This recipe comes from a cutting from a Sainsbury's magazine article on Moroccan cuisine, that I've been saving since July 2001. I love rosewater, I love ice cream, but I'm afraid that so far this remains un-tested. But it does sound lovely and I know I'll make it one day! This recipe is suitable for ice-cream machines, but you don't need one. Cooking time is freezing time, but an ice-cream machine will be quicker. Posted for Zaar World Tour 2005.

3 tablespoons rose water
275 ml whole milk
4 large egg yolks
110 g superfine sugar
284 ml heavy cream

Steps:

  • Heat the milk slowly in a pan to boiling point.
  • Meanwhile in a bowl, beat the egg yolks and sugar together until smooth and foamy; pour the heated milk over the egg mixture, beating all the time.
  • Return the mixture to the pan and cook over a low heat, stirring constantly with a wooden spoon, until it thickens slightly to form a coating over the back of the spoon (do not let it boil).
  • Pour into a bowl, cool then refrigerate until chilled, stir in the cream and rosewater then either churn in an ice-cream maker or pour into a shallow plastic box and place in the freezer until completely frozen (after 2 hours of freezing, you may wish to remove the ice cream from the freezer and whisk it to remove any ice crystals that form at the edges - repeat this twice more during the freezing process).
  • 30 minutes before serving, place the ice cream in the fridge to soften.

Here's what you need: water, oil, salt, flour, oil, sugar, cinnamon, vanilla ice cream

3 cups water
⅓ cup oil
½ tablespoon salt
2 cups flour
oil, for frying
1 cup sugar
¼ cup cinnamon
2 pt vanilla ice cream

Steps:

  • In a large pot, bring the water, oil, and salt to a boil.
  • Add the flour and turn the heat off. Quickly stir the flour until it forms a smooth paste/ball.
  • Transfer the dough into a piping bag lined with a star tip.
  • Pipe 6-inch (15 cm) spirals onto a sheet lined with parchment paper, starting from the middle and going around in a circle, making sure that there are no gaps between the loops.
  • Repeat with the remaining dough.
  • Freeze the circles for at least 2 hours.
  • Heat oil in a pot over high heat.
  • Fry the circles until light golden brown, then drain them on a paper towel.
  • Mix the sugar and the cinnamon in a separate bowl.
  • Coat each churro disc in the cinnamon sugar mix, shaking off any excess.
  • Place a scoop of ice cream in between 2 churro discs.
  • Enjoy!

4 ounces cream cheese, room temperature
1/4 cup confectioners' sugar, sifted
1/4 teaspoon kosher salt
1 1/2 teaspoons milk, plus more if needed
1 3/4 cups plus 2 tablespoons unbleached all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon kosher salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/3 cup confectioners' sugar, sifted, plus more for dusting
3 tablespoons rose water
Candied rose petals or candied violets, for garnish

Steps:

  • Filling:Stir together cream cheese and sugar with a wooden spoon until smooth. Add rose water and milk, and stir until smooth. Filling can be refrigerated in an airtight container up to 3 days; bring to room temperature and stir until smooth before using.
  • Cookies:Whisk to combine flour, cornstarch, and salt in a bowl. In a separate bowl, beat butter and confectioners' sugar with an electric mixer on medium-high speed until pale and fluffy, 3 to 4 minutes. Add rose water, and mix until combined, scraping down side of bowl. Reduce speed to low and add flour mixture; mix until just combined. Divide dough in half, and shape into disks. Wrap each in plastic, and chill 1 hour.
  • Preheat oven to 350 degrees. On parchment, roll 1 disk of dough to 1/8-inch thickness; chill 15 minutes. Cut 1 1/2-inch rounds from dough, and place 1 inch apart on parchment-lined baking sheets. Repeat with remaining disk. Using the wide end of a pastry tip, cut a 1/2-inch hole off-center in half the rounds. Bake, rotating sheets halfway through, until barely golden, about 14 minutes. Transfer cookies to wire racks to cool completely. (Unfilled cookies can be storedin an airtight container up to 3 days.)
  • Dust cut-out cookies lightly with confectioners' sugar. Spread a heaping 1/2 teaspoon filling on whole cookies and top with cut-out cookies. Place a candied rose petal or violet in each hole. Once sandwiched, cookies can be stored in a single layer in an airtight container at room temperature up to 1 day.

