Shrimp Alexander with Beurre Blanc sauce is an extraordinary appetizer. What makes this crispy oven fried shrimp so good is the unique breading. You can make it at home with this easy Morton's Steakhouse copycat recipe.

4 ounces melted butter
1 pound jumbo shrimp ((8-12) to the pound)
1 cup plain breadcrumbs
3 teaspoons finely minced shallots
2 teaspoons finely chopped parsley
1 1/2 tablespoons finely chopped fresh garlic
salt and pepper to taste
3 tablespoons finely minced shallots
1/2 cup dry white wine (inexpensive chardonnay is fine)
8 ounces unsalted butter
1 - 2 tablespoons lemon juice
1/4 teaspoon salt

Steps:

  • Preheat oven to 500.
  • Combine breadcrumbs, shallots, parsley, and garlic. You may wish to add some salt and pepper to taste.
  • Peel, devein, and butterfly shrimp.
  • Dip shrimp in butter (butter should be warm, not hot) then in breadcrumb mixture, and
  • Place shrimp in a baking dish or oven-proof pan with sides. Pour remaining butter into the pan so the shrimp can cook in the butter.
  • Bake shrimp at 500 degrees for 5 minutes or until done and the breading is lightly browned.
  • Place wine, lemon juice, and shallots into a small pan. Heat over medium heat.
  • When the wine has reduced to only a tablespoon, reduce the heat to the lowest setting on your stove. Start to add in small nobs of butter, stirring constantly until the butter melts.
  • Stir the sauce continually, adding in more butter only after the last addition has melted and the sauce has thickened.
  • The sauce will be done when the sauce has thickened and is a pale yellow. Do not allow the sauce to get too hot or it will break.

BEURRE BLANC SAUCE:
1 tablespoon butter
2 cups butter
2 tablespoons shallots, diced
1/2 cup white wine
1 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon lemon juice
ALEXANDER BREAD CRUMBS:
2 cups bread crumbs
5 teaspoons garlic, diced
2 teaspoons shallots, minced
2 teaspoons parsley, chopped
Salt and pepper to taste
SHRIMP:
3 tablespoons butter
6 jumbo shrimp
2 cups cooked rice
1/3 cup clarified butter, as required
1/2 lemon, for garnish
1 sprig parsley, for garnish

Steps:

  • Make the Beurre Blanc Sauce: Leave the 2 cups of butter at room temperature to soften. Melt the 1 tablespoon butter in a skillet over medium heat. Saute the shallots in the melted butter until soft. Remove the shallots and set aside. Add the wine to the skillet. Bring to a boil and let simmer until the liquid is reduced by three-quarters. Add the cream and let the liquid reduce by half. Lower the heat. Using a whisk, add the 2 cups of butter, a little at a time, making sure the mixture is well blended each time before adding more butter. Season with salt, pepper and lemon juice. Add the reserved shallots. Any leftover sauce can be placed in ice cube trays and frozen. Wrap well, or vacuum seal and store in the freezer for 2 months. Make the Alexander Bread Crumbs: Mix all the bread crumb ingredients together until well blended. Set aside until ready to use. Make the shrimp: Preheat the oven to 500°F. Melt the butter in a pie tin. Dip the shrimp in the melted butter, one at a time, letting the excess butter drain. Roll each buttered shrimp in the prepared crumbs, coating on all sides. You may have more bread crumbs than you need. Store excess in the refrigerator for up to a weejk. Drain the excess butter from the pie tin. Place the breaded shrimp in the pie tin, vein side down, with the tail curled up. Drizzle clarified butter over the top. Bake the shrimp for approximately 4-5 minutes, until crisp outside and cooked through. Mold the rice in the center of a plate. Ladle 1/3 cup of the beurre blanc sauce around the rice. Arrange the shrimp around the rice, with the tail end resting against the rice. Garnish with lemon and parsley and serve.

