SHERRY PAN SEARED ARTICHOKES

6 large artichokes
4 tablespoons extra virgin olive oil
2 tablespoons sherry wine vinegar
1 tablespoon sherry wine
3 medium garlic cloves (peeled, cut in half)
1 teaspoon lemon zest, finely grated
1/2 tsp.. kosher salt (to taste)
1/8 teaspoon fresh ground black pepper, to taste
1 teaspoon fresh thyme, chopped

Steps:

  • Snap off the dark green outer leaves of the artichokes until only the pale tender inner leaves remain.
  • Cut off all but 1 inch of the stem. Cut off the top third of the artichoke leaves.
  • Using a paring knife, peel away the tough outer layer of the stem and remove the base of the leaves, leaving a smooth surface.
  • Cut the artichokes in half lengthwise: with a melon baller or small spoon, scoop out and discard the hairy choke and thorny inner leaves.
  • Cut each half in two wedges and toss them with 1 tbsp olive oil in a large bowl. Combine the vinegar and sherry with 1/4 cup water in a small dish. Set aside.
  • Heat the remaining 3 tbsp olive oil and garlic in a 10" saute pan over medium high heat and cook, stirring, until the garlic starts to turn golden, about 2-3 minutes. Remove garlic and discard.
  • Add artichokes to pan and arrange them with one cut side down. Cook until nicely browned , 3-5 minutes. Turn and cook the other cut side until also nicely browned, about 3 minutes more. Turn the artichokes on their curved side. Sprinkle the lemon zest on the artichokes and season with salt and pepper. Reduce heat to low, add the vinegar, sherry and water, cover, and simmer until the liquid has reduced to about 1 tbsp and the artichokes are tender when pierced with a fork, about 5 minutes.(If the artichokes are still undercooked after liquid is reduced, turn off heat and let sit, covered a few more minutes until they reach the desired doneness).
  • Remove the pan from the heat, sprinkle the thyme on the artichokes and stir well. Season to taste with more salt and pepper.
  • Serve immediately, or let rest uncovered, and serve slightly warm. Enjoy!.

1 (8-ounce) pack frozen artichoke hearts, thawed
1 cup fresh parsley leaves, packed down
1/2 cup chopped toasted walnuts
1 lemon, zested and juiced
2 cloves garlic
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
2/3 cup grated Parmesan (2 teaspoons per cube)
1 (12 to 16-inch) ciabatta loaf, cut into slices
1/4 cup extra-virgin olive oil, for drizzling

Steps:

  • In a food processor combine the artichokes, parsley, walnuts, lemon zest and juice, garlic, salt, and pepper. Run the machine to finely chop all the ingredients, stopping the machine a few times to scrape down the sides. Then, with the machine running, drizzle in 1/2 cup extra-virgin olive oil. Spoon the pesto into the cups of an ice cube tray. Tapping the tray gently on the counter to remove any air bubbles. Cover tightly with plastic wrap and place in the freezer. Freeze for 1 day or up to 1 month.
  • When ready to serve, thaw the pesto. Mix in the Parmesan. Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the ciabatta slices with the 1/4 cup extra-virgin olive oil. Grill until toasted, about 5 minutes. Spread the artichoke pesto over the toasted slices and serve.

BAKED SCALLOPS AND SEARED TOURNEDOS WITH ARTICHOKE HEARTS AND ASPARAGUS TIPS



Baked Scallops and Seared Tournedos with Artichoke Hearts and Asparagus Tips image

8 large sea scallops, trimmed of foot at base of each scallop
2 tablespoons melted butter
2 cloves garlic, minced
1 shallot, chopped
1/4 teaspoon nutmeg, freshly grated or a few pinches ground
Salt and pepper
2 tablespoons extra-virgin olive oil
1/2 cup Italian bread crumbs
A handful flat leaf parsley leaves, chopped
A drizzle olive oil
1 tablespoon butter
2 tournedos (fillet of beef steaks, each 1 to 1 1/4-inch thick)
Grill seasoning blend or coarse salt and cracked black pepper
2 slices good quality white slicing bread, toasted and buttered
1 /2 cup Madeira or Sherry
2 sprigs fresh tarragon, chopped, 1 tablespoon
1 pound thin asparagus spears, cut tender tips into 2-inch pieces
1 (15-ounce) can quartered artichoke hearts, drained
1/4 lemon, juiced
A drizzle extra-virgin oil
Salt and pepper
Buttered toast
Edible flowers, available in fresh herb section of produce department, for garnish

