EASY STUFFED SHRIMP
This easy-to-make shrimp dish is topped with a cheesy, garlicky crumb mixture and baked until delicious.

Steps:
- Heat oven to 400°F.
- Toss shrimp with 2 Tbsp. dressing in medium bowl. Refrigerate 10 min. Meanwhile, mix remaining dressing with remaining ingredients.
- Remove shrimp from dressing; discard dressing. Partially split each shrimp lengthwise by making long cut along underside of shrimp, being careful to not cut all the way through shrimp. Open shrimp slightly; place, cut sides up, in shallow baking dish. Top with crumb mixture.
- Bake 7 to 8 min. or until shrimp turn pink.

The name is courtesy of my husband, the idea is a personal variation on one of my mom's throw together dishes. It's a relatively simple two dish preparation that becomes a one dish serve, great for simple family meals.

Steps:
- Start by starting the rice to cook, so that it will be ready before everything else.
- Melt butter in large deep pan like a wok, over medium high heat. Add zucchini and mushrooms and sauté to desired tenderness.
- Add shrimp, salt and garlic powder and stir fry until shrimp is cooked. Be careful not to overcook, especially if using pre-cooked shrimp.
- Add cream cheese and stir into mixture until completely melted.
- Reduce heat and add cooked rice, stirring until everything is well mixed. Serve warm.

- Slice shrimp down the back as deep as you can without cutting through, to make a nice opening for stuffing. Set aside.
- In a medium bowl, mix together the crabmeat, chili sauce, horseradish, hot pepper sauce and capers. Mix in enough of the cream cheese to form a sticky paste.
- Stuff the openings of each shrimp with about 1 tablespoon of the crab salad. Sprinkle paprika over the top. Chill for about 30 minutes before serving.
