Steps:
- Peel and devein Shrimp.
- Cook Sausage in oven 250 degrees for 20 Minutes.
- Cut Sausage into 1/2 in slices.
- Saute shrimp and sausage in clarified butter.
- When allmost done add garlic.shallots,wine,tahini,seasame seeds,basil,oregano,crushed red peppers,tabasco,salt diced tomatoes and crushed tomatoes.
- Simmer for 5 minutes
- Serve over Linguine

SHRIMP PALERMO
Steps:
- Heat oil in heavy medium skillet over medium heat. Add fennel; sauté until beginning to soften and color, about 5 minutes. Add shrimp and garlic; sauté 1 minute. Cover skillet; cook until shrimp are just pink, about 2 minutes. Add vermouth, orange juice and orange peel to skillet. Increase heat to medium-high; cook uncovered until sauce is slightly reduced and shrimp are opaque in center, about 3 minutes longer. Season to taste with salt and pepper.
- Transfer shrimp to plates; top with sauce. Garnish with orange slices and sprinkle with fennel fronds, if desired.
SHRIMP PALERMO
Recipe may also be prepared in a lightly greased 11- x 7-inch baking dish. Reduce dressing to 1/4 cup and cheese to 1 1/2 cups. Bake at 425° for 5 to 8 minutes or until cheese is melted and lightly browned.

Steps:
- Combine first 3 ingredients; spoon evenly into 4 (1 1/2-cup) lightly greased individual baking dishes. Set aside.
- Peel shrimp, and devein, if desired.
- Combine baking mix and Cajun seasoning. Dredge shrimp in mixture.
- Melt 1 1/2 tablespoons butter in a large nonstick skillet over medium heat; add half of shrimp, and cook, stirring constantly, 3 to 5 minutes or just until shrimp turn pink. Repeat with remaining 1 1/2 tablespoons butter and shrimp.
- Spoon shrimp evenly over tomato mixture. Sprinkle evenly with cheese.
- Broil 5 inches from heat 3 minutes or until cheese is melted and lightly browned. Garnish, if desired.

SHRIMP PROVENCAL
For a gourmet meal this is very easy to prepare. Leftovers reheat well the next day too! Instead of using fresh shrimp like the recipe originally called (took too long the first time I did it) we now use frozen, raw, peeled and it tastes the exact same, but with 1/4 of the time! This is great over rice and served with French bread.

- Heat olive oil in a large skillet over medium-high heat. Quickly saute shrimp until they turn pink, but are not cooked through; remove from skillet and set aside. Add the bell peppers, onion, garlic, fennel seeds, and thyme; cook until the onion softens, about 8 minutes.
- Stir in white wine, tomato paste, and diced tomatoes. Bring to a boil, then reduce heat to medium-low and simmer until the flavors blend, about 10 minutes. Add the shrimp, and simmer until they are cooked and turn opaque, about 3 minutes. Stir in the basil, and season to taste with salt and pepper before serving.