1/4 cup dry sherry
2 garlic cloves, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
ground nutmeg (just a pinch)
salt, to taste
cayenne pepper, to taste
1 cup dry breadcrumbs

Steps:

  • Add shrimp to a large pot with enough water to cover; bring slowly to a boil; drain into a colander and when cool enough to handle, peel, devein, and set aside.
  • In a mixing bowl, mix together the butter, sherry, garlic, parsley, chives, nutmeg, salt, and cayenne pepper; stir to combine.
  • Add in the bread crumbs and toss until the mixture is well blended and the crumbs are very buttery.
  • Arrange half the shrimp in a buttered 1 1/2 quart casserole dish.
  • Spread half the crumb mixture over the shrimp.
  • Add remaining shrimp in another layer; top with remaining crumb mixture.
  • Bake, uncovered, in a 350 degree oven for about 30 minutes or until bubbly and slightly browned.

⅝ cup Thai sweet chili sauce
7 ½ dashes chile-garlic sauce (such as Sriracha®), or to taste
2 ½ pounds peeled and deveined shrimp
½ cup cornstarch, or as needed
2 cups vegetable oil for frying, or as needed
4 lettuce leaves
¼ cup chopped green onion, or to taste

Steps:

  • Stir mayonnaise and chili sauce together in a large bowl. Add chile-garlic sauce and stir.
  • Spread cornstarch into a wide dish. Press shrimp into cornstarch to coat in a thin layer.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Deep fry shrimp in batches until the meat is no longer transparent in the center, about 5 minutes per batch; drain on a paper towel-lined plate.
  • Combine mayonnaise sauce and shrimp in the large bowl; stir to coat shrimp in the sauce.
  • Line a bowl with lettuce leaves. Pile shrimp into bowl and garnish with green onion to serve.

Prepared Breadcrumbs:
4 oz. butter or margarine
2 cup plain breadcrumbs
2 tsp. finely minced shallots
2 tsp. chopped parsley
1 tbs. chopped fresh garlic
Salt and pepper
U-12 Louisiana Shrimp (large, 12 per pound)

Steps:

  • In a small saucepan, melt 4 oz. of butter. The butter should be warm, not hot. Dip cleaned shrimp in warm butter one at a time. Let excess butter drain off, then pad buttered shrimp into prepared breadcrumbs (see recipe below). Place breaded shrimp on baking sheet vein side down with the tail curled up. Place sheet in a 500-degree oven for approximately 4-5 minutes, until golden brown. Serve with white wine butter sauce or any other light cream sauce. Mince shallots, chop garlic and parsley. 1 tablespoon ground cumin
1/2 teaspoon turmeric
2 7.25-ounce jars roasted red peppers, well drained
1/3 cup chopped onion
5 teaspoons minced seeded serrano chilies
3 garlic cloves
1/4 cup honey
1/4 cup fresh lime juice
1 tablespoon grated lime peel
1/4 cup plus 3 tablespoons olive oil
48 large uncooked shrimp (about2 pounds), peeled, deveined
48 3/4-inch cubes peeled cored pineapple
48 6-inch bamboo skewers, soaked in water 30 minutes, drained
1/2 cup chopped green onions
3 tablespoons toasted sesame seeds
2 limes, cut into wedges

Steps:

  • Stir coriander, cumin and turmeric in small skillet over medium heat until lightly toasted, about 3 minutes. Transfer to processor. Add red peppers, onion, chilies and garlic. Blend to form smooth paste. Mix in honey, lime juice and peel. With machine running, gradually blend in 1/4 cup oil. Season with salt and pepper. Transfer to bowl. Cover; chill overnight.
  • Thread 1 shrimp and 1 pineapple cube onto each skewer. Brush with 3 tablespoons oil. Sprinkle with salt and pepper. (Can be made 8 hours ahead. Cover; chill.) Preheat broiler. Arrange skewers in single layer on 3 baking sheets. Working in batches, broil until shrimp are almost cooked through, turning once, about 2 minutes per side. Brush shrimp and pineapple with some red pepper sauce. Broil 1 minute longer.
  • Arrange skewers on platter. Sprinkle with green onions and sesame seeds. Serve with limes and remaining sauce.
