SOBA NOODLES, SHRIMP AND SPICY PEANUT SAUCE



Soba Noodles, Shrimp and Spicy Peanut Sauce image

Soba Noodles, Shrimp and Spicy Peanut Sauce is a quick, healthy one-dish meal. Tons of flavor from toasted sesame oil, ginger, garlic and spicy peanut sauce.

12 ounces soba/buckwheat noodles
1 tablespoon toasted sesame oil
2 tablespoons olive oil
1 pound medium-sized shrimp (thawed if frozen)
2 carrots about 6-inches each, peeled and thinly sliced
4 green scallions, sliced diagonally in 1/2-inch pieces
1 tablespoon minced ginger
2 garlic cloves, finely chopped
1 fresh red chili, finely minced
3 tablespoons low-sodium soy sauce
2 tablespoons chopped fresh Thai basil
1/4 cup fresh cilantro leaves
4 tablespoons spicy peanut sauce, store-bought or homemade
1/3 cup chopped salted peanuts
Cilantro sprigs for garnishment
Fresh lime wedges

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook 5-6 minutes or according to manufacturers' directions, until al dente. Drain, rinse under cold water then drain again. Add the noodles back into the empty pan and toss with the toasted sesame oil. Divide the noodles equally between four bowls. Reserve
  • In a large skillet set over medium heat, add the olive oil and when it has heated but not smoking hot add the shrimp and cook, stirring until they have turned pink and curled into a 'C' shape. Transfer the shrimp to a paper-towel-lined plate and reserve. Some of the shrimp will cook faster than others so remove them as they are done.
  • Add the carrots and scallions and cook while stirring for 30 to 45 seconds. Add the ginger, garlic and the minced red chile. Cook and stir just until the garlic becomes soft and fragrant. Remove the skillet from the heat and stir in the soy sauce, Thai basil and cilantro leaves.
  • Divide the vegetables equally to the top of each bowl of noodles and add the shrimp. Spoon a tablespoon of peanut sauce on each serving and garnish with peanuts and fresh cilantro sprigs. Serve with fresh lime wedges.

Traditional sesame shrimp are usually deep-fried; these are broiled with vegetables and tossed with pasta. Put the water on to boil before you prepare all the ingredients, then cook the shrimp and vegetables at the same time as the pasta.

Coarse salt and ground pepper
2 ounces thin spaghetti
2 tablespoons orange marmalade
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
1/2 teaspoon red-wine vinegar
1/4 teaspoon ground ginger
6 ounces medium shrimp
1 small yellow bell pepper, cut into 1/4-inch strips
2 scallions, thinly sliced

Steps:

  • In a medium pot of boiling salted water, cook spaghetti until al dente, according to package instructions. Drain; return to pot.
  • Meanwhile, in a medium bowl, whisk together marmalade, soy sauce, oil, vinegar, and ginger. Season with salt and pepper. Add shrimp, bell pepper, and scallions; toss to combine. Transfer to a rimmed (or toaster-oven) baking sheet, and spread in a single layer.
  • Heat broiler (or toaster oven). Broil, 4 inches from heat source, until shrimp are opaque throughout, about 3 minutes. Transfer contents of baking sheet to pot; toss with pasta to combine.

1/4 cup gluten-free tamari or soy sauce
1/4 cup rice vinegar, divided
2 tablespoons toasted sesame oil
2 garlic cloves, minced
2 tablespoons honey
1 teaspoon Sriracha
1 cup peeled, seeded, julienned cucumber
1 cup peeled, julienned carrots
1 cup julienned radishes
2 scallions, thinly sliced
1 tsp salt
1/2 lb brown-rice spaghetti
1/2 lb shrimp, peeled and deveined
1 teaspoon sesame seeds (black or regular)

Steps:

  • In a large bowl, whisk together tamari, 1 tablespoon vinegar, oil, garlic, honey and Sriracha. In a separate bowl, toss together cucumber, carrots, radishes, scallions, remaining 3 tablespoons vinegar and salt. Let stand 10 minutes, tossing occasionally.
  • Bring a large pot of salted water to a boil. Cook spaghetti as directed on package until al dente. During the last 2 minutes of cooking, add shrimp. Drain noodle mixture and rinse with cold water, shaking out any excess. Add noodle mixture and vegetables to bowl with tamari dressing and toss. Top with sesame seeds.

The Japanese spin buckwheat flour into culinary gold with their rich, flavorful soba noodles. Buckwheat flour has many health benefits, including being much richer in antioxidants than wheat pasta. If you have a choice, buy inaka or "country" soba, because it's made entirely from whole, unrefined buckwheat-which means more fiber. Traditionally, soba is served hot in a broth or cold with a sweetened soy dipping sauce called tsuyu. This simplified version is flavored with sesame, an American favorite.

5 ounces soba noodles (Japanese buckwheat noodles)
8 ounces shrimp, peeled and deveined
6 ounces fresh snow peas, strings removed
2/3 cup Rockin' Asian Stir-Fry Sauce (page 210) or store-bought low-fat, low-calorie Asian sauce
1 bunch scallions (white and green parts), sliced thin on the diagonal
2 tablespoons sesame seeds, toasted

Steps:

  • Bring a large pot of water to a boil. Add the noodles and cook according to the package directions, about 4 minutes. During the last 2 minutes of cooking, add the shrimp and snow peas to the pot and cook them with the noodles for 2 minutes; drain.
  • In a large bowl, combine the drained noodles, shrimp, and snow peas with the Asian sauce, scallions, and sesame seeds. Toss the mixture to coat the ingredients completely in the sauce, and serve immediately.
