SESAME AND WASABI SNACK MIX
Wasabi peas, sesame sticks and crunchy noodles make this savory snack mix all the more addictive.

- Preheat the oven to 350 degrees F. Toss the rice cereal, snap peas, chow mein noodles, almonds and sesame sticks together in a large bowl. Whisk the butter, soy sauce, brown sugar, vinegar, garlic, five-spice, pepper flakes and 1/2 teaspoon salt in a separate bowl. Pour the sauce over the snack mix and toss to coat well. Spread out on a rimmed baking sheet and bake until the mix is toasted and almost completely dry, 16 to 18 minutes, tossing about halfway through.
- Remove from the oven and stir in the wasabi peas. Let cool completely, and then store in an airtight container for up to 3 days.

Steps:
- Preheat oven to 250 degrees. In a medium bowl, combine soy sauce, sugar, sake, sesame oil, and fresh and ground ginger. Add cashews and sesame seeds, and toss until well coated.
- Spread out nut mixture evenly on two baking sheets lined with Silpat baking mats. Bake, stirring every 10 minutes, until glaze turns golden brown and is almost dry, about 40 minutes. Remove from oven, and let cool about 20 minutes.
- Break nut mixture into clusters, and place in a large bowl. Using kitchen scissors, cut nori into 3/4-inch-wide strips; add to bowl along with wasabi peas.
SNOW PEAS WITH CASHEWS
One of my husband's favorite vegetables is snow peas. This is a quick and easy stir fry. It is also delicious made with peanuts.

Steps:
- In nonstick skillet, cook sesame seeds over medium-high heat, stirring, until lightly toasted, 1-2 minutes.
- Remove from skillet.
- In same skillet, melt butter over medium-high heat.
- Add ginger, garlic and pepper; cook 30 seconds.
- Add snow peas and juice; bring to a boil.
- Cook, stirring often, until snow peas are just tender, 3-4 minutes.
- Toss with cashews; sprinkle with sesame seeds.

- Make sauce:
- In a blender blend sauce ingredients with salt and pepper to taste until smooth. Sauce may be made 3 days ahead and chilled, covered. Bring sauce to room temperature and stir before using.
- Just before serving, in a 6-quart kettle bring 5 quarts salted water to a boil and cook spaghetti until al dente. In a colander drain spaghetti and rinse well under cold water. Drain spaghetti well and in a bowl toss with sauce and chopped coriander.
- Garnish sesame noodles with cashews and coriander.
