We've found the most simple, easy, fun, and low-cal summertime dessert! This sweet treat is traditionally high in fat, but the skinny swaps ensure a healthier take. The kabobs make for a clean, easy presentation and double as super simple portion control!

1 ½ cups white whole-wheat flour
1 tablespoon white sugar
1 teaspoon baking soda
¼ teaspoon salt
2 tablespoons cold unsalted butter
¾ cup low-fat buttermilk
2 tablespoons unsweetened applesauce
12 (6 inch) bamboo skewers
1 quart fresh strawberries, hulled and halved horizontally
¾ cup low-fat frozen whipped topping (such as Cool Whip® Lite), thawed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper or spray with cooking spray.
  • Mix flour, sugar, baking soda, and salt together in a bowl; cut in cold butter using a pastry blender or your hands until crumbly.
  • Stir buttermilk and applesauce together in a separate bowl; pour into the flour mixture until dough comes together and is sticky. Using 2 spoons, drop dough into about 1/2 tablespoon-size mounds onto the prepared baking sheet, making 36 total mounds.
  • Bake in the preheated oven until the bottoms are slightly browned, 4 to 5 minutes. Cool biscuits.
  • Thread 3 biscuits onto each skewer, alternating with 3 strawberries halves, until all the ingredients are used. Top each skewer with whipped topping.

Serve these plump, smoky berries on a rimmed platter or bowl to capture all their delicious juices. Mixed with the lemon-mint sauce, they are worthy enough to drizzle over yogurt or maybe even a grilled piece of pound cake.

24 ripe medium strawberries, hulled (about 1 1/2 pounds)
1 tablespoon vegetable oil
4 tablespoons pure maple syrup
1/4 cup loosely packed mint leaves, torn
1 teaspoon finely grated lemon zest plus 3 tablespoons lemon juice

Steps:

  • Preheat a grill or grill pan to medium-high and scrape it clean with a grill brush.
  • While the grill preheats, thread the strawberries onto the skewers, piercing each strawberry with 2 skewers and making a total of 4 kebabs with 6 strawberries on each (double-skewering the strawberries will make them easier to turn). In a cup, combine the oil and 2 tablespoons of the maple syrup. Brush the syrup mixture over the strawberries.
  • In a small bowl, combine the mint, lemon zest and juice and remaining 2 tablespoons of maple syrup.
  • Grill the strawberries until they are softened and have grill marks, 3 to 4 minutes per side. Serve the strawberries drizzled with the lemon-mint sauce.

A semi homemade dessert that will knock your guests socks off! No one will ever guess that this amazing dessert started with a can of biscuits! Pack them up for a delicious picnic dessert!

Number Of Ingredients 8

1 can of Pillsbury Grands biscuits ( 8 biscuits)
1 egg white
1 tablespoon water
white table sugar for sprinkling
20 large strawberries, 2 slices per strawberry (use the leftovers for a salad)
1 (8 ounce) tub cool whip, defrosted
20 skewers, cut to size
1½ inch biscuit cutter

Steps:

  • Preheat oven to 350°.
  • On a lightly floured surface, roll a biscuit into a 5-inch circle.
  • Cut 7 (1½ inch) circles and place on a cookie sheet sprayed with non stick cooking spray.
  • Bring leftover dough together, roll to the same thickness as the previous rounds. Cut leftover dough to make for a total of rounds to 60.
  • Whisk together the egg white and water. Brush on each biscuit and sprinkle with sugar.
  • Bake 12 to 14 minutes or until golden brown.
  • While the biscuits are baking prepare the strawberries.
  • Cut two ½ inch slices from each strawberry and use the leftovers for a salad.
  • Keep the two slices stacked on themselves so you can use the same strawberry for one skewer. This way they fit together better.
  • Once the biscuits are baked, transfer to a cooling rack and let them cool completely before constructing the skewers.
  • Then start layering; biscuit, strawberry, cool whip, do this twice ending with a third biscuit on top.

3 pints fresh strawberries
½ cup white sugar
2 ¼ cups all-purpose flour
4 teaspoons baking powder
2 tablespoons white sugar
¼ teaspoon salt
⅓ cup shortening
1 egg
⅔ cup milk
2 cups whipped heavy cream

Steps:

  • Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
  • Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
  • In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
  • Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
  • Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup plus 2 teaspoons cold butter, divided
1 large egg, room temperature
1/3 cup half-and-half cream
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar
1/8 teaspoon vanilla extract
2 cups fresh strawberries, sliced

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in 1/4 cup butter until mixture resembles coarse crumbs. In a small bowl, combine egg and half-and-half; stir into crumb mixture just until moistened. , Spread batter into a 6-in. round baking pan coated with cooking spray, slightly building up the edges.
