GRILLED BUFFALO CHICKEN THIGHS WITH BLUE CHEESE SLAW
All of the buffalo wing flavor you love in an appetizer but served dinner-style. Bonus is that the chicken is grilled and not fried.

Steps:
- Combine celery, carrots, buttermilk, blue cheese, vinegar, Worcestershire, celery seed, and salt in a bowl. Set aside.
- Place chicken thighs into a bowl and coat with 3/4 cup wing sauce.
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Grill chicken on the preheated grill for 6 minutes. Flip, and grill for 6 more minutes. Brush thighs with remaining 1/4 cup wing sauce and grill until chicken is no longer pink at the bone and the juices run clear, about 2 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Transfer chicken to a plate and serve with blue cheese slaw.

Steps:
- Heat oven to 400°F. Place sheet pan in oven as it heats. Cut crusts off each slice of bread.
- Butter 1 side of each slice of bread. Place 15 slices of bread butter side down on hot sheet pan.
- In large bowl, place chicken; pour wing sauce over chicken. Stir to coat.
- Top bread with half of the Cheddar cheese slices.
- Spread chicken over cheese.
- Place remaining slices cheese over chicken.
- Top with remaining pieces of bread, butter sides up.
- Bake about 15 minutes or until bread is golden brown and cheese is melted.

- In a medium bowl stir together the shredded chicken breast and Frank’s Red Hot sauce. Spread ½ tablespoon of butter on one side of each slice of the bread, then stack buttered sides together. Layer one ounce of Monterey Jack on each bread stack, then dollop of hot sauce slathered chicken breast and then 1 ounce of blue cheese crumbles. Place bread buttered side down in a fry pan over medium heat. Cover with a lid and let cook for 3-4 minutes or until golden.
- Reduce the heat to medium-low and flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty golden and cheese has melted. The second side will cook faster than the first so watch carefully.

- In a small bowl combine softened cream cheese, crumbled blue cheese, paprika, ground black pepper and cayenne pepper then mash/stir to combine. Set aside.
- In a separate bowl, combine cooked shredded chicken, hot sauce, ranch dressing and minced garlic then stir until the chicken is well coated.
- Take your slices of bread and spread a layer of butter on one side of each slice of bread. Turn the bread over and spread the cheese mixture on four of the bread slices (one for each sandwich) then top with the chicken mixture. Try to distribute an even amount between all four sandwiches. It should be about 1/2 a cup for each one. On the other slice of bread place a slice or two of your favorite sliced cheese and close the sandwich.
- Spray a large skillet with cooking spray and cook the sandwiches on low heat for 5 minutes or until the bread is golden and crispy. Flip and repeat on the opposite side. Depending on the size of your fan you may need to grill the sandwiches in separate batches. Once finished remove from the pan and enjoy with additional buffalo sauce, ranch or blue cheese dressing.
