- Toast the sesame seeds in a medium pan by stirring at low heat for almost 6-8 minutes. When they are golden brown and give off their fragrance, immediately remove the pan from the heat as they can pop and jump out of the pan like popcorns. They can also easily burn with the heat of the pan. Set aside. Alternatively, you can toast them in the oven by placing them on a baking sheet at 350°F(177°C) until they are golden brown and give off their fragrance.
- Place the sugar in a big pan and let it melt at med-low heat. Don't stir but swirl the pan to avoid crystallization. When some parts of the sugar melt and become liquid and some parts don't melt, use a long heat proof spatula and put the melted sugar on top of unmelted sugar. This step helps melted sugar not to burn but unmelted sugar to melt. Swirl the pan and if there are still some unmelted pieces, start stirring, they will melt shortly.
- As the sugar melts and turns to amber color, remove the pan from the heat immediately and add the toasted sesame seeds and stir. Make sure sesame seeds are mixed with melted sugar evenly. After they all mixed, place the caramelized sesame seeds on to a parchment paper and spread it with a spatula. Be careful as the mixture is very hot. Put another parchment paper on top of the caramelized sesame seeds and level it with a rolling pin. Cut into pieces as you like with a sharp knife while it is still warm.

- Preheat oven to 350 F.
- Heat a heavy, wide-bottomed sauté pan over medium-high heat.
- Add the sesame seeds and toast lightly, about 2 minutes, stirring vigorously so they toast evenly. Keep a careful eye on the sesame seeds as they go from toasted to burnt really quickly. As soon as they start to brown, remove from heat.
- In a medium saucepan on medium heat, add maple syrup, orange zest, orange juice, and sugar and bring to a simmer.
- Lower to medium-low and continue to simmer for another five minutes, stirring regularly.
- Remove from heat and stir in sesame seeds and pistachios.
- Pour over a small baking sheet lined with parchment paper or a silicone mat. Use a spatula to distribute the candy evenly. It should be a little shy of 1/2 inch thick.
- Bake for 20 minutes. As ovens vary, be sure to check close to the end of the bake; if the sesame seeds look like they are about to burn, remove the candy from the oven early.
- Cool to room temperature. Then, snap into pieces and enjoy!

- To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
- In the same pan add the honey and bring to a boil, until it starts to foam. Remove the foam using a spatula, turn down the heat to medium and let it simmer until its temperature has reached 125C/260F. If you don't have a thermometer, take a bowl of cold water and drip in a teaspoon of the honey syrup. Let it cool down for a few seconds then shape it into a small ball using your fingers. Take it out of the water and drop it on your work surface. If it sounds like it is solid, the honey syrup is done.
- Its now time to add the remaining ingredients for your pasteli. Add a pinch of salt and the toasted sesame seeds and stir for about 10 minutes over medium heat, using a wooden spatula. The mixture should thicken considerably and stick to the spatula.
- Remove the pan from the heat, add the lemon zest and stir.
- Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
- Let the pasteli cool down for about 20 minutes and them cut into portions. If you let it cool completely then it would be harder to cut into pieces.

- Lay a silicone mat on your work surface. You will use this for rolling out the sesame candy.
- Pour the black sesame seeds into a large pan and toast them on medium-high heat for about 3 to 4 minutes, stirring frequently. Because of their black color, it may be difficult to tell when the sesame seeds are done toasting. The sesame seeds usually release a faint aroma when they are ready. You can also see wisps of smoke coming from the sides of the pan. Turn off the heat and transfer the sesame seeds to a bowl.
- Next, toast the plain sesame seeds for 3 to 4 minutes, stirring occasionally. Transfer the toasted seeds to the bowl with the black sesame seeds. Mix the two types of seeds together.
- In a large stainless steel pan, add the oil, honey, and sugar over medium heat. Stir everything together and wait for the sugar to dissolve completely. This will take several minutes, and the syrup should be runny. Make sure to stir frequently to keep the sugar from burning.
- Once the sugar dissolves, turn off the heat. Add the sesame seeds and stir to coat the seeds with the syrup.
- Working quickly, pour the sesame seeds onto the silicone mat. Try to pile all the seeds into one mass. Lay the other silicone mat over the seeds and press down gently. Use a rolling pin to roll out the sesame candy. You want to make sure to be quick here so that you can roll out the candy into a thin layer.
- Lift up the top silicone mat. Lay a chopping board over the candy. Carefully flip the candy onto the chopping board. Remove the silicone mat.
- Use a sharp knife to trim the sides of the sheet of sesame candy so that you get straight edges. Cut the candy sheet into 1-inch strips of candy. Cut each strip into candies about 1 1/2 to 2 inches long. Don't worry if your candy isn't uniform in size. Mine are never perfect.
- You can enjoy the candy immediately. The candy will continue to harden as it cools to room temperature. Once cooled, store the candy in an airtight container for several weeks.

