HERBED LONDON BROIL

- In a shallow dish, combine onion, lemon juice, oil, garlic and seasonings; add steak and turn to coat. Cover and refrigerate several hours or overnight, turning once., Drain and discard marinade. Grill steak, covered, over medium heat 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Slice thinly across the grain.

A zesty and flavorful summertime favorite. This recipe should marinate a 1 to 1 1/2 pound cut. Triple the recipe for four pounds.

Steps:
- Score top and bottom of meat with a 1 1/2 inch square pattern, and score the side. Sprinkle meat liberally with unseasoned meat tenderizer, then pierce with fork 1/8 inch apart and at least half-way through the meat on both sides. Sprinkle lightly with water, and rub in tenderizer. Place on a plate, cover, and set aside for an hour.
- In a small bowl, mix together oil, lemon juice, seasoned salt, lemon pepper, garlic, parsley, and tarragon vinegar. Pour marinade over meat, reserving a portion to be used for brushing (Note: DO NOT mix the reserved marinade with the meat; set aside for later). Pour remaining marinade over meat, recover dish and refrigerate for three hours, turning every half hour.
- Preheat grill for hot heat.
- Lightly oil grate, and position it 2 inches above the coals. Place meat on grill, and cook for 5 minutes. Turn meat over, brush with marinade, and cook for another 5 minutes.

SHERRIED LONDON BROIL WITH HERB BUTTER
After cooking for 30+ years, I look for for recipes that offer new flavor combinations.This originated as a British sandwich recipe. For your next picnic or tailgate party, double the herb butter recipe and spread it on pumpernickel bread ( instead of the meat) and top with refrigerated steak slices.

- Combine marinade ingredients in a flat shallow dish.
- Cover and marinate in the refrigerator for 8 hours or overnight, turning the meat occasionally.
- Allow the meat to stand for one hour at room temperature.
- Broil/grill 5- 10" mins per side, depending on your preference for doneness.
- Spread the soft herb butter over the meat and slice across the grain.
LONDON BROIL WITH HERB BUTTER

- Prepare the steak: Dissolve the bouillon cube in 3/4 cup hot water in a bowl; set aside to cool. Whisk in 2 tablespoons olive oil, the soy sauce, Worcestershire sauce, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Place the steak in a large resealable plastic bag, pour in the marinade and seal, squeezing out the air. Refrigerate for at least 4 hours or up to 1 day.
- Prepare the herb butter: Mix the butter with the chives, parsley, chervil, a pinch of salt, 1/2 teaspoon pepper and the lemon juice in a bowl.
- About 30 minutes before cooking, remove the meat from the bag (discard the marinade), dry it well and bring to room temperature. Heat a large heavy skillet over high heat, about 2 minutes. Rub the steak with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon salt over the surface of the pan; add the meat and set a heavy skillet on top to weigh it down. Sear for about 7 minutes; turn the steak, replace the weight and cook until a thermometer inserted into the side reads 110 degrees for medium-rare, about 5 minutes.
- Transfer the steak to a cutting board; brush with some of the herb butter, tent with foil and let rest for about 10 minutes. Thinly slice against the grain; top with more herb butter and drizzle with the pan juices.

- Place the roast in a roasting pan, pour stewed tomatoes over it, and season with garlic salt.

- Rinse steak and pat dry.
- In small mixing bowl, combine rosemary, marjoram, and thyme.
- Crush with fingers until finely crumbled.
- Stir in salt and pepper.
- Rub both sides of steak with herb mixture, patting evenly.
- Broil 1/2 inch from heating element on high, 5 minutes for rare meat, 6 minutes for medium-rare.
- Turn and broil for 5 more minutes, 6 minutes for medium-rare.
- Remove from oven and let rest for 5 minutes.
- Slice thinly, across the grain.
