KITTENCAL'S GREEK SPINACH AND FETA PUFF PASTRY TRIANGLES



Kittencal's Greek Spinach and Feta Puff Pastry Triangles image

I have been making these for years for my get togethers and I sometimes make these using phyllo dough but puff pastry is really just as good and more convenient --- I sometimes add in roasted garlic into the spinach mixture and also a pinch of cayenne pepper for a bit of heat --- these are so good and make wonderful appetizers!

2 frozen puff pastry sheets (from a 17-ounce package)
3 eggs, slightly beaten
1 tablespoon water
3/4-1 cup crumbled feta cheese
1 (10 ounce) package chopped spinach, thawed and well drained (squeeze out any excess moisture with hands)
1 small onion, finely chopped
3 tablespoons chopped fresh parsley
1/2 teaspoon ground black pepper (or to taste)
1 pinch cayenne pepper (optional and to taste)

Steps:

  • Thaw the puff pastry at room temperature for 40 minutes.
  • Set oven to 400 degrees F.
  • Lightly grease a baking sheet.
  • In a small cup or bowl whisk together 1 egg with water; set aside.
  • In another bowl mix together 2 eggs, feta cheese, spinach, onion, parsley and black pepper.
  • Unfold the pastry sheets on a lightly floured surface.
  • Roll each sheet into a 12-inch square.
  • Cut each into 16 (3-inch) squares (I use a pizza cutter for this!).
  • Place about 1 tablespoon spinach/cheese mixture in the middle of each square.
  • Brush the edges with egg mixture.
  • Fold squares over the filling to form triangles.
  • Crimp edges to seal.
  • Place on a baking sheet, and brush tops with remaining egg mixture.
  • Bake for about 20 minutes or until golden.
  • Best served warm or at room temperature.

1 kg (2 lb 4 oz) English spinach
60 ml (2 fl oz/¼ cup) olive oil
1 onion, chopped
10 spring onions (scallions), sliced
4 tablespoons chopped parsley
1 tablespoon chopped dill
a large pinch of ground nutmeg
35 g (1¼ oz/ 1/3 cup) grated parmesan cheese
150 g (5½ oz/1 cup) crumbled feta cheese
90 g (3¼ oz/ 1/3 cup) ricotta cheese
4 eggs, lightly beaten
40 g (1¼ oz) butter, melted and mixed with 1 tablespoon olive oil
12 sheets of filo pastry

Steps:

  • 1. Trim any coarse stems from the spinach. Wash the leaves, roughly chop and place in a large saucepan with just a little water clinging to the leaves. Cover and cook over low heat for 5 minutes, or until wilted. Drain well, cool slightly, then squeeze tightly to remove the excess water. 2. Heat the olive oil in a heavy-based frying pan. Sauté the onion over low heat for 10 minutes, or until soft and golden. Add the spring onion and cook for 3 minutes, then remove from the heat. Stir in the spinach, parsley, dill, nutmeg, parmesan, feta, ricotta and egg. Season well. 3. Preheat the oven to 180°C (350°F/Gas 4). Grease two baking trays. Lay three sheets of pastry on a work surface and cover the rest with a damp cloth. Brush each sheet with the melted butter, lay them on top of each other, then cut in half lengthways. Spoon 4 tablespoons of the filling on an angle at the end of each strip. Fold the pastry over to enclose the filling and form a triangle. Continue folding the triangle over until you reach the end. Repeat to make eight triangles. 4. Place on the baking trays and brush with more butter mixture. Bake for 20 minutes, or until golden brown. Serve hot.

1 small bunch silver beet
200 g Greek feta cheese
2 slices frozen puff pastry sheets
1 egg
1/2 lemon, juice of
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons butter
1 tablespoon olive oil

Steps:

  • Clean and roughly chop silverbeet.
  • Melt butter with olive oil in large saucepan.
  • Saute silverbeet until it reduces in size and goes limp.
  • Add salt, pepper and lemon juice.
  • Remove from heat and allow to cool.
  • Preheat oven to 220 degrees C.
  • Combine with crumbled feta cheese.
  • Divide mixture into each puff pastry slice.
  • Turn puff pastry corner to corner to make a triangle and press ends together.
  • Brush with beaten egg.
  • Bake in oven for 20 minutes.

  • Preheat oven to 180°C. Heat a large frypan over medium heat. Add the olive oil, silverbeet and nutmeg, season to taste with salt and pepper and cook for 2-3 minutes or until wilted. Remove from the heat and strain through a sieve or colander to drain away any excess moisture.
  • Place the onion, feta and pine nuts in a large bowl and mix well. Add the wilted silverbeet and mix well. Add the beaten egg and stir to combine.
  • Cook the potato pieces in boiling salted water, until tender, about 15 minutes. Drain and mash the potato to make a smooth puree. Add milk or nut milk and mix until well combined. Blanch the broad beans in boiling water, then remove the husks from each broad bean, leaving the inner green bean. Fold the broad beans into the mashed potato.
  • Grease a round pie or flan dish (about 25cm circumference) with the melted margarine. Layer 2 sheets of filo in the dish and brush with melted margarine or spray oil. Lay on another 2 sheets of filo pastry at an angle to the first layer brush again with the margarine or oil. Repeat this process so you have 4 double layers.