- Coat a 9-inch-square baking pan or dish with oil or non-stick cooking spray; set aside.
- Put the sesame seeds into an ungreased 10-inch skillet (preferably one with a non-stick surface) and stir them over medium-high heat for about 5 to 10 minutes, or until they are lightly browned and aromatic.
- Temporarily transfer the seeds (they will be hot) to a bowl, making sure that none are left in the skillet; set aside.
- Put the honey, brown sugar, cinnamon, and ginger into the skillet and mix them well.
- Slowly bring the mixture to a boil over medium heat, stirring constantly.
- As soon as the entire mixture comes to a full rolling boil, cook it vigorously for exactly 2 minutes.
- Remove the skillet from the heat and immediately stir in the sesame seeds until well mixed.
- Quickly turn out the hot mixture into the prepared pan and use a metal spatula that has been dipped into cold water to press the candy into a very smooth and even layer.
- Cool the candy in the pan for l5 minutes, or until it is solid but still lukewarm.
- Run the spatula around the edge of the candy to loosen it.
- Then turn out the whole slab of candy onto a wooden board or other cutting surface.
- Use a sharp knife to cut the large square of warm candy into very small squares, diamonds, or rectangles.
- Cool the candies completely; then store them in an airtight container at room temperature.
- If a professional look is desired, roll each cooked candy in a small piece of stiff cellophane and twist the ends.

- Put bakeware liner in a large shallow baking pan (1 inch deep). Remove bottom of springform pan and set aside. Oil inside of springform ring with vegetable oil and put ring, upside down, in center of bakeware liner.

GREEK SESAME HONEY CANDY (PASTELI)

- Gather the ingredients.
- Bring the honey and lemon peel (if using) to a boil in a saucepan. Add the sesame seeds, stirring continuously. Continue to cook while stirring to mix completely and thoroughly.
- When the seeds are fully mixed in and the mixture has boiled again, remove the pan from the heat. Remove the lemon peel and discard it.
- Place a piece of baking parchment on a cool work surface and spread out the hot mixture thinly and evenly (about 1/4-inch deep).

- If you are using raw sesame seeds, heat a large skillet over medium low heat. Add sesame seeds and toast them, stirring often, for 5-7 minutes until fragrant. If you are using toasted sesame seeds, start at the next step.
- Combine toasted sesame seeds and minced ginger in a bowl, mixing well.
- Prepare a baking sheet lined with parchment paper. Have another parchment paper of a similar size ready.
- Combine coconut sugar, honey, and sea salt in a small saucepan and heat over medium heat while constantly stirring. Once it comes to a full boil, let it cook for 2 minutes while stirring, then remove from heat. Immediately pour the sesame seeds and ginger into the hot syrup and stir. - Wash sesame seeds and remove any debris that may be in the seeds and drain well.
- Heat a cast iron skillet over medium high heat until a drop of water bounces around the skillet.
- Pour seeds into skillet and stir constantly.
- Dry and parch seeds until light brown, approximately 2 minutes.
- Watch closely, do not burn seeds.
- In a heavy saucepan, combine and melt the sugar, butter, milk and vinegar.
- Using a wooden spoon, stir constantly until ingredients are dissolved.

- Preheat oven to 350°F. Spread the sesame seeds on a rimmed baking sheet, and place it in the oven. Toast the seeds until light golden, shaking them on the baking sheet occasionally, about 8 minutes. Let the seeds cool on the sheet. Put the sugar, honey, butter, and 2 teaspoons water in the saucepan, and set it over medium-low heat. Stir with a wooden spoon frequently as the butter melts and the sugar dissolves and the syrup comes to a boil. Simmer until the syrup is a deep-caramel color, about 5 minutes. Meanwhile, brush a nonporous work surface (such as granite, or stainless steel) with olive oil; coat the metal spatula with olive oil as well. When the caramel is done, turn off the heat, and stir in the sesame seeds, almonds, citrus zests, and cinnamon. Pour (and scrape) the molten candy from the pan onto the work surface, and quickly spread it into a even rectangular layer, about 1/2 inch thick. Allow it to cool and firm up for a minute or two, to firm up but not harden. With a serrated knife and a straight edge, slice the sheet of candy into 1-inch strips. Then cut diagonal slices 1-inch apart. Divide the strips into diamond-shaped pieces. With a metal spatula separate the pieces, and arrange them in a single layer, not touching, on trays lined with parchment or wax paper, and let them harden completely. Store them in an airtight container with parchment or wax paper between the layers.
