BUFFALO SHRIMP TEMPURA

After you're done devouring this light and crispy fried shrimp (with blue cheese and hot sauce dips!), bookmark this recipe permanently. You'll want to use the tempura recipe over and over again for dishes like tempura veggies too.

1/4 cup mayonnaise
2 tablespoons crumbled Maytag or other blue cheese (about 3 ounces)
2 tablespoons half-and-half
2 teaspoons sour cream
1 teaspoon lemon juice
Kosher salt
2 tablespoons unsalted butter
1/4 cup hot sauce, such as Frank's
Vegetable oil, for frying
1 pound jumbo shrimp, peeled and deveined, tail on (about 16 shrimp)
1 cup seltzer water, chilled
1 large egg yolk
1 cup cake flour
Kosher salt
Carrots and celery sticks, for serving

Steps:

  • Put a medium bowl in the freezer. Put a wire rack on top of a rimmed baking sheet and set near the stovetop where you will be frying.
  • For the blue cheese dressing: Whisk together the mayonnaise, blue cheese, half-and-half, sour cream, lemon juice and 1/4 teaspoon salt in a medium bowl until smooth. Refrigerate until ready to serve.
  • For the butter-hot sauce: Combine the butter and hot sauce in a small microwave-safe bowl and microwave until the butter melts, 1 to 2 minutes. Stir to combine and set aside.
  • Meanwhile, for the shrimp tempura: Pat the shrimp completely dry with paper towels. Cut small 1/4-inch diagonal slits on the underside of a shrimp, then flatten to make it lie straight. Thread a skewer through the length of the shrimp. Repeat with the remaining shrimp. Refrigerate to chill the shrimp for at least 10 minutes before frying.
  • Fill a large heavy-bottom pot with 2 inches of oil, attach a deep- fry thermometer and heat the oil to 375 degrees F.
  • Right before you are ready to start frying, whisk together the seltzer and egg yolk in the cold medium bowl from the freezer. Add 1/4 cup ice. Add the flour and whisk gently 9 to 10 times then put the whisk down! You want the batter to be clumpy to help add extra crispiness to your shrimp (see Cook's Note).
  • Dip batches of the shrimp into the batter while holding the end of the skewer. Coat completely, letting any excess drip back into the bowl. Slowly lower the shrimp into the hot oil using tongs. Fry until puffed and golden, 2 to 3 minutes. Remove with a slotted spoon, transfer to the rack on the baking sheet and sprinkle lightly with salt while still hot. Be sure to bring the oil back up to 375 degrees F between batches.
  • Serve with the blue cheese dressing, butter-hot sauce, carrot and celery sticks.

The key, according to Marcella Hazan, is that the dish should never see the inside of a refrigerator, which changes the texture of the seafood and the flavor of the olive oil. She calls for shrimp in this recipe, but the formula also works with squid, clams and meaty fish fillets.

3/4 cup extra-virgin olive oil, plus more as needed
1/4 cup freshly squeezed lemon juice (from 1 to 2 lemons)
2 pounds medium-large shrimp (about 26-30 per pound), peeled and deveined (tails optional)
Flaky sea salt and coarsely ground black pepper
1 large pinch freshly chopped flat-leaf parsley
Torn or sliced crusty bread, for serving

Steps:

  • Bring a pot of water to a boil, preferably not too deep, so you can watch the shrimp as they cook. Pour the olive oil and lemon juice into a baking or serving dish, preferably a white one to show off the colors of the finished dish.
  • Working in a few batches to prevent overcooking, boil the shrimp over high until just firm and opaque, 2 to 3 minutes, removing them to a colander with a slotted spoon. When all the shrimp are cooked, transfer them to the olive oil-lemon bath and gently mix to coat. Sprinkle generously with salt and pepper. The shrimp should be just covered with liquid; pour in more oil as needed. Set aside to cool to room temperature.
  • Just before serving, taste and adjust the seasonings with salt and pepper. Sprinkle with parsley and serve with bread, spooning some liquid over each serving.

½ pound fresh shrimp, peeled and deveined
2 quarts oil for deep frying
¼ cup all-purpose flour

1 teaspoon shortening
½ teaspoon baking powder

Steps:

  • In a medium bowl, mix rice wine and salt. Place shrimp into the mixture. Cover and marinate in the refrigerator at least 20 minutes.

⅓ cup apricot nectar
2 teaspoons cornstarch

3/4 cup (or more) ice water
1 large egg
Pinch of salt
3/4 cup unbleached all purpose flour
24 uncooked large shrimp (about 1 pound), peeled, deveined, butterflied
Lemon and Olive Mayonnaise

Steps:

  • Pour enough oil into heavy large pot to reach depth of 3 inches. Heat oil over medium-high heat to 380°F. Whisk 3/4 cup ice water, egg and pinch of salt in medium bowl until frothy. Add flour and stir with whisk just until blended and small lumps remain.
  • Working in batches, immediately dip shrimp into tempura batter to coat; shake excess batter back into bowl. Add shrimp to hot oil and fry until shrimp curl and coating is crisp, about 3 minutes. Using tongs, transfer shrimp to paper towels; drain. Sprinkle with salt.
  • Transfer shrimp tempura to platter; serve shrimp immediately with Lemon and Olive Mayonnaise.

1 egg yolk, beaten
1 1/2 cups ice water or 1 1/2 cups very cold club soda
1 cup all-purpose flour or 1 cup rice flour
1 1/2 lbs large shrimp, peeled

Steps:

  • Heat 3-4 inches of oil in a deep, heavy pot over high heat to a temperature of 375 degrees F. (be sure to use a deep, heavy pot so there is plenty of room for the oil to bubble up - the pot should be no more than half full.).
  • Combine the egg yolk, water and flour in a mixing bowl, stirring just to combine - a few lumps are okay.
  • Butterfly the shrimp by cutting them almost all the way though along their backs.
  • Dredge the shrimp one at a time lightly in additional flour, dip in the batter, and drop carefully into the hot oil.
  • Don't add more than 5 or 6 at a time, and be careful to keep the temperature as close to 375 degrees as possible.
  • Cook until golden brown on all sides, turning in necessary, and transfer to a wire rack or paper towels to drain. Serve immediately.