2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3 tablespoons rose water
Rose water cream filling:
4 ounces cream cheese
1/4 cup confectioners' sugar
1 1/2 teaspoon rose water
1 1/2 teaspoon milk

Steps:

  • Cookies: 1. Whisk to combine flour, cornstarch and salt in a bowl. In a separate bowl, beat butter and confectioners' sugar with an electric mixer on medium speed until pale and fluffy, 5 minutes. Add rose water, and mix until combined. Switch to whisk, add flour mixture; mix until just combined. Divide dough in half, shape into disks. Wrap each in plastic, and chill 1 hour. 2. Preheat oven to 305 degrees. On parchment, roll 1 disk of dough to 1/8 thickness, chill 15 minutes. Cut 1 1/2 inch rounds from dough, and place 1 inch apart on parchment lined baking sheets. Repeat with remaining disk. Using the wide end of a pastry tip, cut a 1/2 inch hole off center in half of rounds. Bake, rotating sheets halfway through, until barely golden, about 14 minutes. Elise and I love to bake together. Once a year, my son Thomas, my daughter-in-law Supa, and granddaughter Elise come to visit us in Virginia, and I go visit them in Texas This year,on their visit from Texas, Elise and I decided to make Ice Cream Sandwiches for the Newtown Ice Cream Social. This was exciting for both of us! We made the ice cream the day before. The Sandwich Brownie needs to be made early in the day to allow for lots of assembly and freeze time. This is not a fast recipe!! The recipe has many sources. This was inspired by the Ice Cream Sandwich molds from Williams Sonoma, my standard vanilla ice cream, an adaptation of their recipe for brownies, and our experience. I put it all together to make something we could more easily follow. This is what grandmothers and their grandchildren were meant to do... cook and bake together, sharing the fun and love.

1 1/2 cups milk
3/4 cup sugar
1/8 teaspoon salt
3 egg yolks, beaten
1 teaspoon vanilla extract
1 cup whipping cream
1 cup half-and-half
3/4 cup flour (sifted, all-purpose)
1/4 cup cocoa
10 tablespoons butter (cut into pieces to aid in melting more quickly)
4 ounces unsweetened chocolate (cut up)
1 1/4 cups sugar
3/4 teaspoon salt
3 eggs
2 teaspoons vanilla extract

Steps:

