6 ounces uncooked spaghetti
2 shallots, chopped
1 tablespoon olive oil
1 pound uncooked medium shrimp, peeled and deveined
1 jar (3 ounces) capers, drained
3 tablespoons lemon juice
1/2 teaspoon garlic powder

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large nonstick skillet, saute shallots in oil until tender. Add the shrimp, capers, lemon juice and garlic powder; cook and stir for 5-6 minutes or until shrimp turn pink., Drain spaghetti; toss with shrimp mixture.

1/2 pound uncooked angel hair pasta
2 shallots, finely chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 pound uncooked large shrimp, peeled and deveined
1 teaspoon dried oregano
1/8 teaspoon salt
1 cup chicken broth
1 cup white wine or additional chicken broth
4 teaspoons cornstarch
1/3 cup lemon juice
1/4 cup capers, drained
3 tablespoons minced fresh parsley

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, saute shallots and garlic in oil for 1 minute. Add the shrimp, oregano and salt; cook and stir until shrimp turn pink. In small bowl, combine the broth, wine and cornstarch; gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat., Drain pasta. I used to eat a lemon piccata dish at my favorite Italian restaurant and one day I decided to try to whip up one on my own. It's a hit with the family! Enjoy. Garnish with lemon wedges.

1 (16 ounce) package linguine pasta
¼ cup olive oil
¼ cup butter
1 pound uncooked medium shrimp, peeled and deveined
10 baby bella mushrooms, sliced
2 cloves garlic, chopped
1 (6 ounce) jar marinated artichoke hearts, chopped, with juice
½ lemon, juiced
3 tablespoons capers with juice
1 splash dry white wine
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat olive oil and butter in a saucepan over medium heat. Add shrimp, mushrooms, and garlic; cook and stir until fragrant, 1 to 2 minutes. Add artichokes, lemon juice, capers, and white wine. The tangy lemon-caper sauce in this healthy Italian makeover recipe is a natural with shrimp. Serving it over zucchini noodles (aka zoodles) keeps the dish summery and low-cal, but it's also delicious with whole-wheat spaghetti.

5-6 medium zucchini (2 1/4-2 1/2 pounds), trimmed
½ teaspoon salt
2 tablespoons butter
2 tablespoons extra-virgin olive oil, divided
2 cloves garlic, minced
1 pound raw shrimp (21-25 count; see Tip), peeled and deveined, tails left on if desired
1 cup low-sodium chicken broth
1 tablespoon cornstarch
⅓ cup white wine
¼ cup lemon juice
3 tablespoons capers, rinsed
2 tablespoons chopped fresh parsley

Steps:

  • Using a spiral vegetable slicer or a vegetable peeler, cut zucchini lengthwise into long, thin strands or strips. Stop when you reach the seeds in the middle (seeds make the noodles fall apart). Place the zucchini "noodles" in a colander and toss with salt. Let drain for 15 to 30 minutes, then gently squeeze to remove any excess water.
  • Meanwhile, heat butter and 1 tablespoon oil in a large skillet over medium-high heat. Add garlic and cook, stirring, for 30 seconds. Add shrimp and cook, stirring, for 1 minute.
  • Whisk broth and cornstarch in a small bowl. Add to the shrimp along with wine, lemon juice and capers. Simmer, stirring occasionally, until the shrimp is just cooked through, 4 to 5 minutes. Remove from heat.

1 lb fresh shrimp
1/4 teaspoon fleur de sel
1/4 teaspoon white pepper
1 tablespoon butter
1/4 cup court bouillon or 1/4 cup oyster sauce
2 garlic cloves, minced
1/4 cup white wine
2 tablespoons lemon juice, freshly squeezed
1 teaspoon arrowroot
1 tablespoon capers
1/2 teaspoon dill

Steps:

  • Rinse the shrimp and pat dry.
  • Sprinkle with salt and pepper.
  • In a saute pan, melt the butter and lightly saute the shrimp.
  • Remove the shrimp and add the court bouillon (fish stock) wine, garlic and lemon juice to the saute pan. Allow the sauce to cook down to half the volume. Add the arrowroot and stir until the sauce thickens.
  • Toss in the shrimp and capers, stirring, until the shrimp are fully cooked but not too long or they will be tough. Add more bouillon as necessary to keep the sauce at a desirable consistency.
  • Toss in the capers, give a final stir and serve over noodles. Sprinkle the dill over each dish before serving.
