EASY 10-MIN. CHINESE SHRIMP OMELETTE
Chinese Shrimp Omelette. A silky-smooth savoury egg omelette with bouncy chewy shrimp and scallions. This easy and quick side dish comes together in just 10 minutes or less. It's a staple in many Chinese households and tastes incredible when cooked in a smoky wok. Great as a side for dinner or lunch.

- In a mixing bowl, crack and whisk together the eggs, green onions, soy sauce and sesame oil together until smooth for about 30 seconds. Do not overmix.
- Then in a well seasoned wok or non-stick pan, bring it to medium heat. Add cooking oil. If you're cooking in a wok, allow the oil to smoke (if you're not using a wok skip this step).
- Next toss in your shrimp and fry until 50% cooked. Do not cook all the way through. Then lower the heat to LOW setting.
- Pour your egg mixture in. Use a spatula to pull the edges of the omelette inward, continually doing this until your eggs are cooked, silky and glossy. Once cooked, remove off heat and enjoy! If you like your omelette more cooked, you can brown the omelette and it'll taste really delicious as well.

- In a large nonstick skillet, saute the shrimp, red pepper, bacon, onion, lemon juice, jalapeno and seasonings in oil and 1 tablespoon butter for 2-3 minutes or until shrimp turn pink and vegetables are tender. Remove and keep warm., In the same skillet, melt remaining butter over medium-high heat; add eggs (mixture should set immediately at edges). As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. , When the eggs are set, spoon shrimp mixture on one side and sprinkle with cheese; fold other side over filling. Invert omelet onto a plate; cut in half. Sprinkle with parsley.

- Heat oil in 8 inch skillet. Fry garlic until golden and discard. Add onion and saute until transparent. Add shrimp and saute until they turn pink.
- Beat eggs with salt and pepper in a large bowl until frothy. Add shrimp mixture and stir well. Return to pan, adding more oil if necessary. Cook over medium heat until eggs are set.
- Invert plate over the pan, flip omelette onto plate, return to the pan to brown on other side. Repeat process one more time. Serve hot.
- Garnish with diced tomatoes and shredded cheese.

- In a bowl, beat the whole eggs with the help of a fork and season with salt, pepper and chopped parsley.

- In a medium nonstick saucepan over medium heat, cook and stir the onion, garlic, mushrooms and pepper until tender, about 5 minutes Mix in shrimp, and cook until opaque. Remove from heat, and set aside.

- Preheat oven to broil.
- In frying pan, heat a little oil over medium heat and add the tomato and green onion. Season with salt and pepper. Heat for around 3 minutes, until tomatoes are starting to break down. Add the shrimp and red pepper flakes. Mix well to coat in tomatoes, and cook for just a minute to warm through.
- Heat a broiler-safe frying pan over medium heat. Add a little olive oil, and when hot, pour in half the beaten eggs, seasoning them well with salt and pepper first. Cook for 1-2 minutes until the underside of the egg is beginning to set but the top remains runny.
- Sprinkle the oregano over the omelette, then pour half the tomato and shrimp mixture over the top, making sure the shrimp are in an even layer. Crumble over the feta cheese, season with salt and pepper, and add a drizzle of oil.
- Place the omelette under the hot broiler, and broil for 3-4 minutes until the egg is just cooked through. Remove, serve, and enjoy.

- Place the shiitake mushrooms in a small bowl, add 3/4 cup boiling water, and let sit 30 minutes. Strain; cut the mushrooms into 1/4-inch slices. Set aside. Pour the liquid through a coffee filter to strain; set aside. Place the eggs, egg whites, salt, and pepper in a medium bowl, and whisk to combine. Divide egg mixture evenly between 2 small bowls, and set aside.
- Place the wok over high heat. Add 1/2 teaspoon sesame oil. When hot, add the shrimp, and cook, stirring frequently, until bright pink and just cooked, 2 to 3 minutes. Remove from wok, and place in a small bowl. Add the remaining 1/2 teaspoon sesame oil to the wok. Add the onion and garlic, and cook, stirring constantly until the onion is translucent, about 3 minutes. Add the carrot and red pepper, and cook, stirring frequently, until just tender, about 4 minutes. Add the reserved soaked mushrooms, reserved shrimp, snow peas, and bean shoots, and stir to combine.
- Push the vegetables and shrimp to the sides of the wok. Add the reserved mushroom-soaking liquid, hoisin sauce, low-sodium soy sauce, cornstarch mixture, ginger, and chile to the center of the wok, and stir until combined and slightly thickened, about 2 minutes. Combine sauce with the vegetables and shrimp. Transfer vegetable-and-shrimp mixture to a bowl, and cover to keep warm.
- Wipe out the wok, and return to high heat. Add canola oil, and swirl to coat wok. Pour half the egg mixture into the wok; swirl so the egg mixture coats the wok creating an omelet of even thickness, about 10 inches in diameter. Continue to swirl as the egg cooks, about 3 minutes. Once the omelet is completely set and browned on the bottom, use a spatula to loosen it, and slide it onto a plate. Cover to keep warm. Repeat the process with the remaining egg mixture to make a second omelet. Add half the reserved vegetable-and-shrimp mixture to half of each omelet; fold the omelets to cover the vegetable-and-shrimp mixture. Cut omelets in half, and transfer them to serving plates; garnish with snow-pea shoots if desired.
