SESAME STEAK STIR-FRY

Steps:
- Whisk the brown sugar, soy sauce, cornstarch, 2 tablespoons water and 2 teaspoons sesame oil in a bowl. Add the steak and toss.
- Heat a large skillet over high heat; add 2 teaspoons sesame oil. Add the scallions, cucumber and cabbage; stir-fry until the vegetables start softening, about 2 minutes. Add the carrots and 1/4 cup water; cook, stirring, until the water evaporates and the vegetables are tender, 2 to 3 minutes. Transfer to a bowl; wipe out the skillet.
- Heat the remaining 2 teaspoons sesame oil in the skillet over medium-high heat. Add the ginger and jalapenos; stir-fry 30 seconds. Transfer the steak to the skillet using a slotted spoon; stir-fry until browned, 2 to 3 minutes.
- Add the steak marinade back to the skillet and cook, stirring, until thick, about 2 minutes. Return the vegetables to the skillet and heat through. Serve over rice.
SOY & SESAME STEAK NOODLE STIR FRY
You can use striploin steak here if you like, it's important the steak is cut into thing strips to cook it evenly and quickly. To do the carrot ribbons, I like to use a peeler to give nice long thin ribbons.

- Make sure you have a large pot of salted water at boiling point over a high heat. Have a frying pan over a high heat also.
- Add the noodles to the saucepan of boiling water for 3 to 4 minutes, then drain.
- While the noodles are cooking add 2 tablespoons of the oil to the frying pan, season the beef and sprinkle with half the sesame seeds. Add to the pan and fry for 30 seconds on each side just enough for it to turn brown and nicely char. Set aside on a plate.
- Add the remaining tablespoon of oil to the pan along with the vegetables and toss over high heat to soften them slightly. Add a splash of water along with the rice wine vinegar, soy sauce and oyster sauce let them steam for a minute then return the beef to the pan and toss along with the drained noodles. Serve with the cilantro leaves and mint over the top and remaining sesame seeds.

- In a bowl mix together, soy,rice vinegar, hoisin sauce, brown sugar, chopped ginger, 2 tsps. sesame oil cornstarch and pepper flakes, set aside.
- To 2 cups boiling water andd two beef ramen noodles, 1 seasoning packet, 4 scallions and 1 teaspoons sesame oil. Cook one minute, remove from heat; let stand covered.
- In a large skillet heat oil, add boneless sirloin and garlic and stir fry until lightly browned. Remove beef, keep warm. Add second Tbls. of oil add asparagus; stir fry until done to your taste.
- Add beef and soy mixture to skillet. Stir fry until thickened. Sprinkle with toasted sesame seed and more green onions. Toss with noodles and serve.

Very good stir-fry. A little on the sweet side. Cook in a large wok on medium-high heat. Marinating overnight is good, but not necessary.

- Whisk soy sauce, sugar, rice wine vinegar, garlic, and 1 tablespoon sesame seeds in a bowl; pour into a resealable plastic bag. Add beef, coat with marinade, squeeze out excess air, and seal bag. Marinate beef in the refrigerator overnight.
- Heat peanut oil in a wok or large skillet over medium-high heat; cook and stir beef and marinade until beef is well-browned, about 5 minutes. - In a small bowl, combine soy sauce, sherry, sugar, vinegar, red-pepper flakes, and cornstarch. In a large skillet, heat 1 tablespoon oil over medium-high. In 2 batches, cook meat, undisturbed, until browned on one side, about 2 minutes per batch. Transfer to a plate.
- Add 1 teaspoon oil and bell peppers to skillet and cook, stirring, until peppers are crisp-tender, 2 minutes. Add garlic and cook until fragrant, 30 seconds. - Place beef in a ziploc bag. Combine orange juice, soy sauce, ginger, garlic powder and cayenne pepper. Reserve half of the marinade; pour remaining marinade over steak. Marinate in refrigerator for 15 minutes.
- While meat is marinating, toast sesame seeds in a dry skillet over medium-high heat, stirring frequently, until seeds are golden-brown and fragrant. Pour seeds out of the hot pan to avoid overtoasting. Set aside.

- In between two sheets of plastic wrap, pound the meat into a thin sheet. Slice into long thin strips.
- Whisk the ginger, scallion, 1 teas rice wine, and 1 teas sesame oil in a bowl. Add the strips of steak and toss to coat. Allow to marinate for 30 minutes in the fridge, tossing again once or twice to make sure everything gets an even coat.
- Meanwhile, heat peanut oil or canola oil in a larger wok with high sides or Dutch oven. Oil is ready when small chunk of bread browns within 30 seconds. Remove the bread and working in small batches add the steak. Fry for one minute and remove with a slotted spoon to a towel lined plate. Repeat as needed to work through the batch. When all the meat has been fried, work back through another round, frying for 2 to 3 minutes longer, in batches. Return to plate with fresh towels to absorb oil.
- When done, allow the oil to cool before proceeding if using the same wok. If using the same wok, when oil has cooled and wok can be safely handled, discard all but 1 tbs oil.
