4 to 5 tablespoons olive oil
4 garlic cloves, finely minced
1 teaspoons red pepper flakes
1 teaspoons sweet paprika
1 pound medium shrimp, peeled and deveined
1 to 2 tablespoons fresh lemon juice
1 to 2 tablespoons dry white wine
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped
Lemon pepper pasta for serving, optional (I got the pasta from Trader Joe's)

Steps:

  • In a sauté pan over medium heat, warm the olive oil. Add the garlic, red pepper flakes and paprika and sauté for 1 minute until fragrant. Increase the heat to high, add the shrimp, lemon juice and dry white wine, stir well, and sauté until the shrimp turn pink and are opaque throughout, about 3-5 minutes. Season with salt and black pepper, sprinkle with the parsley and serve. Serve over pasta if desired.

This comes from the Williams-Sonoma Bride & Groom cookbook. The recipe didn't state regular or unsalted butter, so I used regular and found it too salty, but my husband loved it. So, if you love salty dishes, I suggest regular butter, but if you prefer less salt in your dishes, use unsalted butter. Butter can be prepared in advance, it can be kept in the refrigerator for up to 3 days and in the freezer for 1 month. Also, recipe calls for raw shrimp, but I used flash-frozen, pre-cooked & de-shelled shrimp and had no problems. I hope you enjoy.

2 lbs unpeeled jumbo shrimp (or prawns, about 28)
1 cup butter, slightly softened
1 bunch parsley, remove stems, and mince leaves
5 -6 medium garlic cloves, minced
1 tablespoon lemon zest, grated (or minced)
2 teaspoons fine sea salt
1 teaspoon pepper

Steps:

  • 1. Prepare parsley-garlic butter: mash together with a wooden spoon or potato masher, the butter, parsley leaves, garlic, lemon zest, salt, & pepper.
  • 2. Preheat the broiler (grill). Remove legs from shrimp. With a sharp paring knife, make an incision 1/4 inch (6 mm) deep all the way along the curved back of each shrimp up the tail. Don't cut all the way through the shrimp; cut just enough to open it or butterfly it. Lift any dark vein with the tip of the knife and pull out, and press down on the opened shrimp to flatten it without seperating the halves. Rinse the shrimp under cold water and pat dry.
  • 3. Arrange the butterflied shrimp in a single layer on a baking sheet or in a roasting pan (you may need to do this in batches).
  • 4. Place 1-2 tsp of the parsley-garlic butter (depending on the size of the shrimp) in the center of each shrimp. Slide the pan under the broiler and broil (grill) until the shrimp turn pink and are just cooked through, 4-5 minutes.
  • 5. Transfer the shrimp to a serving platter or individual plates, pour any drippings from the pan over the shrimp, and serve with plenty of napkins and a plate for the shells.

6 tablespoons unsalted butter, at room temperature
1 teaspoon finely chopped garlic
1 tablespoon chopped shallots
1 tablespoon chopped fresh Italian parsley
1/2 lemon, juiced
Fine sea salt, to taste
24 uncooked large shrimp, shell and tail on
1/2 cup Fish Fumet, recipe follows, or water
2 pounds heads and bones from black bass, red snapper or halibut
Cold water
2 tablespoons corn oil
1 medium onion, peeled and very thinly sliced
1/4 small fennel bulb, very thinly sliced
1 leek, very thinly sliced
15 white peppercorns
1/4 teaspoon fine sea salt
1 sprig fresh Italian parsley
1 bay leaf
1 cup dry white wine
3 cups water

Steps:

  • Preheat the broiler. Place the butter in a small bowl and stir in the garlic, shallots, parsley, lemon juice and salt. Cut the shrimp in half lengthwise, leaving them attached at the tail. Spread the shrimp open and arrange them in a shallow, oval flameproof casserole. Top the shrimp with generous dabs of the butter mixture and pour fumet or water into the dish. Broil the shrimp until they are cooked through, about 4 minutes. Arrange the shrimp in a line across 4 plates, so that the tail of each shrimp fits inside the shrimp in front of it. Whisk the liquid in the casserole dish and pour it over the shrimp. Serve immediately.
  • Remove the gills and eyes from the fish or have your fish store do it. Cut the heads and bones across into 4-inch pieces. Put them in a shallow pan and cover with cold water. Let stand for 1 hour, changing the water twice. Drain. Heat the oil in a large pot over medium heat. Add the onion, fennel, leek, peppercorns, salt, parsley and bay leaf. Turn the heat to medium-low and cook until the vegetables are softened but not browned, about 4 minutes. Add the fish bones and cook, stirring from time to time, until the bones and any flesh around the bones turn from translucent to white, about 12 minutes. Add the wine and water and bring to a boil. Boil for 10 minutes, skimming off the foam as it rises to the top. Remove from the heat and let rest for 10 minutes. Strain the fumet through a fine-mesh sieve, pressing firmly on the solids to extract as much of the flavorful liquid as possible. If you have more than 3 cups of fumet, place the liquid in a clean saucepan and boil until reduced to 3 cups. Store, tightly covered, in the refrigerator for up to 3 days or in the freezer for up to 2 months.

1 small bunch fresh Italian parsley, stemmed and roughly chopped
2 tablespoons olive oil
1 pound fresh medium shrimp - shells on, rinsed, and patted dry
bamboo skewers
1 tablespoon seasoned salt (such as Lawry's®), or to taste
½ cup salted butter
3 cloves garlic, minced

Steps:

  • Place parsley and olive oil into a resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours. Soak skewers in water during the last 30 minutes or so.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove shrimp from the marinade and thread onto skewers. Season generously with seasoned salt. Place parsley and remaining marinade in a grill-safe pan with butter and garlic.
  • Grill skewers until shrimp are pink and firm, about 3 minutes per side. In the meantime, place the grill pan on the grate; melt and simmer the butter-parsley mixture until butter is just golden-brown, 4 to 5 minutes.
  • Remove shrimp from skewers and drop into the butter-parsley mixture. Toss to coat. Serve immediately.

This is something I threw together one day for lunch and it turned out wonderful. I used what I had on hand but I can imagine adding fresh diced tomatoes or even some veggies to this and it still being great. This is defiantly NOT diet food but hey, we all need to splurge once in awhile! Serving and prep time are estimates because I had a large appetite that day and I was in a hurry so I did not pay attention to how long it took to prepare.

1/2 cup butter
6 -7 cloves garlic, minced
1/4 cup onion, minced (I used white)
4 -5 fresh mushrooms, sliced
6 ounces pasta (cooked and drained)
salt, to taste
pepper, to taste
tony creole seasoning, to taste
parmesan cheese

Steps:

  • In a skillet, melt butter.
  • To melted butter add garlic and onion, heat on med heat for about 5 minutes or until the onion is translucent.
  • Add mushrooms to this, heat about 3 more minutes.
  • Add shrimp and saute until shrimp are pink.
  • Season with the salt, pepper and Tony's to taste.
  • Pour over pasta and top with parmesan cheese.
