SHEET PAN CHICKEN AND BACON DINNER



Sheet Pan Chicken and Bacon Dinner image

This sheet pan chicken and bacon dinner is simple to make with your favorite vegetables, herbs, and spices. Bacon is the finishing touch of wow flavor!

4 boneless skinless chicken breasts or thighs if you prefer (about 1-2 pounds)
3 cups vegetables, chopped or diced (pick your favorites!)
1 TBSP seasoning (see post for my favorites!)
2 tsp fresh herbs like rosemary if available
8 slices bacon

Steps:

  • Preheat your oven to 400 degrees.
  • Place strips of bacon onto a baking rack that fits inside a sheet pan.
  • Cook bacon for 10 minutes. Remove from oven and place bacon on a plate. Cover bacon with foil and set aside for later. Remove the baking rack from the sheet pan.
  • Coat chicken and vegetables with bacon drippings from the sheet pan. Make sure the sheet pan is covered with drippings to ensure chicken doesn't stick to pan. Shake the seasoning on top of the chicken and the vegetables. Top with other fresh herbs if you have some on hand.
  • Bake chicken in the oven for 15 minutes. Turn over chicken and return to the oven to bake more. Cook for an additional 10 mins.
  • Remove the pan from the oven, and add strips of bacon to the top of the chicken. Bake for 5 minutes more, or until chicken reaches 165 degrees and the bacon is hot and crispy again.
  • Serve immediately, and enjoy!

3 skinless, boneless chicken breast halves, halved
2 (15 ounce) cans green beans, drained
6 red potatoes, cut into chunks
1 (.6 ounce) packet zesty Italian salad dressing mix
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a single layer in the center of a 9x13-inch baking dish. Pour green beans into one side of the baking dish. Spread potatoes out on the other side of the dish.
  • Sprinkle dressing mix over chicken, beans, and potatoes; drizzle butter over the top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Chicken and vegetables get a smoky makeover in this sheet pan dinner for four. These particular vegetables absorb the smoked paprika nicely and are a perfect complement to the bacon-wrapped chicken.

1 head broccoli, cut into florets
½ head cauliflower florets
½ medium head red cabbage, cut into wedges
½ cup olive oil
1 teaspoon sea salt
1 teaspoon smoked paprika
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
4 boneless, skinless chicken thighs
8 slices bacon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking sheet with aluminum foil.
  • Combine broccoli, cauliflower, and cabbage in a large bowl. Whisk olive oil, salt, and paprika together in a measuring cup and pour over vegetables. Gently stir until all of the vegetables are coated. Set aside.
  • Combine chili powder, cumin, and garlic powder on a flat plate. Roll each chicken thigh in the spice mixture so that both sides are coated. Wrap 2 pieces of bacon around each thigh and place chicken in the center of the baking sheet.
  • Stir vegetables one last time and scatter them around the chicken in an even layer.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