Steps:

  • Preheat oven to 425 degrees F.
  • Toss scallops with melted butter, garlic, shallots, nutmeg, salt, and pepper in a medium bowl. Transfer to shallow casserole dish. Combine extra-virgin olive oil and bread crumbs. Scatter bread crumbs over scallops and place in the casserole. Bake scallops 10 to 12 minutes or until bread crumbs are deep golden and scallops are opaque.
  • Heat a small skillet over medium to medium high heat. Coat pan with oil and butter and add room temperature fillet of beef steaks. Meat will sear in hot pan. Cook beef 4 minutes on each side for medium. Season meat with grill seasoning or coarse salt and pepper once meat is fully cooked so the salt will not draw out juices prematurely. Let meat rest 5 minutes for juices to redistribute. Return pan to heat and deglaze, using liquid to combine any pan drippings. Add Madeira, reduce by half, and add tarragon to the pan. Set aside.
  • Steam asparagus tips in 1/4 inch boiling water for 3 minutes and drain. Return tips to warm pan and combine with drained artichoke hearts, olive oil, lemon juice, salt and pepper. Heat mixture through and remove from stove.
  • To serve, place steaks on buttered toast and drizzle with Madeira sauce. Gently transfer 4 baked scallops to platters and finish plates with lemon dressed artichoke hearts and asparagus tips. Edible flowers make a delicate, colorful garnish.

4 halibut fillets (about 5 ounces each)

1 tablespoon olive oil
1 (14-ounce) can artichoke hearts, drained and chopped
3/4 cup reduced-sodium chicken broth
1 teaspoon saffron threads

Steps:

  • Season both sides of halibut with salt and black pepper.
  • Heat oil in a large skillet over medium-high heat. Add halibut and cook 2 minutes per side, until golden brown.
  • Remove fish from pan and set aside.
  • To the same pan, add artichoke hearts, broth and saffron. Bring to a simmer. Return fish to pan and simmer 2 minutes, until fish is fork-tender.
  • Transfer to a serving platter and is usually served with couscous.

3 tablespoons extra-virgin olive oil
1 shallot, chopped
2 (14 ounce) cans quartered artichoke hearts in water, drained
Salt and pepper
1/4 cup parsley leaves, chopped
2 tablespoons capers, drained
16 sea scallops
1/2 cup dry vermouth

Steps:

  • Heat a large nonstick skillet over medium high heat. Add 2 turns of the pan of olive oil, about 2 tablespoons and the chopped shallots to the pan. Cook shallots in oil a minute or so, add artichoke hearts and toss to heat through. Season artichokes with salt and pepper and combine with parsley and capers. Transfer artichokes to a serving dish.
  • Wipe out pan and return to the heat, raising heat a bit. Season drained and trimmed scallops with salt and pepper. Add 1 turn of olive oil to the very hot pan and immediately place the scallops in the pan. Sear the scallops in a single layer, causing them to caramelize, 2 minutes on each side. Add vermouth to the pan and cook out the alcohol, 1 to 2 minutes. Arrange the scallops in vermouth over top of the artichokes and serve.

There are many versions of this dish, with slight changes in the ingredients and/or their measurements. This version is the one that I settled on, and it has never failed to please. You can serve this over rice, pasta, etc., as it is very rich.

6 1/2 tablespoons butter, divided
4 1/2 tablespoons flour
3/4 cup milk
3/4 cup heavy cream
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1 (14 ounce) can quartered artichoke hearts or 1 (8 ounce) package thawed frozen artichoke hearts
1 1/2 lbs large shrimp, peeled and deveined
1/2 lb fresh mushrooms, sliced
1/2 cup dry sherry
1/2 cup freshly ground parmesan cheese
1 tablespoon Worcestershire sauce
paprika

Steps:

  • Preheat oven to 375 degrees. Butter an oblong baking dish and set aside.
  • Melt 4-1/2 T. butter, then blend in flour to make a roux. Slowly add milk and cream, stirring constantly until thick. Stir in sherry and Worcestershire sauce, then add salt and pepper, to taste, and set aside.
  • In remaining 2 T. butter, saute mushrooms gently for about 5 minutes, until soft. Set aside.
  • Arrange artichoke hearts in single layer in baking dish. Scatter shrimp on top of artichokes, then cover shrimp with sautéed mushrooms. Pour cream sauce over baking dish, then sprinkle with parmesan cheese and paprika.
  • Bake 20-30 minutes until bubbly and shrimp is cooked through.
