Place meatloaf into a preheated 350°F oven and bake until the internal temperature reaches 160°F. Approximately 1 to 1 1/2 hours.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

- In a small bowl whisk together catsup, brown sugar, mustard and all-spice. Set aside. In a large bowl mix together beef, bread crumbs, egg, lemon juice, onion, salt and pepper.
- Pack into a wet 7 1/2 x 3 1/2 x 2 1/4 inch loaf pan. Turn out on a foil lined 7 x 11 inch baking pan. Spread half the reserved ketchup mixture over the top. Bake in preheated 400 degree oven for 35 minutes. Spread remaining ketchup mixture over top. Bake 5 minutes longer. Let stand 10 minutes before serving with rice.

BETTER THAN MOM'S MEATLOAF
My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. - Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
- Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. - Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.

- Preheat the oven to 350 degrees. Place the meat in a large mixing bowl. Flatten it slightly. Beat the egg and the egg white in a small bowl. Add the garlic, bread crumbs and salt and stir to combine. Pour the egg mixture over the meat, then use your hands to knead the mixture until it is well blended. Form the meat into a loaf shape, about 8 by 4 by 2 1/2 inches.
- Heat the oil in a large heavy pot over medium heat. Add the meatloaf and brown for 3 to 4 minutes. Gently turn to brown the other side, an additional 3 to 4 minutes. Once browned, slide a spatula under the loaf to make sure it has not stuck to the bottom of the pan. If it has, loosen it and scrape up any bits of meat that are stuck.
- Pour the ketchup over the top and down the sides of the meatloaf. Pour the broth around the meatloaf and stir with a fork to combine with the ketchup. Add the pickling spices and place 1 bay leaf on each side of the loaf. Bring the broth to a boil. Cover the pot and place it in the oven. Bake until the meat loaf is firm, about one hour.
- Remove the meatloaf from the oven, remove the bay leaves and the spice bag, cool and refrigerate over night. About 40 minutes before serving, remove the meatloaf from the refrigerator, lift the layer of fat from the top of the gravy and place the pot, covered, over medium-low heat to warm, about 20 minutes. Add additional cold water if the gravy seems too skimpy. Serve in 1-inch slices with mashed potatoes.

MOM'S SECRET INGREDIENT MEATLOAF
My mother made the best meatloaf in town, but would never share her recipe saying it was just a basic meatloaf recipe with a "secret ingredient". Now all MY family and friends beg for this meatloaf, but only my daughter knows the secret ingredient -- now you will too. You will get raves on this one!

Steps:
- Mix ground chuck with breadcrumbs.
- (extra lean works well too).
- Add salt,pepper and egg.
- Mixing with you hands now, add the Heinz Chili Sauce and the milk.
- Seperate the mixture in half and form 2 loaves.
- They will both fit comfortably in a 13" by 9" pan.
- Mix the topping together and spread on the top and the sides of the loaves.
- Cook at 375 for one hour or 400 for 45 minutes.
- Check for firmness.
- Let rest for ten minutes before cutting.
- Tips---------.
- If you have stale bread you can lay 2 slices under each loaf and it will soak up the grease so your meatloaf is a bit leaner upon serving.
- Also, you can use the Chili Sauce on top of the meatloaf instead of catsup.
- This makes it spicier but my mother never did this because it would have given away her"Secret Ingredient" -- and the kids probably will like it better with catsup on top.

- 1. Preheat the oven to 425°F.
- 2. Combine all the ingredients with your scrupulously clean hands. Arrange in a standard 9 1/4 by 5 1/4 by 2 3/4-inch loaf pan lined with oiled aluminum foil and bake for 30 minutes.
- 3. Reduce the oven temperature to 350°F and continue to bake 30 minutes longer, basting with water as necessary. The meat loaf is done when an attractive brown crust has formed on top and the juices run clear.
- 4. Let the meat loaf stand for 10 minutes. Then grasp the top of the aluminum foil at both ends of the loaf and pull it out of the pan and onto a serving platter. Raise the loaf off the foil with a spatula and slip out the foil.
- 5. Serve with ketchup and/or the hot sauce or chutney of your choice. Like all meat loaves, this one is excellent eaten at room temperature.
LISH NELSON'S MEATLOAF
Steps:
- Preheat oven to 350°F.
- Finely chop onion. Cut enough bread into 1/2-inch cubes to measure 1 1/4 cups. In a large bowl lightly beat egg. Add chuck, onion, bread cubes, 1 cup tomato sauce, salt, and pepper and lightly blend with hands until just combined. In a roasting pan form mixture into a roughly 9- by 5-inch loaf and bake in middle of oven 10 minutes.
- While meatloaf is baking, in a small saucepan whisk together water, vinegar, brown sugar, mustard, and remaining cup tomato sauce and bring to a boil over moderate heat.
- After meatloaf has baked 10 minutes, spoon enough sauce over meatloaf to coat it. Continue to bake meatloaf, spooning more sauce over it after 30 minutes, 1 hour and 10 minutes more, or until a thermometer inserted in center registers 160°F. Let meatloaf stand in pan on a rack 10 minutes. Return sauce remaining in saucepan to a boil and simmer 1 minute.
- Serve meatloaf with sauce on the side.
