BEST EVER ITALIAN MEATBALLS
This is a recipe I was given from a lady from Italy. She told me that the secret of mouth watering meatballs is not to cook them before adding them to the sauce, as cooking them in the sauce will not only add more flavor to the sauce, but also to the meatballs. What I do is make these a day ahead of time, with my sauce. Then, I refrigerate it over-night, which makes any fat rise to the top and harden, where it is easily removed. This process also allows all of the flavors to "marry" together, making it especially delicious!

Steps:
- Mix all ingredients together in a large bowl.
- Shape into small meatballs.
- Drop the meatballs into simmering sauce. It is important not to stir the sauce for at least 25 minutes. This will allow the meatballs to firm up enough as not to break up in the sauce. Make sure your burner is low enough so that your sauce does not scorch during this process.
- Continue simmering until sauce reaches desired consistency and meatballs are cooked through.
CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.
- Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
- Drop raw meatballs into large (I use a stock pot) pot of sauce.

- Preheat the oven to 425 degrees F. Coat 2-3 baking sheets with nonstick cooking spray; set aside.
- In a large bowl, combine with your hands the beef, pork, onion, garlic, Italian seasoning, parsley, egg, parmesan, breadcrumbs, ricotta, and salt.
- Using a small cookie scoop, form 1 1/4 inch balls out of the mixture.
- Heat olive oil over medium-high in a large skillet. Working in batches, add the meatballs and brown on all sides, about 4 minutes. (Add more olive oil if needed and turn down heat if they're starting to burn.)
- Place browned meatballs on the baking sheets and transfer to the oven to finish cooking for 10 minutes.
- Remove from oven and combine with spaghetti sauce and pasta, or let cool and freeze for another day!

- In a large skillet, heat oil over medium heat. Add onion and saute for 5 minutes. Add garlic and stir. Remove from heat.
- In a large bowl combine the egg, parmesan cheese, ground beef, tomato sauce and parsley. Add the onion garlic mixture and mix until the ingredients are blended.
- Roll the mixture into small balls, about 1 1/2" in diameter. Fry in a bit of oil or, if you prefer to bake them, place them on a baking sheet and bake in preheated 350ºF (180ºC) oven for 20 minutes or until cooked through.
- Add them to Italian tomato sauce and heat through to serve.

- Preheat oven to 350.
- Combine the ground beef, ground pork, egg, minced onion, pressed garlic, herbs, salt, and pepper in large mixing bowl. Squeeze out the slice of bread, break it up, and add it to the bowl. Mix everything very well.
- Preheat a large cooking pan that is also oven-safe over medium heat. Add a little oil for cooking meatballs.
- Grease your hands with some cooking spray. Scoop out some meat using a cookie scoop and roll meatballs. (You can make meatballs bigger or smaller according to your own preference. Just remember to adjust cooking time if making bigger or smaller meatballs.)
- Roll all the meatballs before adding them to the pan. Once all the meatballs are rolled, add them to the hot pan.
- Cover with a lid and cook for a few minutes, then flip.
- Pour marinara sauce over the meatballs and slowly stir.
- Bake meatballs for about 20 minutes.
- Add a little more minced basil over the top once the meatballs are done.