  • First make the ice cream.
  • Scald milk over low heat, but do not boil.
  • Stir in sugar and salt until dissolved.
  • Beat the egg yolks in the top part of a double boiler, but do not put over the bottom section, and the hot water, yet.
  • Slowly add the milk, a little at a time, to the beaten egg yolks, beingcareful not to heat the eggs too quickly, and continuing to beat mixture.
  • Place double boiler together, and cook over hot water, until mixture is thick and smooth.
  • Chill.
  • Add vanilla extract, whipping cream, and half and half.
  • Fold this mixture into the custard.
  • Churn freeze.
  • Pack in tub and place in freezer.
  • Then make the Sandwich.
  • In the top of a large double boiler, combine butter and chocolate. (Have heat on barely simmer.).
  • Heat about 4 minutes, stirring often, until melted. During these 4 minutes, do the next 2 steps.
  • Line an 11"x17" cookie sheet/pan (one with sides) with parchment paper.
  • Put flour and cocoa powder in sifter on a piece of wax paper.
  • Remove butter/chocolate mixture from heat and stir in sugar and salt.
  • Add eggs and vanilla and blend well.
  • Sift in flour/cocoa mixture and stir until just blended.
  • pour batter onto parchment lined pan and spread to even thickness.
  • Bake at 375 degrees F (190 C) 8-10 minutes, or until testing with toothpick comes out clean.
  • Cool on rack for at least an hour.
  • Finally build the Ice Cream Sandwich.
  • Cut the Sandwich Brownie into 5ths lengthwise, and 8ths crosswise. (making 40 blocks).
  • Take ice cream out of freezer and allow to soften slightly, just enough to scoop, but firm enough not to melt while you are working. If the ice cream gets too soft, put it back in the freezer and be patient. Continue when ice cream is hard again.
  • Spread ice cream on first cut out shape about 1" thick or less, following shape of the cut out.
  • Place second cut out on top of ice cream, press down slightly. Place on wax paper lined tray and put into your freezer.
  • This is the hardest part, getting them into the freezer without too much melt down. If the sides are sloppy, you can trim them with a sharp knife, after you finish the last one.
  • Freeze for 2-3 hours before serving.
  • If freezing for longer, wrap individually in plastic wrap as soon as they get hard.
  • Will keep for up to a week, though best used within 3 days.
  • Alternative cutting.
  • Using cookie cutter, cut out an even number of shapes from cooled brownie. (don't worry if there is an odd number, you can eat that one when no one is looking). Follow rest of above assembly instructions. This will make less sandwiches, as there is a lot of waste in the cutting. These scraps can be reserved to serve with bowls of ice cream.
  • Elise gave me Ice Cream Sandwich Molds. This is fairly easy, once you get the hang of it. The scraps can be mushed into the mold to work like the cut outs.

The red-velvet cake got its name from its maroon color (courtesy of natural cocoa in early recipes) and soft, delicate crumb. Here, it transforms an ice cream sandwich. Yes, this is a bit of a project as there's a cake to make but all the work is done ahead and there's a reward for your patience: Blissful bites of crunchy chocolate shell, rich cake, and the cool creaminess of the vanilla ice-cream filling.

7 tablespoons unsalted butter, melted, plus more for pan
3/4 cup sugar
1 1/2 teaspoons pure vanilla extract
2 large eggs, room temperature
3/4 cup unbleached all-purpose flour
1 tablespoon natural cocoa powder
3/4 teaspoon kosher salt (we use Diamond Crystal)
2 teaspoons red food coloring, such as McCormick
3 cups vanilla ice cream (from 2 pints)
12 ounces bittersweet chocolate, coarsely chopped (2 1/4 cups)
2 tablespoons refined coconut oil or unsalted butter

Steps:

  • Preheat oven to 350°F. Butter a 9-by-13-inch rimmed baking sheet or baking dish. Line with parchment, leaving an overhang on two long sides. In a large bowl, whisk together butter, sugar, vanilla, and eggs.
  • Whisk in flour, cocoa, and salt, then food coloring, until well incorporated. Pour batter into prepared pan, smoothing in an even layer with a small offset spatula.
  • Bake until cake is dry to the touch, about 14 minutes. Let cool on a wire rack 5 minutes. Use parchment overhangs to lift out of pan, then transfer to rack and let cool completely. Transfer to a work surface; cut in half crosswise. Remove from parchment and place one half on a baking sheet lined with a piece of plastic wrap, bottom-side down.
  • Beat ice cream with a mixer fitted with the paddle attachment until malleable, then spread evenly over layer of cake on sheet. Top with second piece of cake, bottom-side up. Wrap tightly in plastic; freeze at least 8 hours and up to 1 week.
  • Use a serrated knife to trim edges straight. Cut in half lengthwise, then crosswise into 10 approximate 1 1/2-by-2 3/4-inch rectangles. Place on a wire rack set over a baking sheet; freeze 15 minutes.
  • Melt chocolate with coconut oil or butter over a double boiler (or in a microwave). Remove sandwiches from freezer and dip one of cake sides in chocolate. Return to rack, chocolate-side up, then return to freezer to set, at least 10 minutes. If desired, dip second side and freeze (we like the dramatic stripes of color, so we only dipped about half of each side). Cake can be kept frozen, tightly covered, up to 1 week.
