2 (10 3/4 ounce) cans cream of mushroom soup
3/4 cup water
2 cups sour cream
3 teaspoons chopped parsley
1/3 cup milk
3 cups prepared bread prepared stuffing
1 1/2 cups chopped walnuts
1 1/2 finely grated sharp cheddar cheese
3 teaspoons finely chopped onions
2 eggs, beaten

Steps:

  • Prepare sauce of mushroom soup, water, and sour cream. Set aside.
  • Combine remaining ingredients and shape into 12 patties.
  • Place in a buttered casserole dish and cover with mushroom sauce.
  • Top generously with more grated cheese and bake uncovered at 350°F for 30 minutes.
  • Enjoy!

1-1/2 cups shredded sharp cheddar cheese
1 cup finely chopped walnuts
1 cup soft bread crumbs
1/2 cup finely chopped onion
1 large egg, lightly beaten
1 tablespoon ketchup
2 teaspoons minced fresh basil or thyme
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
2 tablespoons vegetable oil
6 hamburger buns, split
Ketchup or plain yogurt, optional

Steps:

  • In a large bowl, combine the first nine ingredients; shape into six 3/4-in. thick patties. , In a large skillet, cook patties in oil over medium heat until golden brown on both sides., To bake, place patties on a greased baking sheet. Bake at 350° for 12-13 minutes on each side, turning once, or until browned. Serve on buns with ketchup or yogurt if desired.

This vegetarian entree is always on the table at our family celebrations because it is such a decadent treat. It is rare to find a vegetarian dish with this much "comfort quality".

8 ounces light cream cheese
1 large sweet onion
3/4 cup sharp cheddar cheese, grated
3 eggs
1 cup walnuts
1 cup cracker (whole grain is nice)
1 teaspoon oregano
vegetable oil
2 (8 ounce) cans low-fat cream of mushroom soup
1/2 cup low-fat sour cream
1 1/2 cups water
1/2 teaspoon garlic powder
1/4 teaspoon oregano flakes
1/4 teaspoon marjoram
1/4 teaspoon thyme
1/4 teaspoon sage

Steps:

  • Preheat oven to 375.
  • In food processor, mix walnuts, onion and crackers. Pulse until coarsely crumbed. Pour into large bowl.
  • Now in processor mix eggs and creamed cheese until smooth.
  • Mix egg mixture into walnut mixture in bowl. Add cheddar and oregano, blend well. If mixture is too loose, add more cracker crumbs.
  • Heat 2 T vegetable oil in nonstick skillet on medium. Drop mixture into patties in hot nonstick skillet. Drain on paper towels after browned and firm. (Watch closely, they can burn easily).
  • Mix sauce ingredients together with a whisk. Spray 9" X 13" casserole dish with oil spray. Layer patties in a single layer in bottom of dish. Pour 3/4 sauce over patties. Bake uncovered for 20 minutes, pour rest of sauce on, and bake 10 minutes more. Serve with green salad on the side.

1/2 cup amaranth, washed and drained
1 1/2 cups water
1/8 teaspoon salt
8 ounces tofu, mashed
2 tablespoons Braggs liquid aminos
1 tablespoon chickpea rice miso
1 tablespoon water
4 scallions, finely minced
2 garlic cloves, crushed
1/3 cup walnuts, chopped
1 teaspoon ground coriander
2/3 cup quick oats, may use more if needed
1 -2 tablespoon safflower oil

Steps:

  • Cream the chickpean rice miso in the 1 tbsp of water
  • Bring water, amaranth, and salt to boil. Cover then simmer on Med high for 20 minutes or until all water has evaporated. Transfer cooked amaranth into mixing bowl and allow to cool.
  • Combine remaining ingredients, except oil, amaranth and blend thoroughly. Mixture should hold patties together.
  • Add oil to large heated skillet.
  • Form amarnth into 8 medium-sized patties and brown on medium high for 8 to 10 minutes on each side.

1 cup chopped walnuts
3/4 cup canned garbanzo beans, drained
1/3 cup plain dried bread crumbs
1 tablespoon grill seasoning (recommended: McCormick)
1 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
1 tablespoon cider vinegar
1 tablespoons olive oil
1 large egg
4 hamburger buns
Lettuce, tomato, avocado
Honey mustard

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a food processor, combine walnuts, garbanzo beans, bread crumbs, grill seasoning, paprika, pepper flakes, oil and vinegar and pulse until coarsely ground.
  • In a small bowl whisk egg, add to food processor and pulse for 10 seconds, just enough to incorporate egg. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
  • Place burgers on oiled grill. Cook 4 minutes per side.
  • Serve hot on toasted buns with lettuce, tomato, avocado and honey mustard.
