TZIMMES - A SWEET & SAVORY JEWISH STEW

Tzimmes - a Sweet & Savory Jewish Stew image

This sweet stew is a traditional Ashkenazi Jewish dish for Rosh Hashanah (Jewish New Year). It's a great showcase for fall vegetables and is straightforward enough for even an inexperienced cook to make. Serve in bowls as a stew, or plate it with brisket, roast chicken or roast beef as a side dish.

SIMIT BREAD

Simit bread image

Simit breads are sesame bread rings, which look similar to bagels. They are sold on every street corner in Turkey and are popular for breakfast or as a snack

Provided by Cassie Best

Time 45m

Number Of Ingredients 6

250g strong white bread flour
1 tsp salt
1 tsp caster sugar
1 tsp (5g) fast-action dried yeast
100g sesame seeds
1 tbsp pomegranate molasses or molasses syrup

Steps:

  • Tip the flour, salt and sugar into a bowl and mix together. Add the yeast and 150ml warm water, mix, then knead for a few mins to bring everything together into a soft dough. Tip onto your work surface and continue kneading for 10-12 mins until the dough feels stretchy. Return to a clean bowl, cover and leave to rise for an hour or two until doubled in size.
  • Meanwhile, toast the sesame seeds in a dry frying pan until golden. Set aside in the pan. Mix the molasses syrup or pomegranate molasses with 50ml water in a wide shallow bowl.
  • Divide the dough into four equal pieces. Roll each into a sausage about 45cm long. Flip the rope of dough back on itself then twist the two strands and loop into a ring, squeezing the ends together to secure. Once shaped, dip each piece into the molasses water, turning to coat, then into the sesame seeds, making sure each one is well covered. Transfer to a baking tray, cover and leave to prove for another 45 mins-1 hr. Heat oven to 200C/180C fan/gas 6.
  • When the breads have puffed up, uncover them and bake for 15-18 mins until golden. Cool, then wrap in a tea towel to keep them fresh. Can be made up to a day ahead and warmed gently before serving.

SIMITS

Simits image

This bread comes from my Turkish heritage and they are commonly eaten for breakfast. You'll find them sold from street carts where the rings are hung on racks for display. They are not boiled like regular bagels, but dipped in molasses and sesame seeds which gives a chewy texture similar to the bagel we know and love. - Trisha Kruse, Eagle, Idaho

Provided by Taste of Home

Categories     Breakfast

Time 55m

Yield 8 servings.

Number Of Ingredients 10

3-3/4 to 4-1/4 cups all-purpose flour
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
3/4 cup 2% milk
1/4 cup unsalted butter, cubed
1/4 cup olive oil
1 large egg, room temperature
3 tablespoons warm water (110° to 115°)
3 tablespoons molasses
1/2 cup sesame seeds, toasted

Steps:

  • In a large bowl, mix 2 cups of flour, yeast, and salt. In a small saucepan, heat milk, butter and oil to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Preheat oven to 350°. Punch down dough. Divide and shape into 8 balls. Push thumb through center of each, stretching and shaping to form an even ring with a 2-in. hole. Place on a floured surface. Cover with a kitchen towel; let rest 15 minutes., In a shallow bowl, whisk warm water and molasses. Place sesame seeds in a separate shallow bowl. Dip bagels in molasses mixture, then roll in seeds to coat., Place 2 in. apart on parchment-lined baking sheets. Bake until golden brown, 20-25 minutes. Remove from pans to wire racks to cool.

  • Activate the yeast: Place water, milk, sugar, and active dry yeast into a measuring cup. Give it a quick whisk, cover it with stretch film, and let it sit on the counter for 10 to 15 minutes or until bubbles form on top.
  • Make the dough: Place 5 cups (700 grams) of all-purpose flour, kosher salt, oil, egg, and now-risen yeast-milk mixture in a large mixing bowl. Start mixing by hand until it comes together. Lightly dust the counter with flour and transfer the dough onto the surface. Knead by hand to form a smooth and elastic dough until the dough is not sticking to your fingers. This may take around 15 -17 minutes.
  • Let the simit dough rise: Lightly wet a kitchen towel with hot tap water and place it over the dough. Let it sit on the kitchen counter until it doubles in size, 30-45 minutes.
  • Toast sesame seeds: While the dough is rising, place sesame seeds in a large non-stick skillet over medium heat, stirring constantly, and toast until they turn golden brown, 20-25 minutes. Transfer into a large shallow plate to cool.

  • Into a bowl add in the water which is around 90F or lukewarm and then add in the sugar, salt and yeast.Stir and dissolve all the ingredients.Add the flour and combine them all together. This Simit Bread dough is not a very sticky dough; It is more of a dry dough than many bread recipes. We need to get a tight dough just like how we made our panini bread dough.Knead the dough for six minutes or until we get a soft dough. The surface may not look smooth..don’t worry that’s the way it should be.
  • Divide the dough into four equal parts and then roll in to cylindrical shape of approximately 12 cm in length.
  • After 10 minutes,Divide each of the portion into 2 equal parts. Then Roll and elongate each one into a dough strand of 30-32 cm in length.Take two dough strands and place them alongside one another.Roll the ends in opposite directions, causing both strands to braid and intertwine. Squeeze the two ends together to form a ring. Repeat with the remaining dough strips.
